In Danish outdoor pig production the sows are usually kept on grassland, while their progeny are transferred at weaning to indoor housing with access to an outdoor concrete pen. It may seem paradoxical that a large part of meat consumed from outdoor systems comes from pigs that during the majority of their life have been prevented from natural behaviour such as rooting, digging and grazing. The explanation is the drawbacks of rearing growers outdoors including huge space demand, high work expenditure, high feed consumption and high environmental costs due to nutrient losses to aquifers and the atmosphere caused by high nutrient load and difficulty maintaining grass cover. However, it may be questioned if pigs reared indoors comply with consumers’... |

The objective was to investigate the variation in backfat at weaning and its relations to reproduction results in organic sow herds in Denmark. The study included eight herds and 573 sows. The average backfat at weaning mean13 mm; SD4.2 mm) ranging from 10.5 to 17.3 mm among herds shows that it is possible to avoid poor body condition at weaning even with a lactation length of seven weeks or more. No main effect of backfat at weaning on reproduction performance was found, but the probability of a successful reproduction after weaning tended to decrease with decreasing backfat for first parity sows, whereas the opposite was the case for multiparous sows. |

The millions of food insecure people in India are not solely due to inadequate food production, but also because some people are simply too poor to buy food. This study assessed how a large-scale conversion from conventional to organic production would impact on the economics of marginal and small farmers in Tamil Nadu and Madhya Pradesh, and on the total food production in these states. This study also considered a situation where fertilizer subsidies would be discontinued, with farmers having to carry the full cost of fertilizer. Results show that conversion to organic improved the economic situation of farmers although food production was reduced by 3–5% in the organic situation. Thus, the estimated economic values were higher in the organic system... |

The objective was to compare the performance and meat quality of two different pig breeds: The modern crossbred Landrace x Yorkshire (LY) and the traditional Danish Black-Spotted (BS) breed. The LY gilts and four of the BS gilts were inseminated with semen from Duroc (D) boars, the remaining BS gilts were served by BS boars. The experiment was performed on 26 gilts over two years. RESULTS: The Black Spotted breed in general had smaller litter sizes and weaned on average in terms of kg piglet 35% less than the modern breed combination. Crossbred piglets of BS×D had growth rates from birth to weaning comparable with piglets of LY×D. Black Spotted first parity sows were significantly fatter and less meaty, and the meat was significantly redder and darker... |

Possible reasons for the low market share of organic pork may be heavy price competition with conventional produced pork products combined with no or small distinctive characteristics in appearance and quality, both regarding eating quality (flavour, tenderness) and ethical quality (production methods). The overall aim of this study is to identify strategies for a diversified organic pork production with high credibility and superior eating quality based on pigs foraging in the cropping system, use of a traditional breed and no castration. Preliminary results indicate that the use of a traditional breed, the Danish Black-Spotted pig, might be a way to produce pork, which in appearance differ from conventional pork and at the same time improve the... |

Free-range pig production in Northern Europe is characterized by high inputs of concentrate on grassland. This increases risk of nutrient leaching, increases feed costs and puts a pressure on land resources. Pigs’ unique ability to find a part of their food directly in the field where they are kept should be taken into consideration. One below ground field forage characterized by very high yields and with great potential as fodder source is Jerusalem Artichokes (JA) tubers. The nutritional contribution from free-range foraging, growth, feed conversion and behaviour were investigated in 36 growing pigs foraging on JA and fed concentrates restrictedly (30 % of energy recommendations) or ad libitum. Behavioural observations were carried out weekly over the... |

Innovative strategies in free-range pig production is needed to improve the environmental performance of the system. Based on previous studies, inclusion of trees was hypothesized to improve the system’s nitrogen efficiency. We investigated sow elimination behaviour, faeces load and localisation as well as soil mineral nitrogen load in pasture based individual paddocks with and without access to two rows of poplar (Populus sp.) trees. Unlike expected sows showed no preference for eliminating in the zone with poplars but clearly avoided defecating near the hut, feed and water. Soil mineral nitrogen load showed a heterogeneous pattern as also found in previous studies. In comparison to grass, our results indicated that the poplars had an increased winter... |

1. Studies on the sensory profiling of male broiler breast meat were carried out to evaluate the effect of two very different broiler breeds (JA757 and New Hampshire), two different feed types (broiler and grower feed) and age at slaughter (82 and 110 d). 2. The sensory profiling consisted of a pilot study, 4 training sessions, and finally the assessment. During the training session a panel of 9 assessors defined 17 attributes, which were used to describe the smell, texture and flavour of the breast fillets. Each attribute was evaluated on a 15-cm unstructured line scale. 3. The breast meat became significantly less hard, and more juicy and tender in the New Hampshire at 110 d of age, whereas the opposite was found in JA757, which also acquired a more... |

A study was conducted to investigate the differences in farm production, input use and farm income between organic and conventional systems in three regions (Uttaranchal, Madhya Pradesh and Tamilnadu) of India. From each region, 40 organic and 40 conventional farmers were interviewed with semi structured questionnaire. The results showed that input costs were less in the organic system while either total farm yield or net margin was righter in the organic system in two of the three regions. In Tamilnadu specializing in rice production, rice yield was less under organic system while net margin did not differ signifcantly. In addition, the IFPRI-IMPACT model was used to fnd out the impact of large scale conversion to organic farming on food security of... |

BACKGROUND: A sensory panel evaluated the sensory profile of breast meat from five broiler products: two conventional standard products (A and B) and three organic niche genotypes (I657, L40, K8) reared in an apple orchard. RESULTS: Twenty-two sensory attributes were evaluated, and 13 differed significantly between the products. The aromas ‘chicken’, ‘bouillon’ and ‘fat’ scored highest and the ‘iron/liver’ aroma lowest for the niche products. The meat was more ‘tender’, ‘short’ and ‘crumbly’, and less ‘hard’ and ‘stringy’ in the standard products than in one or more of the niche products. Product ‘I657’ was less ‘juicy’ than the rest. ‘I657’ and ‘L40’ were more ‘cohesive’ and tasted more ‘sourish’ and less of ‘sweet/maize’ than the standard products.... |

The risk of boar taint in entire males is supposed to increase with increased age and weight. Thus, a method to reduce this risk may be to slaughter the pigs at a low age and weight. This strategy is investigated as part of a new concept for organic pig production. It is hypothesised that organic pork has to differ markedly from conventional in order to overcome the heavy price competition. A seasonal outdoor rearing system based on production of small entire males, large female pigs and sows slaughtered after their first litter is believed to be a feasible strategy for producing organic pork with high credibility and superior eating quality. The study included a traditional breed, the Danish Black-Spotted. 17 gilts farrowed in April. Within the first week... |
