The objective of the present work was to evaluate the physical-chemical characteristics (density, pH, acidity, fat, protein, lactose and total of solids contents) and milk fatty acids composition (C: 4 to C: 20) in response to roughage sources (alfalfa hay T1; oat hay T2 and maize silage T3). Nine Saanen lactating goats were used, in a triple Youden square design (3 animals x 2 periods). This study analyzed the chemical composition of the dorsal muscle tissue of Hypophthalmus edentatus, in particular, fatty acids of the lipidic fraction, and its relationship with the biological variables and the capture period. The average values for moisture, ash, protein and total lipids were 63.15, 1.11, 14.27 and 17.24%, respectively. In the lipidic fraction, 35 fatty acids were identified, the most abundant being: 16:0, 18:1omega9, 18:0, 16:1omega7, 18:3omega3, DHA and EPA. The proximate chemical composition of hump, known in Brazil as cupim, Rhomboideus m. (RB), of Nelore (Bos indicus) aged 24 months revealed it to be a unique beef muscle. It presents a lipid fraction 14-fold as high as that of Longissimus dorsi m. (LD) taken from the same animal (p<0.05), the highest value reported so far. This was unequivocally observed by the histological evaluation. Proportionally more protein fraction and conversely less moisture were also observed in RB. Objetivando avaliar a utilização de óleos vegetais de diferentes origens em rações no desempenho e características de carcaça do escargot francês “gros gris” (Helix aspersa maxima), 240 animais com peso inicial médio de 0,11g, foram distribuídos em um delineamento inteiramente casualizado com seis tratamentos e quatro repetições com dez animais cada, em aquários de 12L. As rações foram formuladas de forma a diferirem quanto ao emprego (3 % da ração) dos óleos de soja, canola, girassol, linhaça, arroz e milho. Os valores médios de peso final, conversão alimentar, taxa de eficiência protéica, rendimento de carcaça, percentagem de concha e taxa de sobrevivência dos animais alimentados com as rações com os diferentes óleos não diferiram (p>0,01) entre si.... |

ABSTRACT Azuki beans are small red grains rich in several essential nutrients used in traditional dishes in Asia that, nowadays present many applications around the world. This work aimed at evaluating angularis and niponensis cultivars from south region of Brazil. Both cultivars presented proximal composition similar to literature and the majority fatty acids were 18:2n-6, 16:0 and 18:3n-3. Food bars are consumed heavily, especially because of their practicality; however they cannot be ingested by celiac patients and present low contents of essential nutrients. The goal of this study was the development and physical-chemical, nutritional and sensory evaluation of a gluten-free food bar containing amaranth and linseed. Gluten fractions were not detected in the food bar formulations. Crude protein and total lipid contents ranged from 68.32 to 76.60 and 74.56 to 82.06 g kg-1 of food, respectively. O objetivo deste estudo foi quantificar o ácido alfa-linolênico [LNA, 18:3 (n-3)], avaliar a composição centesimal das folhas e caules de linho (Linum usitatissimum L.) submetidos à secagem e colhidos em diferentes estágios de desenvolvimento (40, 80 e 120 dias), e determinar o potencial antioxidante das folhas colhidas aos 80 dias através do teste com o radical DPPH. As folhas obtiveram maiores teores de cinzas, proteína e lipídios totais em relação aos caules. Tanto as folhas quanto os caules apresentaram razões de AGPI/AGS e n-6/n-3 dentro dos valores considerados adequados para a alimentação. Objetivou-se com este trabalho avaliar o efeito das formas de processamento e do alecrim na defumação dos troncos e filés sem pele de tilápia do Nilo sobre o rendimento e as características organolépticas. Independente da forma de processamento aplicada, os filés defumados na presença do alecrim apresentaram menor rendimento. Foi também observado que os filés obtidos a partir dos troncos defumados proporcionaram maiores rendimentos. Fatty acids have a great metabolic and structural importance. Evaluation of fatty acid composition of peppers is still incomplete. Pulps and seeds from six varieties of the genus Capsicum were evaluated in this work with respect to their contents in fatty acids. A total of 25 different fatty acids, including some with odd number of carbons were identified in the samples. The most abundant fatty acids were palmitic (16:0), oleic (18:1n-9) and linoleic (18:2n-6) acids. The polyunsaturated:saturated fatty acid (PUFA/SFA) ratios for all peppers were high due to the elevated amounts of polyunsaturated acids, particularly linoleic acid.
