A comparison of hypothetical survey rankings with consumer shopping behavior and product knowledge AgEcon

Hypothetical surveys are commonly used to elicit consumer behavior to guide product development, marketing, and labeling strategies. However, despite the prevalence of surveys in consumer food studies, previous work has not assessed the relationship between hypothetical responses and actual consumer behavior in real-world purchase situations.We explore whether attributes cited by consumers in surveys as being important to them when making decisions indeed factor into their product decision process in real-world markets. Evidence from a point of sale study of 702 pork purchasers indicates that there is a strong correspondence between hypothetical survey ratings and actual shopping behavior.

A Sectoral Model for Analyzing Alternative Technologies in Pig Farming AgEcon

This paper develops a demand-augmented positive mathematical programming model to analyze the relationship between environmental pollution from animal manure, manure policies and different pork production systems in the Netherlands. The model features substitution of conventional and alternative pork from the demand side and endogenous manure prices. It is found that policies that put restrictions on environmental pollution from manure decreases the conventional pork production systems, but increases organic pork production systems. The latter is considered an improved system from both an animal welfare and environmental point of view.

Analyzing pork purchases at the point of sale – The role of consumer involvement AgEcon

Involvement is an important psychological construct for understanding consumers’ underlying purchase decision process and those factors that shape product perceptions. In order to better understand consumer purchase behavior for low and high priced pork cuts, a series of field interviews at a variety of food retailers were conducted with actual pork shoppers using the New Involvement Profile (NIP) developed by Jain and Srinivasan (1990). This study investigated whether there would be an increase in consumer willingness to pay and purchase if reduced cholesterol pork was introduced to the Australian market. A stated choice analysis was used, with the following questions addressed. How are current purchases of fresh pork affected by concerns about cholesterol content? What financial premium, if any, would consumers place on reduced cholesterol pork? Would consumers buy more pork if a low cholesterol option were available? Breeding and feeding pigs in Australia and Vietnam AgEcon

This report establishes that ACIAR Research Project AS2/1994/023, ‘Breeding and feeding pigs in Australia and Vietnam’ (supported by ACIAR from July 1995 to the end of 2000) has yielded an extraordinarily high rate of economic return on the funds invested. The collaborating agencies were the Department of Primary Industries, Queensland, James Cook University and The University of Queensland in Australia, and the Institute of Agricultural Sciences of South Vietnam in Vietnam. The best estimate benefit–cost ratio for investment in this project is at least 159:1 with a corresponding internal rate of return of 900% and a net present value of A$496 million. CANADIAN EXPORTS OF LIVESTOCK AND MEAT TO THE UNITED STATES AgEcon

Canadian exports of beef and live cattle to the United States have increased significantly since the late 1980s. Hog exports have increased since the mid-1990s. Major factors affecting exports of beef, pork, cattle, and hogs from Canada to the United States include the exchange rate, increased Canadian production, U.S.-Canada price differentials, and trade liberalization under the Canada - United States Free Trade Agreement (CUSTA) of 1989. Increased Canadian exports have resulted in small but significant reductions in U.S. domestic prices of beef, pork, and hogs.

CHARACTERISTICS OF CONSUMERS DEMANDING AND THEIR WILLINGNESS TO PAY FOR CERTIFIED SAFER PORK AgEcon

A telephone survey of 609 Illinois households was conducted in spring 1999. Most consumers surveyed have concerns about pork safety. Concerns were greatest among households with children, lower incomes, older consumers, and Blacks. Lower consumption of pork was associated with higher concern. Consumers had more confidence in USDA certification of enhanced pork safety than in industry certification. Most consumers were willing to pay some price premium for a certified safer product. Those willing to pay more were more likely women, older consumers with incomes less than $70,000, who live in an urban household, and have concern about pork safety.

Consumer Food Safety Perceptions: Do they Differ across Products, Species, and Specific Risks? AgEcon

No known research has directly evaluated the relationship between perceived risk on a particular food safety issue and perceptions of other risks (e.g., H1N1 perceptions and E-Coli O157:H7 perceptions). Similarly, no known study has evaluated the appropriateness of assuming perceived food safety risks are equivalent for all products of a given species (i.e., perceived risk of E-Coli O157:H7 in ground beef and beef steak). The focus of this working paper is to shed new light on these previously unevaluated issues and draw implications for future mitigation strategies regarding meat food safety risks.

The U.S. Department of Agriculture, the Food and Drug Administration, and the medical profession, among others, have attempted to broaden consumers' knowledge of the nutritive content of foods. Retailers provide information by supplying point-of-purchase nutrition information and/or nutrition labels on fresh meats. The availability of nutrition information on packaged fresh meats is relatively new. A survey of Louisiana households provided estimates of their knowledge of the fat, cholesterol, and protein content of selected combinations of fresh beef, pork, chicken, and turkey meats. Permutation analysis and tabular analyses were used to assess households' nutrition knowledge of the selected fresh meats.

Animal welfare concerns are having dramatic impacts on food and livestock markets. Here we examine consumer preferences for pork products with a focus on use of gestation crates. We examine underlying consumer valuations of pork attributes while considering preference heterogeneity as well as voluntary and legislative alternatives in producing gestation crate-free pork. Our results suggest that prohibiting swine producers from using gestation crates fails to improve consumer welfare in the presence of a labeling scheme documenting voluntary disadoption of gestation crates. Pork is a source of nutrients essential for the human body but still it is regarded by consumers as a non-healthy product. The main objective of the study was to analyse consumption patterns concerning pork products and to define alternative target markets in bigger Hungarian towns. In the course of the research, 494 people, representative of the base population, were questioned. According to the results obtained, the consumers’ opinion and the already formed image are less favourable regarding pork than poultry in almost all respects. Beef and pork prices at farm, wholesale and retail are examined for evidence of a dynamic and asymmetric price transmission using an endogenous switching model. Dynamic adjustment means that it take time for prices to adjust to changes in the market. Price transmission is asymmetric if the speed or completeness of price adjustment depends on the direction that the price or a related price is moving. The liberalization of red meat (beef and pork) markets since 1988 is a good example of government action that has led to significant gains for the Canadian and American agri-food industries. Japan, South Korea and Mexico are the main countries that have liberalized their red meat markets since 1988. This industry has also benefited from the agreement between Canada and the United States. It has also made gain from the liberalization of the pork market in Australia and the Philippines, and the beef market in Indonesia. Effects of Country-of-Origin Labeling on Meat Producers and Consumers AgEcon

Although several studies have estimated the costs of country-of-origin labeling (COOL), no previous study has documented how these costs will be distributed across the livestock sector or how producer and consumer welfare will be affected. This analysis presents an equilibrium displacement model of the farm, wholesale, and retail markets for beef, pork, and poultry that documents how producers and consumers will be affected by COOL. Findings reveal that as the costs of COOL are shifted from the producer to the processor and retailer, producers are made increasingly better off while consumers are made increasingly worse off. Further, an increase in aggregate consumer demand of 2% to 3% is likely sufficient to offset lost producer welfare due to COOL costs.

Estimating Willingness to Pay Using a Polychotomous Choice Function: An Application to Pork Products with Environmental Attributes AgEcon

Bid data from a Vickrey auction for pork chops with embedded environmental attributes were analyzed. It was found that approximately 62% of the participants had a positive WTP for the most "environmentally friendly" package of pork. Thirty percent of the participants had no WTP, and 8% had a negative WTP. A polychotomous choice model was used to accommodate data having an anchoring point within the distribution of the data. Standard variables found in the WTP literature coupled with this model were used to predict participants who were premium payers and non-premium payers using an estimated ordered probit equation.
