Fatty acid profile, color and lipid oxidation of organic fermented sausage during chilling storage as influenced by acid whey and probiotic strains addition Scientia Agricola
Wójciak,Karolina Maria; Karwowska,Małgorzata; Dolatowski,Zbigniew Józef.
Organic fermented sausages typically spoil during long-term storage due to oxidative rancidity. The application of natural antioxidants to meat stuffing is a major practice intended to inhibit the oxidation process and color changes. This study aimed to assess the effect of two unusual starter cultures: three probiotic strains (Lactobacillus casei LOCK 0900, Lactobacillus casei LOCK 0908 and Lactobacillus paracasei LOCK 0919) and lactic acid bacteria from acid whey on model fermented sausage type products focusing on oxidative stability by measuring instrumental color (L*, a*, b* values), conjugated dienes (CD), TBARS immediately after 21 days of ripening (0) and after 90 and 180 days of refrigerated storage (4 ºC). Determination of fatty acid composition,...

Methane mitigation and ruminal fermentation changes in cows fed cottonseed and vitamin E Scientia Agricola
Nogueira,Ricardo Galbiatti Sandoval; Perna Junior,Flavio; Pereira,Angélica Simone Cravo; Cassiano,Eduardo Cuellar Orlandi; Carvalho,Roberta Ferreira; Rodrigues,Paulo Henrique Mazza.
ABSTRACT: Inherently, ruminant production of methane (CH4), a greenhouse gas (GHG), causes animal energy losses. Cottonseed is a lipid source and is used sometimes to enhance energy density in cattle diets. It also can mitigate enteric CH4. Lipids release peroxides in the rumen, and antioxidants have the ability to neutralize them. Thus, a lipid and antioxidant source can benefit rumen fermentation. The aim of this study was to evaluate rumen fermentation parameters from cows fed cottonseed and vitamin E. Six cannulated cows were arranged in a replicate 3 × 3 latin square. Treatments were: 1) Control, 2) CS (30 % corn replaced by cottonseed) and 3) CSVitE (30 % corn replaced by cottonseed, plus 500 IU VitE). Results were compared by orthogonal contrast....

Nogueira,Ricardo Galbiatti Sandoval; Perna Junior,Flavio; Pereira,Angélica Simone Cravo; Rodrigues,Paulo Henrique Mazza.
ABSTRACT: High lipid concentration in ruminant diets often harms nutrient digestibility and feed intake; thus, a protected lipid and antioxidant source can be considered as an alternative for improving diet energy without putting animal production at a disadvantage. The aim of this study was to evaluate the dry matter intake (DMI), nutrient digestibility and feeding behavior of cattle fed cottonseed and vitamin E. Six cannulated cows, non-pregnant, non-lactating were distributed in a replicated 3 × 3 Latin Square design. Feed was offered ad libitum twice daily. Treatments were: 1) Control, 2) CS: 30 % cottonseed included; and 3) CSVitE: 30 % cottonseed plus 500 IU VitE included. Data were analyzed by SAS (Statistical Analysis System, v.9.3) and the...

Benefits of fiber and antioxidant power of rice bran in Vitamin E deficient rats ABCL
Aguilar-García,Carlos; Cioccia,Anna María; Gavino,Victor; Gutiérrez,Marlén; Hevia,Patricio.
Dietary fiber requirements are met by only a small fraction of the population. There is need for supplemented foods to fill this gap. Rice bran (RB) is high in fiber and has antioxidant properties. The effects of rice bran fiber on several metabolic indicators and the antioxidant capacity of rice bran in rats was reported. Rats were divided into 4 dietary groups: Vitamin E-sufficient with (+VitE/RB+) or without (+VitE/RB-) rice bran; Vitamin E-deficient with (-VitE/RB+) or without (-VitE/RB-) rice bran. Food intake, growth and feed efficiency were similar in all groups but wet and dry fecal mass of the RB+ groups were 3 times higher than the RB- groups. Blood hemoglobin and liver iron were also similar among all groups. However, the liver VitE...
