The effect of marination on the shelf life of smoked eel (Anguilla anguilla) was investigated. The fish was hot smoked at 80°C for 90 min and separated into two samples: Lot A was immersed in a solution containing 4% acetic acid, 4% lemon juice and 10% NaCl, then stored at 4°C during 7 days. After the marination process, samples were transferred to a diluted solution, containing 2% acetic acid, and 2% NaCl. Lot B was directly immersed in the same diluted solution. Parasitized and non-parasitized hake fillets obtained at fish processing plants were compared in order to assess the efects of Kudoa rosenbuschi myxosporidia on muscle of Merluccius hubbsi. The following studies were carried out: a)incidence and severity of parasitism; b)proteolytic and spoilage at a histologic level; c)pH and proximal composition in parasitized and non-parasitized fillets; and c)parasitism action on gelified products. Gel strength, elasticity and organoleptic level in gelified products were lower for parasitized samples. Recommendations are put forward as to conditioning and cooling of the catch and subsequent processing in order to lessen the effects of parasitism. |

El presente trabajo llama la atención a las recientes epidemias de intoxicación histamínicas reportadas en los Estados Unidos, debido al consumo del dorado (Coryphaena hippurus) o Mahi-Mah, contaminado. Esto dió como resultado la prohición de las importaciones de esta especie, proveniente de varios países entre ellos el Ecuador, y siendo el dorado una especie de relativa importancia económica en este país, dicha prohibición ha preocupado al sector pesquero. It is generally accepted, that a major constraint in the further development of marine fish and crustacean aquaculture, is the variable quality of eggs and larvae used for the hatchery-production of fry. Nonetheless, valid criteria to evaluate optimal egg quality have not been identified yet. Instead, particular indicators, are used, e.g. the fertilization and hatching rate, overall culture success during the first rearing period, etc., but these are not totally objective because hatchery-specific conditions may interfere. The assessment of the impact of pollution on the marine environment depends on the possibility of prediction either by comparison or more ideally by the analysis of time series which are long enough. Obtaining data for the construction of these time series should be one of the principal goals of monitoring. Parameters which are measured should have a low variability in time and in space or low frequency. The analysis of meiobenthic communities in the North Sea and the adjacent estuaries shows that harpacticoid copepods are especially suitable as the number and the nature of the species are stable and density, biomass, and diversity are characterized by the absence of variance in the high frequencies. A stress test is proposed for the evaluation of the physiological condition of fish larvae in nutritional studies. The test was used in a study of quantitative (n-3) highly unsaturated fatty acids (HUFA) requirements in larval <i>Lates calcarifer</i> and <i>Siganus guttatus</i>. It enabled to suggest fast intervention at reduced larval quality and allowed to prevent mass mortalities. Eight WEFTA laboratories participated in two series of intercomparison exercises on sulfite determination in tropical shrimps. Samples of tropical shrimps were spiked with sodium metabisulfite (Na<sub>2</sub>S<sub>2</sub>O<sub>5</sub>) and hydroxymethylsulfonate (HMS) at a level of 25-90 mg SO<sub>2</sub>/kg. Most of the laboratories determined the sulfite content with (modified) methods of Monier-Williams or De Vries et al.
