En México se están dando cambios en la demanda de productos alimenticios con características específicas de acuerdo a la condición y circunstancia de los consumidores, lo cual, genera una reestructuración en la producción del sector agropecuario, si no hay restricciones o limitantes se espera que se produzca más de lo que más vale. En este trabajo se cuantifica el grado de conversión productiva para el sector agrícola mexicano en el periodo 1980-2004. El estudio abarca 110 productos agrícolas, la medición se realizó a través del índice de conversión productiva y los índices de Theil; se esperaba que dicha conversión fuera más rápida en el periodo posterior a la entrada en vigor del TLCAN que inició en enero de 1994, debido a la importancia que han adquirido los tratados comerciales a nivel mundial, a la diversidad de productos alimenticios presentes en los supermercados y al nuevo sistema de organización productiva que se esta implementando en el sector agrícola, no obstante, la conversión productiva va a un ritmo lento, menor al del periodo anterior al TLCAN. Lo anterior muestra que el mercado en el sector agrícola mexicano tiene serias limitantes que le impiden operar eficientemente y actuar acorde a la demanda de los consumidores._______In Mexico changes in the demand of nutritional products with specific characteristics according to the condition are occurring and circumstance of the consumers, which, generates a reconstruction in the production of the farming sector, if there are no restrictions or limitantes hope that it takes place more than what more bond. In this work the degree of productive conversion for the Mexican agricultural sector in period 1980- 2004 is quantified. The study includes 110 agricultural products, the measurement was made through index of productive conversion and the indices of Theil; one hoped that this conversion was faster in the period subsequent to the take effect of the TLCAN that it initiated in January of 1994, due to the importance that they have acquired commercial treaties at world-wide level, to the present nutritional product diversity in the supermarkets and to the new system of productive organization who this implementing itself in the agricultural sector, however, the productive conversion goes to a slow, smaller rate to the one of the period previous to the TLCAN. The previous sample that the market in the Mexican agricultural sector has serious limitantes that they prevent him to operate efficiently and to act agreed to the demand of the consumers.
