The aim was to determine the differences in mineral composition and sensory properties of cloudy apple juice depending on apple cultivation system. Three indigenous Estonian cultivars were chosen on condition that the same cultivars would be grown in organic and conventional orchards at the same geographical location. ’Krameri tuviõun’ and ’Talvenauding’ apples were harvested from old (over 30 years) low maintenance orchard and ‘Krista’ apples from 10-years old experimental orchard. 100 kg of apples per cultivar and cultivation system were stored at +3±2°C for two months and then pressed into juice using Lancman waterpress. In 2000-2001 a review was produced on the topic "Organic food and human health", (http://www.agrsci.dk/foejo/DK/sider/pub/fojorap.html ). The review evaluated a large number of studies comparing the constituents of organic and conventional foods, as well as feeding studies comparing reproduction and health of animals fed with organic or conventional feed. Additionally studies on the connection between consumer values and food production systems were reviewed. The results showed that organic plant foods consistently contain more vitamin C, natural pesticides and higher dry weight percentage, less b-carotene, pesticide residues and protein, but the protein has a higher percentage of essential amino acids than in conventional plants. Tomatoes (Solanum lycopersicum) are one of the most consumed vegetables worldwide. However, tomato allergies in patients suffering from birch pollen allergy occur frequently. Due to highly similar protein structures of the tomato allergen Sola l 4 and the major birch pollen allergen Bet v 1, patients cross-react with allergenic proteins from tomato as well as other fruits or vegetables. Eggs contribute for about 4% to the daily dioxin intake of humans. Research among layer farms in the Netherlands and other EU countries has shown that organic eggs contain more dioxin than conventional ones and that a significant number of organic farms produce eggs with a dioxin content that exceeds the EU standard. The hens’ intake of dioxins from various sources leads to an increase in the dioxin content of organic eggs. These sources include plants, feed, soil, worms and insects, and compared with hens on conventional and free-range farms, organic hens make more use of these sources due to better access to the outdoor run. Das Vorhaben umfasst ein Teilprojekt des im Rahmen von Core Organic II geplanten Projektes „ Fast methods for authentication of organic plant based foods “. Ziel des Vorhabens ist es, analytische Methoden, Marker und Konzepte auf ihre Eignung zur Authentifizierung ökologischer Lebensmittel zu testen. Es geht darum, Methoden zu finden, die schnell und sicher Fälschungen im ökologischen Sektor erkennen (z.B. Verkauf konventioneller Ware als ökologische Ware). Sweet bell pepper is one of the best sources of ascorbic acid and a fair source of carotenoids in human diets. The levels of vitamin C are very variable and may be affected by maturity, genotype and processing. Vegetable freezing is one of the most efficient and adequate preservation methods. Organic fresh vegetables contained more bioactive compounds than conventional ones. Two bell pepper cultivars (Roberta and Ożarowska) have been selected for analysis. Vegetables were cultivated on organic and conventional farms in Poland. Ripe bell peppers have been collected in the same week of ripening and were chemically analyzed twice: fresh before freezing and after six month of storage in -20°C. The world food system is broken, the most prosperous nations are experiencing epidemics related to what they eat, fresh produce is not available for some people, and farmers growing organic food face many challenges within systems that don’t always support them. A farmer and a social worker, the presenter has a unique perspective to share. This presentation puts a lens on the United States’ food system, farmers who grow organic food and what needs to happen in order to transform the food system. The central thesis is that the relationship between the farmer and the consumer is key. A prime opportunity for contact and building these relationships is at the farmers market. |

Quality requirements for raw edible produce like lettuces include nutritional value and hygienic quality. Organic lettuce is often considered to cause a potential health risk for immunocompromised individuals due to assumed pathogen transfer from organically manured soils into lettuce heads (Lactuca sativa, var. capitata). The effect of different weed management strategies (rotary tiller, mouldboard plough combined with flame weeding, plastic mulch and straw layer, resp.) on pathogen transfer from fresh and composted farm yard manure were assessed in four field experiments in 2006 and 2007.
