Conceptualizing Multifunctional Agriculture from a Global Perspective 31

The notion of multifunctional agriculture has been actively researched from diverse disciplines including economics, ecology, sociology, and geography since emerged out of the Uruguay Round in the 1990s. In particular, the economics approach represents an attempt to tailor the concept of multifunctional agriculture to market-oriented WTO trade regime. Soyfood Consumption Pattern: Effects of Product Attributes and Household Characteristics 31

Effects of perceived attributes of soyfoods on the consumption pattern for six different soyfood products were evaluated. Perceived attributes included convenience, health benefits, and taste. Six soyfood products were tofu, vegetable burgers, soy milk, soy supplements, meat substitutes, and soy cheese. This study used conceptual model that highlights the role of perceived attributes in a demand model by combining Lancaster's characteristics model with Fishbein's multi-attribute model. Labeling Genetically Modified Food Products: Attitudes among the consumers in the United States and United Kingdom 31

Eight perceived attributes of agro-biotechnology were identified to be associated with consumers' attitude toward existing practices of GM food labeling. The perceived negative attributes, particularly health risk from GM food, played a dominant role in shaping the overall attitude toward GM labeling. Female and older respondents were more likely to be concerned about the existing GM labeling practices than male and younger respondents. Consumers with college education were less likely to be concerned about existing GM labeling practices than those without college degree.

Antecedents Factors that Influence Soy Consumption: A Structural Equation Modeling Approach 31

We propose a structural model of antecedent factors that affect the frequency of soy consumption. This model, suggests that soy-general knowledge influences perceptions about nutrition concern, health benefits of soy, soy related personal beliefs and personal attitudes toward soy. Health benefits of soy, in turn, impacts soy-related personal beliefs and personal attitudes toward soy. Additionally, soy-related personal beliefs influence personal attitudes toward soy. Finally, both nutrition concern and personal attitudes toward soy drive the frequency of soy consumption. Public Preferences for Multifunctionality of Agriculture: National Survey of Registered Voters 31

Our study used AFT survey data to analyze the preferences of registered voters with regard to the non-market (mulitifunctional) benefits that agriculture produces jointly with market commodities. Descriptive data analysis demonstrates that the US public considers the multifunctionality of agriculture as an important social issue. Regression models show that geographic regions can be very important in determining people's behavior with respect to the multifunctional benefits of agriculture. Using nationwide food consumption survey data collected in Bulgaria in 1997, this study examines how food intake patterns of the unemployed and pensioners differ from patterns of the employed. During transition, the unemployed and pensioners are particularly vulnerable to nutritional deficiencies and chronic diseases resulting from unbalanced and unhealthy diets as well as food shortage.

Self efficacy as a mediator of the relationship between dietary knowledge and behavior 31

This study examines the causal relationship between dietary knowledge and behavior by including self-efficacy in the models. Regression analyses supported the hypothesized relationships that self-efficacy mediates effects of dietary knowledge and social influences on dietary behavior. Self-efficacy also accounted for variance in eating behavior not explained by knowledge or demographic variables. The coefficients for the relationship between dietary behavior and knowledge decreased for each of the four dietary models when the influence of self efficacy was added. Interventions and health promotion campaigns should seek to directly address factors influencing diet related self-efficacy instead of focusing on disseminating information only.

Using generalized Heckman's model and NPD data, this study specified a meat demand model incorporating health concern and demographics. Estimated model established empirical linkages between health concerns and meat consumption. Beef and pork were negatively linked to health concerns, whereas chicken, turkey and fish were positively associated with health concerns.

In a survey of UK consumers, we elicited their willingness-to-accept (WTA) a discount for GM foods and willingness-to-pay (WTP) a premium for non-GM foods in order to assess their valuation of the non-GM characteristic in food products. Mean WTA exceeds mean WTP, a finding that suggests the valuation of the non-GM characteristic reflects an endowment effect, imperfect substitutability between GM and non-GM foods, or both. CUSTOMER PROFILES OF RETAIL FOOD OUTLETS IN THE EMERGING MARKET ECONOMY OF BULGARIA 31

The objective of this study was to identify profiles of consumers frequenting three types of food retail outlets- grocery stores, farmer markets, and street stalls- to purchase food in a transition economy in Bulgaria. This study estimated two-stage decision models to distinguish between the two decisions of choosing to shop at a particular outlet and how often to shop. Retail-outlet selection and shopping frequency were affected by different sets of sociodemographic characteristics. In particular, household income was a major factor influencing the selection of farmer markets and street stands, but had no effect on the selection of and shopping frequency at grocery stores.

APPLICATION OF BIOTECHNOLOGY IN AGRICULTURE AND MEDICINE: UNITED STATES VERSUS EUROPE 31

Discrepancies in the attitude between US and UK consumers toward application of biotechnology in crop production and medicine were examined using data from mail and online surveys. Results showed that more than 31% (46%) of US (UK) respondents were opposed to biotech foods while only 16% (18%) opposed biotech medicine, respectively. Perceived risks and benefits of agro-biotechnology and medical biotechnology were significant in determining overall attitude toward application of biotechnology in agriculture and medicine i.e., perceived risks (benefits) caused consumers to oppose (support) application of biotechnology in food production and medicine.

Perceived Risks of Agro-biotechnology and Organic Food Purchase in the United States 31

This study examined the role of consumers' perceived risks and benefits of agro-biotechnology in shaping the purchase pattern for organic food among US consumers. Consumers' general purchase behavior, knowledge of GM technology, and socio-demographic variables were examined in relation to their impact on organic food purchase. The sample data indicated that less than one fourth of the consumers bought organic products at least sometimes. Only 2% of the consumers bought organic food very often.
