In aerobic organisms, the free radicals are constantly being produced during the normal cellular metabolism. The antioxidant properties of many organisms and particularly of wild mushrooms with their content in antioxidant compounds such as tocopherols, can detoxify potentially damaging forms of activated oxygen. Herein, a comparative study of tocopherols composition and antioxidant properties of in vivo (fruiting bodies) and in vitro (mycelia) ectomycorrhizal fungi: Paxillus involutus and Pisolithus arhizus. Sunflower oil is naturally rich in both unsaturated fatty acids and numerous minor components, with high levels ofa-tocopherol and phytosterols that could play an important role in plant protection. As seasonal products chestnuts have to be postharvest treated to increase their shelf-life. The most common preservation method for chestnuts is the use of chemical fumigation with methyl bromide, a toxic agent that is under strictly use under Montreal Protocol due to its adverse effects on human health and environment. Food irradiation is a possible feasible alternative to substitute the traditional quarantine chemical fumigation treatment. The main studies in chestnuts irradiation were done in an Asian variety, which is bigger and sweeter than the European types. However, on Portuguese varieties nothing has been reported. Influence of the olive storage period on oil quality in the portuguese “Cobrançosa”, “Madural” and “Verdeal Transmontana” cultivars IPB - Escola Superior Agrária

Olives ( Olea europaeacv. Cobrancüosa, Madural, and Verdeal Transmontana) used for oil production were stored, in plastic containers, at 5 ( 2 °C (70% relative humidity) for three different periods before oil extraction: 0, 7, and 14 days (T0, T7, and T14, respectively). In the crop year 1997/1998 this procedure was done only for cv. Cobrancüosa and in 1998/1999 for the three cultivars. After storage, the oils were extracted from the fruits, and the acidity, peroxide value, coefficients of specific extinction at 232 and 270 nm, stability, color, p-anisidine value, fatty acids, and tocopherols compositions were determined. Along with dehydration, the development of insects and microorganisms is the major drawback in chestnut conservation. Irradiation has been regaining interest as an alternative technology to increase food products shelf-life. In the present work, the effects of low dose gamma irradiation on sugars, fatty acids and tocopherols composition of chestnuts stored at 4 ºC for different storage periods (0, 30 and 60 days) was evaluated. In sunflower, conventional breeding is widely used for the modification of traits such as the fatty acid composition, disease resistance, and mainly for obtaining commercial oil with high oleic acid content. There is a growing interest on tocopherols and phytosterols present in sunflower, due to their human health benefits. This emphasizes the need of studies on breeding programs for these bioactive components. A hundred of isogenic pairs of classic and its oleic version of hybrids and parental lines were cultivated in different locations in France between 2003 and 2006.
