La tortilla de maíz (Zea mays L.) es un alimento fundamental en la dieta de los mexicanos ya que representa el 38.8 % de las proteínas, 45.2 % de las calorías y 49.1 % del calcio de su ingesta diaria. Sin embargo, su demanda disminuyó 36.7 % de 1996 a 2008. Por lo que, el presente trabajo tuvo como objetivo identificar los principales factores económicos que determinan el comportamiento de la demanda de tortilla de maíz en México por estratos de ingreso y medir el orden de magnitud en que dichos factores afectan a la demanda. Para tal efecto se formularon, estimaron, y validaron tres diferentes modelos uniecuacionales del comportamiento de su demanda para dichos estratos, utilizando el consumo per cápita que se derivó de los datos del gasto trimestral de la Encuesta Nacional de Ingresos y Gastos de los Hogares (ENIGH) del Instituto Nacional de Estadística, Geografía e Informática (INEGI) correspondiente a los años 1996, 1998, 2000, 2002, 2004, 2006 y 2008. Los resultados indican una respuesta muy inelástica de los consumidores a los cambios en el precio de la tortilla (-0.36, -0.53, -0.66); y que este alimento en México, de acuerdo con la elasticidad precio-propia y gasto, se comporta como un bien normal inferior (-0.47, -0.57, -0.60) para los estratos antes referidos. Asimismo, las elasticidades de bienes relacionados estimadas para los tres estratos indican que funcionan como complementarios de la tortilla: el frijol, el porcino, el bovino, la salsa y el queso y; como sustitutos: el pan, el arroz y la papa. _______________ DEMAND OF MAIZE (Zea mays L.) TORTILLA IN MEXICO, 1996-2008. ABSTRACT: The maize (Zea mays L.) tortilla is a fundamental food in the diet of the Mexicans because it represents 38.8 % of proteins, 45.2 % of calories and 49.1 % of calcium of its daily ingestion. Nevertheless, its demand diminished 36.7 % from 1996 to 2008. For that, the aim of this paper was to identify the main economic factors which determine the behavior of the demand of maize tortilla in Mexico through strata and to measure the order of magnitude in which these factors affect the demand. For it, they were formulated, estimated, and validated three different uniecuational models about the behavior of the tortilla’s demand for this strata, using the per cápita consumption that was derived from the National Survey of Income and Expenses of the Homes (ENIGH) from the National Institute of Statistical, Geography and Computer Science (INEGI) of the years 1996, 1998, 2000, 2002, 2004, 2006 and 2008. The results indicate an inelastic answer of the consumers when the price of the tortilla changes (-0.36, -0.53, -0.66) and that this food in Mexico in agreement with the elasticity expenditure, behaves like a normal inferior good (-0.47, -0.57, -0.60) for the three strata I, II and III respectively. Also, the cross elasticities estimated for the three strata determine that the issues which work like complementary of the tortilla are: the bean, the pork, the beef, the sauce and the cheese; and which work like substitutes: the bread, the rise and the potato.
