In this paper we estimate the price and income elasticities for five sweet spreads using a two-stage budgeting procedure. The first stage modeled the consumer's budget decision as a Tobit model, where total sweet spread expenditures are based on income and demographic variables. The second stage, including only those households with nonzero first stage expenditures, was treated as a standard consumer allocation problem using the AIDS model. To incorporate population demographics, the AIDS model was expanded by specifying the constant term as a linear function of demographic variables. Deficiencies of micronutrients such as vitamin A are widespread, expecially in Africa. Biofortified crops such as maize, bred for high levels of provitamin A might offer a solution, but these crops are often bright orange, and African maize consumers prefer white. To estimate the consumers interest in orange biofortified maize, sensory evaluations were organized in rural Ghana with white, yellow and orange maize. The effect of information on willingness to pay for biofortification was estimated using a simulated radio message. This paper reports the results of market place and consumer research for hard apple cider. The objectives of the research were to determine potential demand for and constraints to the supply of hard apple cider in Michigan. The research was undertaken using on-site and focus group interviews of managers of microbrews, brew-pubs, restaurants and retailers. The research revealed much enthusiasm over HC market potential among purveyors interviewed, particularly among microbrewers, brew-pubs, and specialty retailers. This study relates the demand for quality foods in Hanoi in terms of its nutritional composition, diversity, price, processing stage, source, and extent eaten outside home with urbanization and enhanced incomes. The vast differences in these foods quality parameters across different socioeconomic groups and regions in and around Hanoi city suggest the changing nature of the food quality with increased income and urbanization. Forecasting retail food prices has become increasingly important to the U.S. Department of Agriculture (USDA). This is due to the changing structure of food and agricultural economies and the important signals the forecasts provide to farmers, processors, wholesalers, consumers, and policymakers. The paper develops a procedure for decomposing changes in agricultural price gaps, defined as the difference between a commodity's domestic producer and border prices. Two decomposition approaches are presented, depending on whether policy allows transmission from changes in trade prices and exchange rates to domestic prices. The methods allow one to isolate and measure the effect on the price gap of changes in agricultural policy versus non-policy variables. The decomposition procedure is demonstrated in an example involving the price gap for Russian poultry in the late 1990s. The Canadian egg industry has introduced a number of specialty eggs, including Omega-3, organic, free run/range, vitamin enhanced and vegetarian over the past few decades. These eggs are generally sold at prices higher than the ‘normal’ egg and there has been little analysis of the consumer awareness of and interest in purchasing these eggs. All previous econometric analysis of the Canadian egg market has assumed eggs and consumers are homogeneous.
