Die Lebensmittelwirtschaft steht vor der Herausforderung, immer mehr Menschen gesund und ausreichend zu ernähren, ohne die Umwelt zusätzlich zu belasten. Der Biolandbau hat dafür Lösungsansätze zu bieten, tritt aus seiner Nische heraus und wird zum Zugpferd für die gesamte Landwirtschaft. Konsumentinnen und Konsumenten gehören mit zum Konzept einer nachhaltigen Lebensmittelversorgung. Dies sind die wichtigsten Erkenntnisse der Wissenschaftstagung ökologischer Landbau in Zürich.

Fram till väldigt nyligen bekämpades angrepp med kemiska bekämpningsmedel, t.ex. med metylbromid. Alle für die Verarbeitung ökologischer Erzeugnisse bereits zugelassenen Zusatzstoffe wurden anhand der Kriterien der EU für die Zulassung von neuen Zusatzstoffen sowie der Erfahrungen der Verbände und Industrie geprüft und beurteilt. Als Ergebnis wurde eine Dossiersammlung erarbeitet. Jeder für die ökologische Verarbeitung zugelassene Zusatzstoff wird in einem eigenen Kapitel („Dossier“) vorgestellt.

It was the aim of this meeting to train the assessors of several CoreOrganic-Partners (i.e. Austria, Germany, Denmark and Norway) with regard to the methods which are going to be applied in the course of the project on-farm assessments. Training involved animal-based parameters, a resource checklist and a management questionnaire. After a theoretical and practical introduction, inter-observer reliability (IOR) of the main animal-based parameters was tested. This included gait scoring/lameness, body condition, cleanliness and integument alterations. Ein Verfahren, welches ökologische oder konventionelle Erzeugung eines Produktes analysieren kann, ist für die Anwendung im Zweifelsfall sinnvoll. Ziel des Projektes war es dementsprechend, diskriminierende Methoden zu evaluieren und diese nach vorgängig festgelegten Kriterien, wie Anwendungsmöglichkeiten und Aussagesicherheit für Qualitätssicherungssysteme in den Unternehmen, aber ebenso für die Anwendung im Kontrollsystem durch Kontrollstellen und den zuständigen Behörden, zu bewerten. Die Zartheit ist eines der wichtigsten Merkmale für den Genusswert von Fleisch und speziell für Labelfleischprogramme, aufgrund der Erkennbarkeit der Produkte, sicherlich von entscheidender Bedeutung für den wiederholten Kaufentscheid der Konsumierenden (Koohmaraie und Geesink, 2006). Ziel der vorliegenden Untersuchung war daher zu prüfen, inwieweit sich das Alter von Rindern und Ochsen, die auf der Basis von Gras und Graskonserven extensiv ausgemästet wurden, auf die Eigenschaften des Bindegewebes und die Textur von zwei Muskeln, die sich im Kollagengehalt unterscheiden, auswirkt.

Full case study report: Bioregion Mühlviertel - Austria Organic Eprints

The ‘Bioregion Mühlviertel’ represents a territorial approach towards regional development based on a strong organic agriculture sector. The Mühlviertel region is located in the province of Upper Austria (yellow) and comprises the four districts (above the blue line in Graphic 4 marking the river Danube) of Freistadt, Perg, Rohrbach and Urfahr-Umgebung (covering 122 municipalities). On 3090km2 the area inhabits 270.000 people with a density of 92 people/km2. The agriculturally used area is 2580km2 of which again around one quarter gets cultivated organically. Also the proportion of organic farms (≈26%) is higher than the national average of around 17% (BMLFUW, 2014). The development process of setting up the Bioregion began in 2010. Konsum ökologischer Milch aus gesundheitlichen Gründen - Eine qualitative Erhebung auf deutschen Demeter Milchviehbetrieben und bei ihren Kunden Organic Eprints

Supposedly beneficial nutritional compositions were found in organic milk. Studies report that the consumption of organic milk products affects health eg. prevention of eczema in children. Single cases describe a better digestibility of organic milk for consumers suffering from diverse atopic disorders and food allergies. To clarify whether this is a real phenomenon, a survey in combination with interviews was carried out on bio-dynamic milk farms and with affected consumers in Germany. The results show that there are consumers which are buying fresh bio-dynamic raw milk because of a better personal digestibility.

Organic beef production by Maremmana breed: qualitative meat characteristics Organic Eprints

Meat quality of Maremmana young bulls and steers was evaluated during three consecutive years, according to an extension service experimental program. Cooking loss values of meat samples were lower in meat from steers, whereas shear force values were higher. Meat from steers was darker than meat from young bulls, as a consequence of a low level of Lightness and a high level of Chroma. Meat chemical composition showed a higher content of intramuscular fat in steer meat, which showed also a lower level of saturated fatty acids and a higher level of unsaturated fatty acids. Conjugated linoleic acid content in meat fat either from young bulls or from steers was similar to that found in meat from confined cattle fed preserved forages and concentrates. However...

Different sorts of apples coming from pairs of organic/conv. producers of different locations in Switzerland and Germany were retrospectively investigated in 2004 and prospectively classified in 2005 based on data measured by fluorescence-excitation-spectroscopy (FES) and subsequent discriminant analysis. The result was in 8 of 9 cases a correct identification of the method of production. In one case the data showed no difference.
