Growing rats were used as animal model to evaluate the digestibility of energy and protein digestible corrected amino acid score (PDCAAS) in some common fruits and vegetable grown during two subsequent growth seasons in different cultivation systems. The ingredients were cultivated by each of three different farming strategies: LIminusP: low input of feritlizer without pesticides, LIplusP: lowinput of fertilicer and high input of pesticides and LHplusP: high input of fertilizer and high input of pesticides. Extraction of phenolic compounds from organic dried apples: comparison between conventional, microwave- and ultrasound-assisted extraction methods Organic Eprints

The aim of this study was to compare a conventional assay with microwave- (MAE) and ultrasound- (UAE) assisted extraction methods on the extraction of phenolic compounds from organic dried apples by evaluating the content in catechin, epicatechin, chlorogenic acid and quercitrin. Samples from two apple varieties (Golden Rush and Topaz) were analyzed. Methanol/water (70:30, v/v) was selected as the solvent mixture for the phenolic compounds extractions. The High Performance Liquid Chromatography coupled to diode array detection (HPLC-DAD) were used for the identification and quantification of the respective phenolic compounds. This paper is a literature review of studies of mid-scale food values based food chains and healthy growth processes in the organic food sector. By midscale values based food chains we mean productions that are growing out of the niche/small scale market into larger volumes and sales. Previous research have shown that niche market chains might have inherent problems in moving from niche to volume, while mainstream large-scale markets have inherent problems in securing and advancing organic values. Einleitung: Biologisch-dynamisch angebaute Möhren (Markenzeichen demeter) werden teilweise zur Saftherstellung verwendet. Einige Verarbeiter garantieren im Möhrensaft bestimmte Mindest- und Höchstwerte für die Mineralstoffe Kalium (K) und Natrium (Na). Wie berichtet wurde, erfüllten einige Partien der angemeldeten Möhren diese Voraussetzung nicht in gewünschtem Maße. In diesen Fällen ist das Qualitätsziel des Verarbeiters und somit auch der Verkauf der Möhren an diesen gefährdet. The effect of different sources of K and N on graded yields, dry matter, reducing sugars and quality of french fries and crisps, respectively were examined in two maincrop varieties (AGRIA and MARLEN). Fertilizers applied were cattle manure, potassium sulphate (PS), PS + grinded horn, grinded horn (GH) and a control. Results of two-factorial field experiments (2002-2004) on a loamy sand are presented. Cultivar and fertilizer had a significant effect on final yield, combined mineral K and organic N (PSGH) being the most efficient fertilizer with regard to graded yields for crisp (>40 mm) and french fries production (>50 mm). Effect of maturation and freezing on quality and drying kinetics of beef Organic Eprints

The quality of dried meat products and the drying kinetics significantly depends on the status of the raw material going into the drying process. The aim of this study was the determination of the impact of meat status (fresh, mature, frozen-thawed) on the drying kinetics and the resulting quality in terms of colour changes and spectrally deductible information. Drying tests were conducted using meat from organically raised bulls. In fresh meat, freezing leads to a decrease of the drying rate, whilst for matured meat the opposite is true. Aging and freezing have little effect on the end product quality in terms of final product colour. Effect of selenite and selenised yeast supplementation on selenium concentration of Finnish organic milk – a farm study. Organic Eprints

Experiment was conducted at 15 certified organic dairy farms in Eastern Finland during spring 2008. Farms were allocated to three balanced groups according annual milk yield, herd size and housing system. Three types of selenium (Se) supplementations: selenium yeast (SY), sodium selenite (SS) or their (50:50) combination (SYS) was used. Daily Se doses were adjusted according to milk yield basis (average 3 mg/d). Experimental model was 3 X 3 Latin square, consisting from 3 experiment periods. The length of each period was 28 days. Our project focusses on analysing the value chain of unpackaged food with regard to potentials, barriers and opportunities to expand the concept.
