ABSTRACT The determination of physical properties is an important factor in the design of machinery and the scaling of post-harvest operations. The present study evaluates the influence of the level of roasting and the size of grinding on the physical properties of coffee during storage. The following physical properties were evaluated: true and bulk density, and intergranular porosity. Raw coffee beans (Coffea canephora and Coffea arabica), hulled and dried, were roasted to two different levels: medium light (SCAA#65) and moderately dark (SCAA#45). Effects of extrusion conditions on the physical and functional properties of instant cereal beverage powders admixed with mulberry (Morus alba L.) leaves Thai Agricultural

On account of studying the feasibility of the production instant cereal beverage powders admixed with mulberry leaves by extrusion process, a box-behnken design of the response surface methodology (RSM) was employed to investigate the interaction of operating conditions at varying screw speed (300, 350 and 400 rpm), mulberry content (5, 10 and 15%) and feed moisture (15, 17 and 19%) on the physical and antioxidant property of product. Optimization of extrusion conditions for functional ready-to-eat breakfast cereal Thai Agricultural

Mixed vegetable powders – composed of purple sweet potato, red cabbage and beetroot at a 2:1:1 ratio – were incorporated with cereal base by an extrusion process to obtain a functional, ready-to-eat breakfast cereal. Paddy storage may cause considerable losses and changes in quality of rice. The objective of this study is to determine changes in some physical and chemical properties of rice grains during storage. The experiment was conducted at Pathumthani Rice Research Center during May 2012 – January 2013. PTT1 variety was used for low amylose rice, and PSL2 for high amylose. Samples were taken and stored in 2 kg woven plastic sack at room temperature. The PTT1 and PSL2 samples were stored for 8 and 6 months, respectively. To solve the non-acceptance from producer and customer (dense texture and low expansion) for high fiber extruded snack production, the modified corn grit flour by extrusion process were used. The effect of modified corn grit flour on physical properties (expansion ratio, bulk density and texture profile) of extruded snack foods was studied with two factors of modified conditions (feed moisture at 2 levels: 14 and 18%; screw speed at 2 levels: 300 and 400 rpm) and %substitute of modified corn grit flour (5 levels: 0, 25, 50, 75 and 100%). O objetivo do presente trabalho foi avaliar o efeito da variação do teor de água na contração volumétrica, dimensões características e forma dos frutos de mamona durante a secagem. Foram utilizados frutos colhidos com teor de água de 2,50 (b.s.), secos à temperatura de 40°C até o teor final de 0,11 (b.s.). O tamanho dos frutos foi determinado por meio da variação do volume e a forma foi analisada pela esfericidade e circularidade. Physical properties of Black gram are important during harvesting, cleaning and drying with machines and also during improvement of these machines. This study was conducted to evaluate some moisture-dependent physical properties of Black gram namely, grain dimensions, thousand grain mass, surface area, sphericity, bulk density, true density, porosity and angle of repose. As the moisture content increased from 8.696% to 21.951% d.b., the three axial dimensions of the Black gram increased and the arithmetic and geometric mean diameter ranged from 3.736 ± 0.14 to 4.276 ± 0.14 mm and 3.797 ± 0.13 to 4.322 ± 0.13 mm respectively.
