Honey is a by‐product of the pollination of plants and essential to almost all agricultural plant product. Demand for honey provides a partial compensation for the pollination services. Hence, programs to support honey demand such as promotions are potentially very important to the agricultural sector as well as the honey industry. Honey is utilized for table consumption and for manufacturing and both U.S. domestic and foreign honey imports both contribute to the U.S. honey availability. The Mexican honey industry is composed by around of 40,000 honey producers with 2 million of beehives. It has been the result that Mexico is the fourth producer and exporter in the world. In the year 2004, Delicias had 14,115 beehives which produced 443.3 tons of honey with a value of 14.8 millions of Mexican pesos. The honey producers have been collected individually and rustic their honey. It has caused that intermediaries joint the honey and sell mainly to the United States marketing. Physicochemical analyses were carried out to evaluate 27 samples of honeys from three species of the Brazilian genus Melipona (M. capixaba, M. rufiventris and M. mondury) from Espírito Santo and Minas Gerais States. The parameters water activity (Aw), percentage of soluble solids (Brix %), pH, acidity (meq/Kg) and moisture (%) were evaluated. The honey characteristics obtained from these samples were very similar to the ones from other Melipona species. However, regarding the honey from Apis (honey bee), only the pH values were similar. This study aimed to develop a Geographic Information System (GIS), for storage of information and geographic location of apiaries in eight counties in western Paraná; study the local flora; the land used; and the honey productivity in the harvest of 2010 in two of these areas: Marechal Cândido Rondon and Santa Helena. Thirty-five natural honey samples from three apicultural regions of the state of Minas Gerais, Brazil, were collected from honeybee hives under various climatic conditions over a two-year period. The beehives were located in the districts of Bom Jesus do Amparo, Barão de Cocais and São Gonçalo do Rio Abaixo, all within a 100 km radius of Belo Horizonte, Minas Gerais, Brazil. To evaluate the synergistic action of starch on the antifungal activity of honey, a comparative method of adding honey with and without starch to culture media was used. Candida albicans has been used to determine the minimum inhibitory concentration (MIC) of five varieties of honey. In a second step, lower concentrations of honey than the MIC were incubated with a set of concentrations of starch added to media to determine the minimum synergistic inhibitory concentration (MSIC). The content of heavy metals in honey is indicative of natural or anthropogenic pollution and has therefore been proposed as a feasible bioindicator for arsenic contamination in different regions of Chile. Total arsenic (t-As) and inorganic As (i-As) concentrations were determined in 227 samples of honey harvested during the years 2007, 2008, and 2009 in the areas of San Pedro de Atacama, Atacama, Chiloé, and Futaleufú, with the last town located 156 km from the Chaitén Volcano (latest eruption in 2008). Headspace solid-phase microextraction (SPME) with an 85 µm Carboxen polydimethylsiloxane (CAR/PDMS) fiber was used to extract volatile compounds, and a gas chromatograph equipped with a mass spectometry detector (GC-MS) was used to identify the volatile compounds in honeys. Thirty-four different volatile compounds from the headspace of honey produced in the central valley of Ñuble Province, Chile, were extracted with fiber coating CAR/PDMS.
