Ce rapport porte principalement sur la microbiologie, la chaîne biochimie des aliments et des eaux au terme d'un stage d'un mois effectué au Laboratoire de Sécurité Alimentaire et d'Hygiène de l'Environnement (LSAHE) de l'Institut Pasteur de Dakar. The effect of marination on the shelf life of smoked eel (Anguilla anguilla) was investigated. The fish was hot smoked at 80°C for 90 min and separated into two samples: Lot A was immersed in a solution containing 4% acetic acid, 4% lemon juice and 10% NaCl, then stored at 4°C during 7 days. After the marination process, samples were transferred to a diluted solution, containing 2% acetic acid, and 2% NaCl. Lot B was directly immersed in the same diluted solution. Este código de práctica contiene los requerimientos mínimos que deberán cumplir las plantas industriales que se dedican al procesamiento de camarón, para su operación y normal funcionamiento. Los sistemas de control y evaluación contenidos en el presente código se aplicarán anualmente a las plantas procesadoras de camarón a fin de determinar el estado de funcionamiento y servirán de base técnica para el otorgamiento de los permisos anuales de operación.

El cultivo del camarón se ha presentado como una alternativa de producción de este crustáceo ante los altos costos de las faenas de pesca provocados por los altos precios del combustible y los bajos rendimientos de las capturas ante el agotamiento del recurso. En el presente trabajo se presentan varias tecnologías de procesamiento del camarón susceptibles de ser aplicadas para su comercialización, así como una alternativa de organización del proceso de manipulación y procesamiento industrial que contempla una inversión para el procesamiento en las propias camaroneras, la cual conlleva una disminución de los costos de producción. لدراسة تأثير عملية تحويل سمك السردين واللاطشة إلى المعلبات على الجودة الغذائية، قمنا بمتابعة موشرات جودة الدهنيات و تركيبتها من الأحماض الدهنية و أثبتت النتائج أن تغيرات كمية و جودة الدهنيات متعلقة أساسا بتركيبة سمك السردين أو اللاطشة الطازج بالدهنيات و بتركيبة المادة الحافظة (زيت الزيتون أو الطماطم). كما أثبتت التحاليل بواسطة الكروماتوغرافيا ذات الطور الغازي ثراء المعلبات بالأحماض الدهنية التالية C18 :1 ω9 وC18 :2 ω6 . وأخيرا، يمكننا التأكيد أن سمك السردين واللاطشة المعلب بزيت الزيتون و الطماطم غني بالأحماض الدهنية من عائلتيωω3 وω6 .

Efectos del deterioro producido por mixosporidios de la especie Kudoa rosenbuschi en la musculatura de Merluccius hubbsi OceanDocs

Parasitized and non-parasitized hake fillets obtained at fish processing plants were compared in order to assess the efects of Kudoa rosenbuschi myxosporidia on muscle of Merluccius hubbsi. The following studies were carried out: a)incidence and severity of parasitism; b)proteolytic and spoilage at a histologic level; c)pH and proximal composition in parasitized and non-parasitized fillets; and c)parasitism action on gelified products. Gel strength, elasticity and organoleptic level in gelified products were lower for parasitized samples. Recommendations are put forward as to conditioning and cooling of the catch and subsequent processing in order to lessen the effects of parasitism.

El presente trabajo llama la atención a las recientes epidemias de intoxicación histamínicas reportadas en los Estados Unidos, debido al consumo del dorado (Coryphaena hippurus) o Mahi-Mah, contaminado. Esto dió como resultado la prohición de las importaciones de esta especie, proveniente de varios países entre ellos el Ecuador, y siendo el dorado una especie de relativa importancia económica en este país, dicha prohibición ha preocupado al sector pesquero. Modificación del método rápido enzimático colorimétrico para detectar la presencia de histamina en productos pesqueros OceanDocs

Samples of Dolphinfish (Coryphaena hippurus) were analysed for histamine content using the method of Lerke A. Peter, Porcuna N. Martina and Chin B. Henry (1978) with modifications. The samples were previously exposed at room temperature for 18 hours in order to increase their histamine content. Dilutions of 3,4 and 5 mg/ml of horseradish peroxidase (HRP). The present modification improves the Lerke, et. al. (op.cit.) methodology and makes it easy to use in the laboratory and in the field.

Variation in egg and larval quality in various fish and crustacean species OMA

It is generally accepted, that a major constraint in the further development of marine fish and crustacean aquaculture, is the variable quality of eggs and larvae used for the hatchery-production of fry. Nonetheless, valid criteria to evaluate optimal egg quality have not been identified yet. Instead, particular indicators, are used, e.g. the fertilization and hatching rate, overall culture success during the first rearing period, etc., but these are not totally objective because hatchery-specific conditions may interfere. Meiobenthos as a tool in the assessment of marine environmental quality OMA

The assessment of the impact of pollution on the marine environment depends on the possibility of prediction either by comparison or more ideally by the analysis of time series which are long enough. Obtaining data for the construction of these time series should be one of the principal goals of monitoring. Parameters which are measured should have a low variability in time and in space or low frequency. The analysis of meiobenthic communities in the North Sea and the adjacent estuaries shows that harpacticoid copepods are especially suitable as the number and the nature of the species are stable and density, biomass, and diversity are characterized by the absence of variance in the high frequencies. A stress test is proposed for the evaluation of the physiological condition of fish larvae in nutritional studies. The test was used in a study of quantitative (n-3) highly unsaturated fatty acids (HUFA) requirements in larval <i>Lates calcarifer</i> and <i>Siganus guttatus</i>. It enabled to suggest fast intervention at reduced larval quality and allowed to prevent mass mortalities. An intercomparison study of the determination of sulfite in tropical shrimps by the West European Fish Technologists' Association (WEFTA) OMA

Eight WEFTA laboratories participated in two series of intercomparison exercises on sulfite determination in tropical shrimps. Samples of tropical shrimps were spiked with sodium metabisulfite (Na<sub>2</sub>S<sub>2</sub>O<sub>5</sub>) and hydroxymethylsulfonate (HMS) at a level of 25-90 mg SO<sub>2</sub>/kg. Most of the laboratories determined the sulfite content with (modified) methods of Monier-Williams or De Vries et al. The overall mean recovery of sulfite was rather low (47-60%), which may be attributed to an irreversible reaction of sulfite with the tropical shrimps. Evaluations, of the quality of soil preparation in the plantation lines, were made in areas with potential risk of compaction using the penetrometer to collect data about the depth and width of the furrow. The samplings were made in three sites of production of Eucalyptus in areas of Cia Suzano de Papel e Celulose in the state of São Paulo, managed under minimum cultivation of the soil and where crop was mechanized and intensive. The determination of the best combination of these factors can reduce the drift during the application of the herbicide 2,4-dichlorophenoxyacetic acid (2,4-D). Quality control of Dutch custard balanced against recall costs AgEcon

The relation between the moment at which a recall of Dutch custard is initiated and the direct costs of this recall was investigated. A simulation model of the custard supply chain was developed to compare scenarios with and without a quarantine of 48 h at the storage of the production plant. The model consists of three parts; first the distribution of a 24,000 L batch of custard over the supply chain over time is simulated, second the time to detect spoilage bacteria with a recontamination test procedure is simulated, third the direct recall costs of custard over the different parts of the supply chain are calculated.
