The aim of this research was to study the effects of three different management systems on growth and carcass quality of 61 Murciano-Granadina breed kids and their interaction with sex. In the extensive system, 21 kids were allocated to suckle from their dams on free-range pasture with no additional feedstuff. In the semi-intensive system, 20 kids were suckled from their dams and had access to alfalfa hay and cereal straw (no free-range pasture). In the intensive system, 20 kids were separated from the dams at birth and then fed with milk replacer and alfalfa hay. Animals were slaughtered at 7.00 ± 1.00 kg of average BW. ABSTRACT This study aimed to identify the influence of climate pattern and rearing conditions on broiler carcass condemnations observed during processing. We evaluated the registered data of 2015 from the federal inspection files in all broiler slaughterhouses located in the state of Mato Grosso do Sul, Midwestern Brazil. The percentages of condemnations by airsacculitis, cellulitis, dermatosis, ascites syndrome, total carcass condemnations, and average broiler weight at 42 days were analyzed. Hazards and critical control points (CCP) associated with meat balls and kibbe preparations in a hospital kitchen were determined using flow diagrams and microbiological testing of samples collected along the production line. Microbiological testing included counts of mesophilic and psicrothrophic microorganisms, yeasts and molds, total and fecal coliforms, C. perfringens, coagulase positive staphylococci, bacteria of the B. cereus group and detection of Salmonella. Abstract The commercialization of beef is an activity of great relevance for the department of Antioquia (Colombia), particularly in the Urabá region. The objective of this study was to evaluate the fat content, lipid composition, and some indicators of lipid oxidation and protein in beef from the Urabá region. 72 samples of beef cuts (loin and neck) of categories 3, 4 and 5 stars were analyzed. There were no statistical differences (p > 0.05) between the fat content of cuts from the neck (11.64 ± 7.25 %) and loin (10.49 ± 5.60 %), or in the amount of saturated, monounsaturated, and polyunsaturated fat. Abstract The aim of this study was to evaluate the boneless yield of the carcass of 64 feedlot-finished young Nellore bulls fed diets containing coated or uncoated urea and slaughtered at five body weights (350, 455, 485, 555, and 580 kg). A completely randomized design with a 5 χ 2 factorial arrangement was used. No significant effect was detected for the interaction between slaughter weight and diet; therefore, the variables were analyzed separately, compared by polynomial contrasts and the F test, respectively. This work was carried out to evaluate the animal performance, carcass characteristics and meat quality of crossbred heifers slaughtered at three different body weights. The heifers were slaughtered with 330 (Light), 360 (Medium) and 400 (Heavy) kg body weight. The final weight, average daily gain and carcass weight were greater for HEA heifers, intermediate for MED heifers and lower for LIG heifers. However, carcass dressing and pH were similar for the three heifers groups. Dripping loss, dissection loss and the muscle, fat and bone percentages on the 6th rib did not alter by slaughter weight. For this research 48 male lambs were divided in randomized blocks in a factorial design, having as factors sexual condition (castrated or uncastrated) and time on feed (36 or 78 days). High grain diet was monitored daily to measure the performance of the animal nutrition. The characteristics of the carcass and meat were taken for the fatty acids profile and sensorial analysis. The effect of the factors as sexual condition and time on feed, and the interaction between them, were evaluated by analysis of variance using the GLM procedure of SAS software and the treatment averages were compared by Student's T test. ABSTRACT Sensory and instrumental analyses evaluated the meat and fat characteristics of feedlot-finished steers fed a diet containing cottonseed. Global impression, texture, meat color, and fat color were assessed. Thirty Nellore bulls with an average age of 30 ± 6 months and initial body weight of 382.7 ± 28.4kg were kept in feedlot stalls and fed the following cottonseed levels: 0; 2.22 %; 4.44 %; 6.66 %; 8.88 %; 11.11 % of the dietary dry matter. The effect of dietary conjugated linoleic acid (CLA) in association with two vegetable oil sources on the fatty acids of meat and giblets of broiler chickens was evaluated. Two hundred 21-day-old broiler chickens were distributed in a completely randomized factorial design 2 x 5 (two oil sources, soybean or canola oil; and five levels of CLA, 0.0, 2.5, 5.0, 7.5, and 10.0g/kg). The addition of CLA to the diet resulted in an increase (P<0.05) in CLA deposition in the analyzed tissues. Twenty samples of Brazilian meat and meat products were screened by the agar overlay method for bacteriocin-producing lactic acid bacteria, using Lactobacillus sake ATCC 15521 as indicator strain. Based on Gram staining, KOH reaction, catalase test and fermentation of 49 carbohydrates (API 50 CH), three out of seven isolates with confirmed antagonist properties were identified as Lactobacillus curvatus, one as Leuconostoc mesenteroides and one as Leuconostoc sp. Two isolates could not be properly identified using these tests. The inhibitors produced by these strains were sensitive to proteases. Abstract Meat is one of the most perishable foods owing to its nutrient availability, high water activity, and pH around 5.6. These properties are highly conducive for microbial growth. Fresh meat, when exposed to oxygen, is subjected to the action of aerobic psychrotrophic, proteolytic, and lipolytic spoilage microorganisms, such as Pseudomonas spp. The spoilage results in the appearance of slime and off-flavor in food. Salmonella serovars sampled from meat products in Southern Spain (Andalucía) during the period 2002-2007 were analyzed in this study. The serovars most frequently detected (in order) were Typhimurium, Enteritidis, Derby, Anatum and Rissen. Isolates (n = 43) were tested for sensitivity to biocides, including the quaternary ammonium compounds benzalkonium chloride (BC), cetrimide (CT) and hexadecylpyridinium chloride (HDP), and the bisphenols triclosan (TC) and hexachlorophene (CF).
