Calpain and cathepsin activities in post mortem fish and meat muscles ArchiMer

Post mortem tenderization is one of the most unfavourable quality changes in fish muscle and this contrasts with muscle of mammalian meats. The tenderization can be partly attributed to the acid lysosomal cathepsins and cytosolic neutral calcium-activated calpains. In this study, these proteases from fish and bovine muscles were quantified and compared. The cathepsin B and L activities were in more important amounts in sea bass white muscle than in bovine muscle. On the other hand, cathepsin D activity was 1.4 times higher in meat that in fish muscle, while cathepsin H was negligible in both muscles. Calpain activities were similar in both types of muscle. The genus Lactococcus comprises twelve species, some known for decades and others more recently described. Lactococcus piscium, isolated in 1990 from rainbow trout, is a psychrotrophic lactic acid bacterium (LAB), probably disregarded because most of the strains are unable to grow at 30°C. During the last 10 years, this species has been isolated from a large variety of food: meat, seafood and vegetables, mostly packed under vacuum (VP) or modified atmosphere (MAP) and stored at chilled temperature. The preliminary nutritional survey on a D household of “Karnak-pa” nomad was conducted in Changtang area, Ladakh region of north India to understand the situation of food intake by the nomads of which subsistence depend only on livestock keeping, not on crop producing, and analyze its characteristics. The characteristics of food intake in the D household are summarized as the following 9 points. 1) The daily food intake is composed by 5 times such us morning cheese-barley soup named as “Tsam thuk”, breakfast, lunch, evening tea/food and dinner. 2) The energy intake of Karnak-pa nomad was supplied by 39.3 % - 45.0 % from self-sufficient foods and 55.0 % - 60.7 % from purchased foods. Salting kinetics and salt diffusivities in farmed Pantanal caiman muscle PAB

The legal Pantanal caiman (Caiman crocodilus yacare) farming, in Brazil, has been stimulated and among meat preservation techniques the salting process is a relatively simple and low-cost method. The objective of this work was to study the sodium chloride diffusion kinetics in farmed caiman muscle during salting. Limited volumes of brine were employed, with salting essays carried at 3, 4 and 5 brine/muscle ratios, at 15%, 20% and 25% w/w brine concentrations, and brine temperatures of 10, 15 and 20ºC. Supermarket Loss Estimates for Fresh Fruit, Vegetables, Meat, Poultry, and Seafood and Their Use in the ERS Loss-Adjusted Food Availability Data AgEcon

A certain amount of food in supermarkets is deemed unusable (“food loss”) because of moisture loss, spoilage, and other causes. This study analyzed updated food loss estimates for fresh fruit, vegetables, meat, poultry, and seafood obtained through a competitive grant with the Perishables Group, Inc. This independent consulting firm compared supplier shipment data with point-of-sale data from six large national and regional supermarket retailers to identify loss in 2005 and 2006. The demand for meat in Egypt: An almost ideal estimation AgEcon

This paper analyzes the demand for meat in Egypt for the period 1990–2005 using the linearized Almost Ideal Demand System to estimate own-price, cross-price and expenditure elasticities. It found that the Marshallian own-price elasticity was the highest for fish, followed by chicken, beef and duck. On the other hand, the crossprice elasticity of beef showed a complementary relationship with the other meat types, except for fish, which is substitutive. Chicken and fish showed a substitutive relationship with all other meat types. Duck showed a substitutive relationship with all meats except rabbit. Measuring Welfare Effects of an FMD Outbreak in the United States AgEcon

Questions have been raised regarding the economic costs of food-and-mouth disease (FMD) outbreak in the United States. This analysis examines how welfare changes are measured and argues that they must be decomposed by groups. Producers with animals quarantined and slaughtered because of FMD measure their welfare change using lost sales. Producers not quarantined measure their welfare change using producer surplus. The change in national sales revenue is accurate when the supply elasticity is low. Welfare changes for consumers also must be decomposed because the change in aggregate consumer surplus hides important shifts in welfare among groups of consumers.

Consumer Demand for Meat Cuts and Seafood AgEcon

Household at-home consumption of different types and cuts of meat and fish products is investigated by estimating a large censored demand system with a two-step procedure using ACNielsen's Homescan data. We find different price and expenditure elasticities between low-income and high-income households. High income households are less responsive to price changes, and the substitution patterns also differ between the low- and high-income households. Whereas the uncompensated elasticities suggest a mixture of gross substitutes and complements among the products for both low- and high-income households, the compensated elasticities suggest net substitution is the obvious pattern for the low-income households.

China feeds twenty-two percent of the world's population on seven percent of its arable land. In contrast, the U.S. and Canada own seventeen percent of the world's arable land, but feed only five percent of its people. As China's income increases, its people will demand more livestock products, including poultry, dairy, beef, and eggs, and more alcohol. Potential Chinese import demand for pork is examined in this paper. The question facing Chinese policymakers is whether to follow their current policy of food self-sufficiency or allow imports of pork muscle and variety meats. Welfare Impacts of BSE-Driven Trade Bans AgEcon

There is often a need to respond quickly to assess the likely implications of policy changes. Here, an equilibrium displacement model is adapted to study international bans on U.S. beef. An equilibrium displacement model offers a convenient way of quickly predicting the effects of supply and demand shocks. The equilibrium displacement model used here has an international sector, which allows the study of issues that past models with only a domestic sector could not. The estimated welfare loss of U.S. beef producers, due to both Japanese and South Korean bans after the discovery of bovine spongiform encephalopathy (BSE) in the United States, is $565.31 million.
