Changes in the isoflavone profile and in the chemical composition of tempeh during processing and refrigeration PAB

The objective of this work was to analyze changes in the isoflavone profile, determined by high performance liquid chromatography, at different processing stages and after refrigeration of tempeh. For tempeh production, clean soybean grains from cultivars BR 36 (low isoflavone content) and IAS 5 (high) were dehulled, and the separated cotyledons were hydrated and then cooked in boiling water for 30 min. Spores of the fungus Rhizopus microsporus var. oligosporus were inoculated in the cooked and cooled cotyledons, and incubated at 32ºC for 6, 12, 18, and 24 hours in perforated polypropylene bags, for fermentation. Abstract: The objective of this work was to evaluate the effect of the extended cold storage of raw milk on the kinetics of fermentation on yogurt production, as well as on the product’s microbiological and physicochemical properties during shelf life. Three treatments were evaluated: yogurts made with raw milk stored for 4, 72, and 168 hours. Kinetics of fermentation was assessed through the lactic acid production rate, growth rate of Streptococcus thermophilus and Lactobacillus bulgaricus, and time to reach pH 5.0 and 4.5. The paper examines effects of different inorganic salts in an apple pulp base on the production of pectinolytic enzymes with the aim of optimizing the medium for maximal enzyme production. The apple pulp combined with corn flour and simple mineral salts was used as a nourishing base in submerged production of pectinolytic enzymes by the fungus Aspergillus niger MK-15. The growth of the microorganism (dry weight) on different sources of nitrogen showed maximum dry weight with (NH4)2HPO4. Abstract Most olive varieties are grown in Jordan using Baladi, Nabali, Crosodi and k18 table olives. This study evaluated the effect of de-bittering fermentation methods on the total phenolic, flavonoid contents, and antioxidants. The phytochemical results of fresh and fermented table olives showed significant decrease after fermentation process and during three months of storage. Baladi fresh table olive presented the highest phenol content (350.9mg GAE/100g) followed by Nabali, Crosodi and k18 varieties, respectively. ABSTRACT We investigated the effects of dietary supplementations of yeast (YFA) or non-yeast fermented additives (NYFA) at 5.0 and 10 g kg−1 on the performance parameters and the size of digestive organs of broiler chickens. An isocaloric and isonitrogenous basal diet used as negative control was added with 5.0 or 10.0 g kg−1 of YFA or NYFA. Each of five experimental diets was given to broiler chickens kept in three randomized floor pens, each with 21 birds, from one-day old to 42 days old. ABSTRACT In the present study, we examined the growth parameters of Bacillus licheniformis in solid-state fermentation (SSF) and evaluated the effects of Bacillus licheniformis-fermented products on Clostridium perfringens-challenged broilers. During four and six days of SSF, the highest viable biomass was observed at 5% glucose, 10% soybean meal, 3% yeast, and 50% initial moisture content. The Bacillus licheniformis SSF products were heat- and acid-resistant. Furthermore, the fermented products were able to inhibit the growth of Clostridium perfringens and Staphylococcus aureus in vitro. The objective of this experiment was to evaluate the effects of adding cassava scrapings on gas and effluent losses, dry matter recovery, pH, contents of N-NH3, organic acids and volatile fatty acids and the bromatological composition of elephant grass silages. It was used a randomized complete design, with four levels of cassava scrapings (0, 7, 15 or 30% natural matter) each one with four replications per level. The grass was cut at 50 days of regrowth and ensiled in 15-L silos, equipped with a Bunsen valve to allow gas outflow. It was evaluated in this work, crop yield, fermentative quality and nutritional value of the silage of cultivars of white (Avena Sativa L.) and black (Avena Strigosa Schreb) oats cut at two development stages. It was used an experimental randomized block design in a 4 x 2 factorial scheme, consisting of four oat cultivars (two cultivars of black oats: Aveia Preta Comum and UTFP 971; and two cultivars of white oats: ER 91156- 1- 2- 1 and SI 98105- b), with four replicates. ABSTRACT The objective of this study was to evaluate the chemical composition and the fermentative parameters of heart of palm waste produced from Alexander Palm, ensiled with chemical additives. Treatments consisted of silage of the sheath with or without calcium oxide. In the silage without calcium oxide, we evaluated the control silage (without additive) and the silage enriched with 5.0 g kg−1 urea (urea). In the silage with calcium oxide, we evaluated the silage enriched with 5.0 g kg−1 calcium oxide (control) and the silage enriched with 5.0 g kg−1 urea and 5.0 g kg−1 calcium oxide (urea).
