Cytotoxic T cell adjuvant effects of three Salmonella enterica flagellins BJM

Bacterial flagellins are important virulence-associated factors and strong inducers of inflammatory responses in mammalian hosts. Flagellins have also been investigated as potential vaccine adjuvants, either for induction of humoral or cellular immune responses, to different target antigens. In this study we investigated the adjuvant properties of three Salmonella enterica flagellins types (FliCd, FliCi and FljB) to an ovalbumin-derived CD8+ T cell-restricted epitope (OVA257264). Microbial contamination of sand from major beaches in Fortaleza, Ceará State, Brazil BJM

The presence of faecal contamination and pathogenic microorganisms in samples of dry and wet sand collected from three major beaches in Fortaleza, Ceará State, Brazil: (Praia do Mucuripe, Praia do Futuro and Praia do Caça e Pesca), during the period of May 1999 to January 2000 was evaluated. Praia do Caça e Pesca had the highest incidence of E. coli in dry sand (56%) followed by Praia do Mucuripe (28%) and Praia do Futuro (16%). In wet sand, results were 48%, 28% and 24% for Praia do Caça e Pesca, Praia do Futuro and Praia do Mucuripe, respectively. Biocide tolerance in Salmonella from meats in Southern Spain BJM

Salmonella serovars sampled from meat products in Southern Spain (Andalucía) during the period 2002-2007 were analyzed in this study. The serovars most frequently detected (in order) were Typhimurium, Enteritidis, Derby, Anatum and Rissen. Isolates (n = 43) were tested for sensitivity to biocides, including the quaternary ammonium compounds benzalkonium chloride (BC), cetrimide (CT) and hexadecylpyridinium chloride (HDP), and the bisphenols triclosan (TC) and hexachlorophene (CF). The ability of Lactobacillus acidophilus UFV-H2B20 to antagonize Salmonella enterica subsp. enterica ser. Typhimurium and to reduce the pathological consequences for the host was determining using conventional and gnotobiotic animals. Conventional NIH mice received daily by gavage a 0.1 ml suspension containing about 10(8) cfu L. acidophilus UFV-H2B20 and germfree animals received a single 0.1 ml dose. Survival of Salmonella spp. in minced meat packaged under vacuum and modified atmosphere BJM

Abstract The effect of different modified atmosphere packaging regimes on the behavior of Salmonella spp. on minced meat was studied. Minced meat was experimentally contaminated with a Salmonella spp. cocktail (S. Enteritidis, S. Typhimurium, S. Infantis and S. Arizonae), packaged under vacuum or modified atmosphere with initial headspaces containing 20%O2/50%CO2/30%N2 and 20%O2/30%CO2/50%N2) and stored at 3 ± 1 °C for 12 days. Samples were analyzed for Salmonella spp., viable and lactic acid bacteria count every third day. Occurrence of Salmonella spp. in broiler chicken carcasses and their susceptibility to antimicrobial agents BJM

The present study was carried out to evaluate the occurrence of Salmonellae in broiler chicken carcasses and to determine the antimicrobial resistance profile of the isolated strains. Twenty-five out of the 260 broiler chicken carcasses samples (9.6%) were positive for Salmonella. S. Enteritidis was the most frequent serovar. Nineteen Salmonella isolates were tested for antimicrobial resistance, and the results indicated that 94.7% were resistant to at least one antimicrobial agent. Resistance to streptomycin (73.7%), nitrofurantoin (52.3%), tetracycline (31.6%), and nalidixic acid (21%) were the prevalent amongst Salmonella strains tested.

Microbiological analyses of chicken eggs in Recife and Salvador have shown a high occurrence of Salmonella in the egg shells and yolks. Likewise, the occurrence of Salmonella plus coagulase-positive staphylococci in Coalho cheese reached alarming levels. The data revealed a significant risk of infections and intoxications from consuming these foods in the cities.

Adhesion and biocides inactivation of Salmonella on stainless steel and polyethylene BJM

The adhesion of Salmonella (S.) strains to stainless steel and polyethylene and their inactivation by biocides used in food industry was investigated. Coupons of stainless steel and polyethylene were immersed in bacterial suspensions of S. Enteritidis, S. Typhimurium, and S. Bredeney during 15, 30, and 60 minutes, and submitted to different concentrations of peracetic acid (PAA), sodium hypochlorite (NaOCl), and quaternary ammonium (Quat) sanitizers. Evaluation of an indirect ELISA for the detection of Salmonella in chicken meat BJM

In this work, an indirect ELISA based on a monoclonal antibody (MAb) specific for an outer membrane protein of Salmonellaenterica serovar Enteritidis was used for detection of Salmonella in 154 samples of chicken meat. Its efficiency was determined through comparison with the results obtained from the conventional method. The prevalence of samples contaminated with Salmonella was 23% with the conventional culture method, and 26% with the ELISA. Frequency of zoonotic bacteria among illegally traded wild birds in Rio de Janeiro BJM

Abstract The illegal wildlife trade may increase the risk of infectious disease transmission, and it may not only cause disease outbreaks in humans but also threaten livestock, native wild populations, and ecosystems' health. Bird species may act as carriers in the transmission of enteric pathogens. However, epidemiological studies on zoonotic bacteria in wild birds are rare in Brazil. From March 2011 to March 2012, we investigated the frequency of Enterobacteriaceae in cloacal swab samples from 109 birds of the passerine and Psittacidae families. Comparison of experimental competitive-exclusion cultures for controlling Salmonella colonization in broiler chicks BJM

Occurrence of Salmonella spp. and generic Escherichia coli on beef carcasses sampled at a brazilian slaughterhouse BJM

A total of 120 beef carcasses were analyzed during processing at a slaughterhouse in southern Brazil. The carcasses were sampled by swab at three different steps of the slaughter line and then they were tested for Salmonella and E. coli. The Salmonella isolates were also examined for antimicrobial susceptibility. Salmonella prevalence distribution was modeled and the probability of contamination was simulated using @Risk program and 10,000 interactions. Results demonstrated that 4 beef carcasses (3.3%) were positive for Salmonella only in the first point. The six isolates of Salmonella were classified: S. Newport (n = 3), S. Saintpaul (n = 2) and S. Antagonistic and protective effects against Salmonella enterica serovar typhimurium by Lactobacillus murinus in the digestive tract of gnotobiotic mice BJM

In the present study, production of antagonistic substances by Lactobacillus murinus against enteropathogenic bacteria was evaluated in vivo as well as a possible protective effect against an oral challenge with Salmonella Typhimurium using a gnotobiotic animal model. A higher mean survival time (P < 0.05) was observed in L. murinus-associated animals (7.89 ± 3.83 days) when compared with the control ones (4.44 ± 0.73 days). Alimentos de origem animal representam papel fundamental na epidemiologia das salmoneloses humanas. Apesar dos avanços tecnológicos, a carne de frango ainda é passível de contaminação bacteriana, especialmente por microrganismos do gênero Salmonella, que podem encontrar-se albergados no trato intestinal ou em outra parte do corpo das aves. Elisa indireto na detecção de Salmonella spp. em lingüiça suína Ciência Rural

Um teste ELISA, baseado em um anticorpo monoclonal (MAb) específico para uma proteína de membrana externa de Salmonella enterica serovar Enteritidis foi comparado com o método de cultivo tradicional na detecção de Salmonella spp. em 110 amostras de lingüiça suína frescal. A prevalência do patógeno nas amostras foi de 11,82% de acordo com o cultivo tradicional. O teste ELISA revelou sensibilidade, especificidade, valores preditivos positivos e negativos de 100%, 98%, 87% e 100%, respectivamente. Tais achados indicam que, comparado ao sistema tradicional, o teste imunológico foi bastante eficaz na determinação de Salmonella spp. em amostras de lingüiças naturalmente contaminadas.

Qualidade sanitária de embutidos coletados no mercado público central de Porto Alegre-RS Ciência Rural

Noventa e três amostras de embutidos coletados no Mercado Público Central de Porto Alegre foram analisadas quanto à presença de Salmonella sp. e à contagem de coliformes fecais. Todos as amostras apresentaram ausência de Salmonella sp., enquanto, em relação aos coliformes fecais, constatou-se que quatorze amostras de embutidos frescais encontravam-se acima do padrão estabelecido pela portaria n° 451, em vigor no momento da coleta. Entretanto, se fossem considerados os parâmetros estabelecidos na Resolução n° 12, em vigor atualmente, apenas cinco amostras seriam consideradas fora de padrão. A maioria das amostras com contagens de coliformes fecais acima de 5x10²/g estava armazenadas acima da temperatura adequada no momento da coleta.
