En este trabajo se caracterizaron tecnológicamente, a escala de laboratorio, 5 cultivos iniciadores. Las propiedades tecnológicas evaluadas fueron pH en caldo glucosado, viabilidad del cultivo, tolerancia a elevada concentración de sal, inactivación a 60 ºC por 30 min, entre otras. Todos los cultivos, por sus aptitudes acidificantes y población celular se consideraron aptos para su empleo industrial y se pudieron categorizar como productores de baja y alta acidez. |

ABSTRACT This study aimed to investigate the effect of dietary lactic acid bacteria (LAB) on egg production, yolk components, cholesterol metabolism, and enterohepatic circulation of bile acids in hens. Four treatment diets included a control and LAB added at 3 × 105 (low), 3 × 107 (medium), or 3 × 109 (high) cfu/kg. The treatment LAB contained equal amounts of Lactobacillus acidophilus, Lactobacillus plantarum, and Enterococcus faecium. Results showed that high LAB increased (p<0.05) laying rate, egg mass, and yolk phospholipid, but decreased (p<0.05) yolk triglyceride and phosvitin. The objective of this study was to evaluate the effect of bacterial inoculants at two inoculation rates on chemical and biological characteristics of maize silage. The treatments consisted of two inoculating rates (5 and 6 log cfu g-1of forage) for each strain of lactic acid bacteria (LAB) identified as Lactobacillus buchneri, L. hilgardii, or L. plantarum. This research study was conducted to evaluate, by means of microbiological analyses, the preservation of wet brewery waste stored under aerobic and anaerobic conditions, regarding the development of filamentous fungi, yeasts and lactic-acid bacteria. The objective of this study was to evaluate the fermentation profile, chemical composition and microbial population and losses in the silages of signalgrass and Mombasa grass fertilized with the following levels of nitrogen (N): 0, 30, 60 and 90 kg/ha. Microbial populations, pH, ammonium nitrogen/total nitrogen (N-NH3) ratio, concentrations of lactic acid, acetic acid and butyric acid and the chemical composition of Brachiaria decumbens cv. Basiliski silages at different regrowth ages (30, 40, 50, 60 and 70 days) were evaluated by using 2-kg capacity laboratory silos. Our objective was to evaluate the chemical composition, fermentation profile, and aerobic stability of cabbage silages treated with ground corn and inoculant. The evaluated treatments were: addition of 200, 300, 400, 500, and 600 g of ground corn per kilogram of cabbage (fresh matter basis), with or without a bacterial inoculant composed of Lactobacillus plantarumand Pediococcus pentosaceus. As expected, ground corn additions increased the dry matter (DM) content of cabbage silage, and high values were observed for the highest level of addition (540 g kg−1). Ensiling is a method of preserving a moist crop. A moist crop can support the growth of a wide range of microorganisms, most of which will degrade the nutrient value to livestock. However, ensiling generally controls microbial activity by a combination of an anaerobic environment and a natural fermentation of sugars by lactic acid bacteria on the crop. This fermentation and the resulting low pH primarily suppress the growth of other anaerobic microorganisms. The purpose of this study was to determine the Minimum Inhibitory Concentration (MIC) of pure or mixed chemicals for Saccharomyces cerevisiae and Lactobacillus fermentum in the samples isolated from distilleries with serious bacterial contamination problems. The biocides, which showed the best results were: 3,4,4' trichlorocarbanilide (TCC), tested at pH 4.0 (MIC = 3.12 mg/l), TCC with benzethonium chloride (CBe) at pH 6.0 (MIC = 3.12 mg/l) and TCC mixed with benzalkonium chloride (CBa) at pH 6.0 (MIC = 1.53 mg /l).
