DEMAND FOR BREAKFAST CEREALS: WHOLE GRAINS GUIDANCE AND FOOD CHOICE AgEcon
Ishdorj, Ariun; Jensen, Helen H..
When using household-level data to examine consumer demand it is common to find that consumers purchase only a subset of the available goods, setting the demand for the remaining goods to zero. Ignoring such censoring of the dependent variables can lead to estimators with poor statistical properties and estimates that lead to poor policy decisions. In this paper we investigate household demand for four types of breakfast cereals, such as whole grain ready-to-eat, non-whole grain ready-to-eat, whole grain hot and non-whole grain hot cereals, using a censored Al- most Ideal Demand System (AIDS) and estimate the parameters of the model via Bayesian methods. Using household level scanner data (ACNielsen Homescan) we find that demand for all types of breakfast...

CONSUMER ATTITUDES TOWARD ORGANICALLY GROWN LETTUCE AgEcon
Wolf, Marianne McGarry; Johnson, Bradey; Cochran, Kerry; Hamilton, Lynn L..
This research shows that approximately 29 percent of lettuce purchases in California expect to purchase an organically grown lettuce product in the future. Organic lettuce purchasers are more likely to be female, have a higher household income and a higher level of education. Consumers are concerned with the freshness, quality, price, and environmental impact of the lettuce they purchase.

Consumer Attitudes Toward Genetic Modification and Other Possible Production Attributes for Chicken AgEcon
Bernard, John C.; Pan, Xiqian; Sirolli, Ryan.
Today's consumers face foods whose production attributes they are often largely unfamiliar with and uncertain about. This study surveyed Delaware consumers about labeling, health risk concerns, and knowledge of five potential attributes for chicken: free-range, treated with antibiotics, irradiated, fed genetically modified (GM) feed, and GM chicken. Respondents were highly in favor of labeling all attributes, and perceived a high health risk from and had a low self-reported knowledge of many of the attributes. Gender, tobacco use, and label reading habits were significant factors in explaining the difference in responses. An analysis of survey comments further demonstrated the extent of consumer concerns.

Fragmenting markets and quality change in New Zealand foods: empirical analysis with a Rotterdam model AgEcon
Khaled, Mohammed; McWha, Vhari; Lattimore, Ralph G..
Very little is known about changes in the demand characteristics of food in New Zealand. As far as we can determine, there has never been a complete disaggregated food demand model estimated for New Zealand. The object of this paper is to update these estimates using more recent data to see whether there are grounds for believing that the structural changes that occurred primarily during the last two decades are having effects on the magnitude of food demand elasticities in New Zealand. To this end, a Rotterdam food demand system is estimated using time series data. The results indicate that over the last 20 years, household consumption has increased for fruit and vegetables, poultry, food eaten away from home, and sweet products, drinks and other foods....

Something in the Water? Testing for Groundwater Quality Information in the Housing Market AgEcon
McLaughlin, Patrick A..
I test the level of information regarding possible groundwater contamination in the residential real estate market in Washington County, Minnesota. An approximately seven square-mile trichloroethylene plume has affected hundreds of households’ water supplies since at least 1988 in the region. I find that homeowners were initially well-informed by market forces, but were later somewhat misinformed by government actions regarding the potential of water contamination from the plume. A disclosure law passed in 2003 may have added new, low-cost, and imperfect information to the market that could explain the change in informational awareness.

Population and Sustainability: Understanding Population, Environment, and Development Linkages AgEcon
Clay, Daniel C.; Reardon, Thomas.
The triple challenge of rapid population growth, declining agricultural productivity, and natural resource degradation are not isolated from one another; they are intimately related. However, strategic planning and development programming tend to focus on individual sectors such as the environment, agriculture, and population; they do not explicitly take into account the compatibilities and inconsistencies among them. Farm households and their livelihood strategies are at the core of the intersectoral linkages approach advocated in this chapter. Three key aspects of the population-environment-development debate are discussed: first, the finding that inconsistencies between public and individual household behavior regarding childbearing and family planning...

THE INFLUENCE OF ATTRIBUTE CUTOFFS ON CONSUMERS’ CHOICES OF A FUNCTIONAL FOOD AgEcon
Ding, Yulian; Veeman, Michele M.; Adamowicz, Wiktor L..
This study investigates evidence of non-compensatory preferences by incorporating attribute cutoffs into the modeling of consumer choices in the context of food with health-related attributes (omega-3 content) that may be associated with fortification or may result from genetic modification (GM). Data for this study were collected through a nation-wide internet-based survey drawn from a representative panel of Canadian households maintained by a major North American marketing firm. In addition to querying respondents on their perceptions and attitudes regarding food and health, choices of canola oils are elicited using a stated choice experiment in which product alternatives are identified based on attributes of price, country of origin, omega-3 content...

CONSUMER PREFERENCES FOR QUALITY CHARACTERISTICS ALONG THE COWPEA VALUE CHAIN IN NIGERIA, GHANA AND MALI AgEcon
Mishili, Fulgence J.; Fulton, Joan R.; Shehu, Musa; Kushwaha, Saket; Marfo, Kofi; Jamal, Mustafa; Chergna, Alpha; Lowenberg-DeBoer, James.
The production and trade of cowpea (Vigna Uniculata), called "blackeyed peas" in the US, are a growing business for farmers and merchants serving the rapidly expanding urban areas of West and Central Africa. Cowpea fits the needs of the urban poor. It is an inexpensive source of protein that does not require refrigeration. A better understanding of consumer preferences for cowpea is essential to market development. The main objective of the study was to determine the cowpea grain quality characteristics that command a price premium or provoke a discount in Ghanaian, Malian and Nigerian markets. Specifically, the study looked at the impact of the grain size, texture, color, eye color, and bruchid-damaged grains on cowpea market prices. The data for the...

Außerlandwirtschaftliche Diversifikation im Transformationsprozess. Diversifikationsentscheidungen und -strategien ländlicher Haushalte in Slowenien und Mazedonien AgEcon
Mollers, Judith.
Problem and objectives. Non-farm rural diversification is gaining prominence in the debate on rural development since the end of the 1990s. The expansion of non-farm employment and the diversification of incomes are important policy objectives because they offer a solution to the employment and structural problems of a shrinking agricultural sector. Development policies focusing on the rural non-farm sector aim at offering employment options and reducing urban migration. They can contribute to poverty reduction, economic growth and a more equal income distribution. This research is based on a household survey including 240 randomly selected rural households in the regions of Gorenjska and Pomurska in Slovenia as well as Gevgelija and Kumanovo in Macedonia....

Non-Market Valuation and the Household AgEcon
Smith, V. Kerry; van Houtven, George.
The purpose of this paper is to describe the implications of the collective model of household behavior for the methods used to estimate the economic value of non-marketed environmental resources. The effects of public good and risk are considered, along with revealed and stated preference methods. To the extent the collective framework is adopted, then recover of individual preferences from household behavior requires distinguishing how preference and within household income allocations affect choices.

Female Participation in Decision-Making in Agricultural Households in Kenya: Empirical Findings AgEcon
Kiriti, Tabitha; Tisdell, Clement A.; Roy, Kartik C..
Survey data on which this paper is based were collected in a rural district in Kenya between December 2000 and January 2001. The main objective was to identify the factors that determine female participation in household decision-making. Our results suggest that bargaining models and resource theory cannot be applied in a society where customarily determined sex and social stratification systems place males higher than females and determines that only men make major decisions. Our results support the hypothesis that cultural theory is more significant than bargaining models or resource theories in determining women's participation in decision-making in Kenya.

Evaluating Consumer Preferences and Marketing Opportunities for New Sauerkraut Products AgEcon
Uva, Wen-fei L.; Cuellar, Sandra; Roberts, John.
Per-capita consumption of sauerkraut in the U.S. has exhibited a continuously declining trend since the 1960s and 1970s. Consumption trends in the U.S. food market today are strongly determined by consumers' desire for new and exciting flavors. However, sauerkraut sold in the market nowadays is not much different from sauerkraut made in the past. Through the addition of savory ingredients such as onions, garlic, dill seed, green peppers, mustard seeds and jalapeno peppers to the traditional cabbage kraut in different amounts and blends, Cornell University developed many new sauerkraut formulations. This study assessed the market viability of six new sauerkraut formulations, including sauerkraut containing the following ingredients in concentrations...

Does Orphan Status Affect Primary School Attendance? An Analysis of Household Survey Data from Uganda AgEcon
Asiamah, Selloane; Kraybill, David S.; Thompson, Stanley R..
The continent of Africa is currently experiencing two major interrelated social challenges, namely poverty and the HIV/AIDS epidemic. According to UNICEF, there are millions of AIDS-orphans in Africa, with over 80% of them being raised by extended families. However, relatively few studies have been undertaken to determine how these orphans fare in terms of access to education, healthcare and other social services. Literature shows that orphans face unique problems when it comes to school attendance, including possible intra-household discrimination. This paper examines the impact of various household characteristics on school enrollment in Uganda. Our results are based on the analysis of data from the Uganda National Household Survey (UNHS) that was...

A Censored Demand System Analysis of Fruits and Vegetables by Different Income Groups Using Micro Data AgEcon
Niu, Luyuan; Wohlgenant, Michael K..
This study examines demand for fruits and vegetables segmented by income levels in a complete demand system framework using the Consumer Expenditure Survey (CEX) from 2002 to 2006. Results show that disparities are found between high-income households and low-income households. Seasonal effects and demographic variables, such as household heads’ race and gender, region, household size and household composition, play an important role in fruit and vegetable consumption for both categories of household. In contrast, urban status, household heads’ educational level and age are not found to have a statistically significant impact for low-income households. Conditional price elasticities indicate that processed fruits and vegetables, fresh fruits and fresh...

Household Welfare Cost of the Indonesian Macroeconomic Crisis AgEcon
Fabiosa, Jacinto F.; Jensen, Helen H.; Yan, Dong.
A theoretically consistent incomplete demand system is estimated to quantify the cost of the 1997 microeconomic crisis. Welfare cost per person was $128, which translates to $26.12 billion total cost. This amount is equivalent to agriculture's GDP contribution, and sufficient to pay for Indonesia's total annual government budget.

The Effectiveness of Local Food Marketing Strategies of Food Cooperatives AgEcon
Katchova, Ani L.; Woods, Timothy A..
This study examines the role that food consumer cooperatives play in the local food networks. Data are collected from three case studies with leading food cooperatives and a national survey of the general managers of food cooperatives. We identify the emerging business practices in local sourcing as a differentiation and member recruitment strategy for food cooperatives. Our analysis identifies several clusters of strategies used for local food procurement, based on the extent to which the co-op is involved in procurement activities upstream (at the farm), mid-stream (at the distribution center) or downstream (at the food cooperative). The results also show that when compared to other grocers, food co-ops have clear advantages in working with local...
