Fishing and trade of living crustaceans are dynamic commercial sectors in France. 25 000 tons of local or imported crabs, lobsters , crawsfishes are yearly treated. Based upon a literature review and fishmongers interviews, this study describes the current pratices and problems associated to live crabs and lobsters storage. Supply conditions of live crustaceans, marketing networks, and biological, ecological and physiological characteristics of crustaceans were discussed. Morever, storage facilities, their operating rules and factors affecting the survival rate under storage and transportation conditions were reviewed. |

Massive abnormal mortalities of flat oysters Crassostrea during the summer period are nothing new, and such episodes have been described in scientific literature for about forty years. Numerous studies demonstrate that there is not one single identified cause to this phenomenon and that it is, on the contrary, a combination of different parameters. This program proposes a multidisciplinary approach to the problem of summer mortality of C. gigas in which the working hypothesis is that these mortalities result from the interaction of three parameters: environment, host and pathogens. The bacteria of the Vibrio genus are one of the most abundant groups in the aquatic ecosystems. Two species of vibrios, Vibrio splendidus and V. Aestuarianus, have been associated, in some cases, to mortality in flat oyster Crassostrea gigas farms, most of the time during the summer period. This doctoral thesis studies the Vibrio-host interaction and their modulations according to the host's pathogenic virulence and its genetic, physiologic and immunitary parameters. L'huître appartient à l'embranchement des mollusques, classe des pélécypodes ou lamellibranches, ordre de monomyaires, famille des ostréidés. Les multiples espèces, vivant actuellement dans le monde, il y en a une centaine environ, différent en particulier par la forme variable de leur coquille et par quelques détails de leur organisation interne. The cupped oyster, Crassostrea gigas was first introduced in France in 1967 [13]. On the Atlantic coast, the Marennes Oléron Bay (Figure 1) is the first European oyster culture basin with a cupped oyster (Crassostrea gigas) stock of 110,000 tons and an annual output of 30,000 to 40,000 tons. The Ronce oyster bank, located at the south of the bay (Figure 1), is made of 1,600 concessions spread out over 175 ha. It produces 8,000 to 10,000 tons of cupped oysters each year. The role of freshwater is more difficult to comprehend. It might act as a detrital organic matter "vector" (during floods) or an anthropic waste "vector" (toxic molecules from agriculture or other industries; nutritive salts from leaching...). Its effect has been demonstrated in the Bay of Veys (Ropert and Kopp, 2000; Misko, 2003), and especially its intense but transient action, presenting high freshenings, as recorded by high-frequency multiparameter probes since 1996 [15]. On this oyster culture site, mortality could then result from osmotic shocks. The "mortality-flow" relationship, demonstrated in 2003 in the Bay of Veys (Misko 2003), has to be specified. Cette rencontre faisait suite à un bref état qui s'était engagé au Congrès de Montpellier sur les "Bases biologiques de l'Aquaculture", où il était apparu que la terminologie et la méthodologie concernant le métabolisme des bivalves devaient être clarifiées. Selective breeding has been initiated to improve growth in major abalone species. In France, the abalone production was initiated 30 years ago and struggles to develop. The "trophic risk" has been demonstrated in the bioenergetic model developed in vivo and based on various diet conditions similar to those of different types of oyster culture basins (eutrophic, heterotrophic and oligotrophic) [22, 23]. The trophic resource mortality relationship differs from one basin to another, according to the quantity of this resource.
