Chartois, Herve; Latrouite, Daniel; Le Carre, P.
Fishing and trade of living crustaceans are dynamic commercial sectors in France. 25 000 tons of local or imported crabs, lobsters , crawsfishes are yearly treated. Based upon a literature review and fishmongers interviews, this study describes the current pratices and problems associated to live crabs and lobsters storage. Supply conditions of live crustaceans, marketing networks, and biological, ecological and physiological characteristics of crustaceans were discussed. Morever, storage facilities, their operating rules and factors affecting the survival rate under storage and transportation conditions were reviewed.

Une utilisation des enzymes proteolytiques extraites des visceres de poissons: La coagulation du lait. ArchiMer
Guerard, F.
Chronic shortages in rennet have led to the use of enzyme preparations from various biological origins and capable of undergoing a milk-clotting process similar to that catalyzed by calf rennet. A proteolytic enzyme extracted from the gastric mucosa of dogfish Scyliorhinus canicula exhibits a clotting activity and several physical properties, which render it suitable for utilization in cheese-making industry.

Effect of temperature, water-phase salt and phenolic contents on Listeria monocytogenes growth rates on cold-smoked salmon and evaluation of secondary models ArchiMer
Cornu, M; Beaufort, A; Rudelle, S; Laloux, L; Bergis, H; Miconnet, N; Serot, Thierry; Delignette Muller, M.
Salting and smoking are ancient processes for fish preservation. The effects of salt and phenolic smoke compounds on the growth rate of L. monocytogenes in cold-smoked salmon were investigated through physico-chemical analyses, challenge tests on surface of cold-smoked salmon at 4 degrees C and 8 degrees C, and a survey of the literature. Estimated growth rates were compared to predictions of existing secondary models, taking into account the effects of temperature, water phase salt content, phenolic content, and additional factors (e.g. pH, lactate, dissolved CO2). The secondary model proposed by Devlieghere et al. [Devlieghere, F., Geeraerd, A.H., Versyck, K.J., Vandewaetere, B., van Impe, J., Debevere, J., 2001. Growth of Listeria monocytogenes in...

Technical paper on Toxicity Equivalency Factors for Marine Biotoxins Associated with Bivalve Molluscs ArchiMer
FAO/WHO.
World bivalve molluscs production (capture + aquaculture) has been increasing substantially in the last fifty years, going from nearly one million tonnes in 1950 to about 15 million tonnes in 2012. Being filter feeders, bivalves utilise natural plankton and detritus as feed and do not require artificial feeds. But this filter feeding nature is also the reason for the requirement of strict environmental hygiene to produce bivalves safe for human consumption. They tend to concentrate microorganisms, toxins and chemicals from the environment and therefore, their safety management requires stringent sanitary measures to ensure consumer protection. Following the request of Codex Committee on Fish and Fishery Products (CCFFP), FAO/WHO agreed to develop a...

Fish production and processing in Nigeria OceanDocs
Tobor, J.G..
The paper highlights the importance of fish protein in essentially carbohydrate diets and relates increasing demand for fish to the short supply of protein of animal origin. The demand for fish in Nigeria from 1985 to the year 2000 is presented. Domestic production relative to demand is stressed. Estimated potential yields of resources from various bodies of water and indication of their present levels of exploration are indicated. The potential of aquaculture as the most reliable means of increasing production is emphasized while the limit of capture fishery for the same purpose is stressed. Government efforts to develop the fisheries and increase fish production are discussed together with possible causes responsible for failure of these efforts to...

Processing guide for fish processing plants in Kenya OceanDocs
Ouma, O.C..
In 1929, it was first reported that Listeria monocytogenes could cause disease in humans. In 1980, there was an outbreak of the disease in Auckland, New Zealand resulting in 5 deaths and 22 perinatal cases. Investigators suggested that the consumption of raw seafood may have been a contributory factor. This evidence was epidemiological rather than microbiological. There are a number of different ways by which Listeria monocytogenes and other pathogenic organisms can enter into the seafood processing plants and contaminate fish and seafood products, the main ones being run off from agricultural farms, direct faecal contamination by animals (man inclusive), sewage and seafood contact surfaces. Quantitative ATP bioluminescence, RODAC and TVC was used to...

Pruebas de aceptabilidad de galletas elaboradas con pecados pelágicos OceanDocs
Goulding, I..
Previous work has established the technical feasibility of producing acceptable shark-base fish biscuits, which were subsequently used for a school breakfast programme in the poorer areas of Ecuador. However, reformulation of the biscuits using chaeper pelagic fish resources (sardine, mackerel and tuna dark meat) was necessary due to changes in the cost and availability of shark. This paper describes a datailed examination of the organoleptic quality of the pelagic-fish based biscuits, and the results of acceptability test undertaken with children attending 3 schools in the marginal areas of Guayaquil. For the first part, 5 panelists selected from staff at Instituto Nacional de Pesca, rated each of the 3 types of biscuit using 5 rating scale describing...

Icing of fish and construction of an iced fish box OceanDocs
Emokpae, A.O..
In many developing countries, coastal fisheries are very important and account for the greater part of fish landings. Because they employ canos, rafts and other primitive crafts. Present developments are concentrated on the small motorized vessels which cover greater arears and land more fish. The preservation of these catches on board and during distribution ashore presents great problems under tropical conditions. The simplest and most desirable solution is the chilling of these catches with ice. This paper describes the use of a new boxing system on board small fishing crafts.
