Rapidly available glucose (RAG) and slowly available glucose (SAG) have been used for classify quality of dietary carbohydrates which affect glucose absorption in gastrointestinal tract. RAG and SAG has also normally used for primary study of the glycemic index (GI) which is studied by measuring human blood glucose level. RAG indicates the glucose released from the food after 20 min from digestion process which is likely absorbed in the Duodenum and influence blood glucose and insulin levels. Meanwhile, SAG indicates the glucose released after a further 100 min which is likely absorbed in the Jejunum and Ileum. In this study, the suitable methodologies of RAG and SAG were studied and identification of RAG, SAG in 43 varieties of milled rice, brown rice and pre-germinated brown rice were carried out. The effect of cultivated areas was also investigated. Rice varieties were classified to high-, intermediated-, low-amylose content rice and glutinous rice. It was found that RAG of low-amylose content rice varieties and glutinous rice varieties were higher than high- and intermediated-amylose content rice varieties. On the other hand, the result of SAG showed that low-amylose content rice was similar to intermediated-amylose content rice. Comparison of average RAG and SAG in milled rice, brown rice and pre-germinated brown rice indicated that milled rice showed the highest RAG which was higher than brown rice and pre-germinated brown rice (12.01 and 12.55%, respectively). In addition, this study also found inverse variation between RAG and amylose content but there was no correlation between SAG and amylose content.
ค่ากลูโคสที่ถูกย่อยเร็ว (RAG) และค่ากลูโคสที่ถูกย่อยช้า (SAG) เป็นค่าบ่งชี้คุณภาพของคาร์โบไฮเดรตที่มีผลต่อการดูดซึมน้ำตาลที่ได้จากกระบวนการย่อยในร่างกาย ที่สามารถวิเคราะห์ในห้องปฏิบัติการ ค่าดังกล่าวนิยมใช้ศึกษาคุณภาพคาร์โบไฮเดรตเบื้องต้นก่อนการศึกษาค่าดัชนีน้ำตาล (GI) ที่ต้องศึกษาในมนุษย์ โดยค่า RAG แสดงปริมาณน้ำตาลกลูโคสที่แตกตัวจากการย่อยโดยเอนไซม์ ในช่วงเวลา 20 นาทีแรก ซึ่งน้ำตาลกลูโคสส่วนนี้จะถูกดูดซึมในลำไส้เล็กส่วนต้น (Duodenum) มีผลต่อระดับน้ำตาลในเลือดและปริมาณอินซูลินมากที่สุด ส่วนค่า SAG แสดงปริมาณน้ำตาลกลูโคสที่แตกตัวจากการย่อยโดยเอนไซม์ ในช่วงเวลาต่อเนื่องอีก 100 นาที ซึ่งน้ำตาลกลูโคสส่วนนี้จะถูกดูดซึมในลำไส้เล็กส่วนกลาง (Jejunum) และส่วนปลาย (Ileum) การศึกษาครั้งนี้ ได้ศึกษาวิธีที่เหมาะสมในการหาค่า RAG และ SAG ในข้าว และใช้ตัวอย่างข้าวในรูปข้าวสาร ข้าวกล้อง และข้าวกล้องงอก จำนวน 43 พันธุ์ แบ่งตามกลุ่มอมิโลสสูง อมิโลส ปาน กลาง และอมิโลสต่ำ พร้อมทั้งศึกษาผลของแหล่งปลูกต่อค่า RAG และ SAG ด้วย จากการศึกษาพบว่า เมื่อเปรียบเทียบในกลุ่มอมิโลส ข้าวที่มีปริมาณอมิโลสต่ำ ข้าวเหนียว จะมีค่า RAG สูงกว่า ข้าวอมิโลสปานกลางและสูง ส่วนค่า SAG พบว่า ข้าวอมิโลสปานกลางและอมิโลสต่ำ มีค่าใกล้เคียงกัน การเปรียบเทียบระหว่างข้าวสาร ข้าวกล้อง และข้าวกล้องงอก พบว่าค่า RAG ในข้าวสารมีค่ามากที่สุด ข้าวกล้องและข้าวกล้องงอกมีค่า RAG น้อยกว่าข้าวสาร 12.01, 12.55 เปอร์เซ็นต์ ตามลำดับ และจากการศึกษาความสัมพันธ์พบว่า ปริมาณอมิโลสแปรผกผันกับค่า RAG แต่ไม่มีแนวโน้มความสัมพันธ์กับค่า SAG
