Because of its high saturated fatty acid (FA) content milk fat is considered hypercholesterolemic (Ulbricht and Southgate, 1991). Intake of unsaturated FA (UFA) reduces the plasma cholesterol concentrations (Fernandez and West, 2005). Especially conjugated linoleic acids (CLA) have shown positive effects on cardiovascular diseases (Valeille et al., 2004), prevention of cancer (Ip et al., 1994) and obesity (Park et al., 1997). The aim of our project was to investigate how grazing could enhance the content of these beneficiary FA in milk from Holstein and Jersey cows. Trust and knowledge are two concepts that are considered important for understanding consumers’ engagement with organic products, but the concepts are often used at random. This article explores the configuration and generation of consumer trust in organics and investigates the relationship between knowledge and trust. The article is based on a multi-method study of Danish consumers’ perceptions of organics that included a consumer survey, a focus group, and individual interviews. The inquiry documents that Danish consumers’ display a high degree of trust in organics, and have overly positive expectations regarding organics, but know little about the difference between organic and non-organic products. Almost two out of three organic consumers state that mitigating climate change is an important reason for buying organic products. This finding may constitute a challenge for the organic market, considering the conflicting scientific evidence that underlies the belief that organic production is better for the climate than conventional production. The experiments showed, that the substitutions of fish meal by the matrix of plant protein koncentrates (pea, horse bean and rape) did not have significant effekces on the growth of the trout as well as on fish health. Investigations of the product quality did show changes in taste as well as texture properties. The case studies provided important information about progress, but as well revealed new challenges for the organic culture of trout in Denmark. |

The organic farming structure has been analysed for all farms in Denmark 2005-2010. In 2005, the average farm size for organic farms was 50 ha, compared to 40 ha for conventional farms. In order to prevent children and young people from becoming obese, healthier eating patterns are urgent. Organic school meals may be an effective strategy to provide healthy food to children. The purpose of this study was to take a closer look into the current status of organic school meal systems in Denmark, by conducting a case study of three municipalities in the Zealand region that have the most developed models for school meals service in this country. This paper shows that general trust in the organic label as well as perceived positive health effects of eating organic products have positive causal effects on actual organic consumption. The data used is panel data for 830 households reporting actual purchases together with responding to a comprehensive concerning questionnaire attitudes in 2002 and 2007. The paper also shows that perceived positive environmental effects and perceived better animal welfare related to organic production have no significant effect on actual behaviour, whereas concern for artificial additives and low price sensitivity increases the organic budget share. A model analysis of catch crop effects on nitrate leaching was carried out covering three soil types and three precipitation regimes in temperate climate. Catch crops with varying root properties (barssica and rye grass) were used to analyse the effect on nitrate retention in different soil layers. Climate data was taken from 3 different precipitation regimes over 43 years with an average annual amount of rainfall of 709, 796 and 1026 mm. The three soil types were typical Danish sandy soil, a loamy sand soil and a sandy loam. These soil types cover 65 % of the Danish arable area. The paper present the first results on a study of landscape elements on Danish organic farms and their management. 346 organic farms representing main landscape and farm types in Denmark and totalling approximately 10% of the organic farming population has been interviewed on the existence and age of hedgerows, ponds and wildlife habitats, as well as permanent grassland managment on the farm.
