The paper is concerned with the content of corporate social responsibility (CSR) in the food supply chains. The objective is to build the content of CSR in the food chain with a stakeholder dialogue. The research project takes an action oriented approach and is based on case studies. The project draws on three different case food products and their supply chains: rye bread, broiler chicken products and margarine. The content of CSR is constructed in interaction between researchers, consumers, companies and their interest groups. This paper provides a brief review of the Irish beef market during the 1990s. It sets out to identify the key factors influencing beef consumption during this period and reviews industry/ government response to consumer needs. A number of factors influencing beef consumption are identified, including: price, safety, eating quality and health. In addition to price competitiveness, industry/government response has focused on safety and quality systems. This paper identifies a new way of sugar utilization for food industry supplying: the production of specific ingredients. It analyzes the occurrence of association among sugar mills and sugar products manufacturers in the context of productive deregulation and market globalization in the second half of the 90´s. The manufacturers of specific ingredients (sugar products) established associations and joint-ventures with sugar mills in order to guarantee sugar supplying. The sustainability of the dairy supply chain is a widely debated topic in the industry. The purpose of this paper is to explore farmer behaviour in response to diminishing returns and investigates the possible long-term implications of low returns, identified by farming families. The paper argues that, sustained declines in margins, coupled with other structural changes in the industry, will eventually lead to an exodus of small family farms. A qualitative methodology ensures in-depth data were collected over a five year period. The meat value chain is a complex organization with multiple participants performing numerous value added functions. Perhaps the most complex and least well understood segment is that downstream from the packer, e.g., the processor, wholesaler, exporter, retailer and food service (or restaurant) operator. The survey was conducted as part of a research project aimed at understanding the evolution of dairy markets in Asia and the implications for dairy product trade. The survey data provide insights into the purchasing behavior and attitudes of urban consumers in China with respect to dairy products.
