The economic situation in most developing countries has left farmers and processors operating at small scale and under unhygienic environment. The productivity is often too low to justify labor and time investment. With respect to the challenges particularly associated with roasting of corn, a roaster was designed, constructed and its performance evaluated. The mechanized charcoal fuelled corn roaster consists of a frame, roasting unit, charcoal tray, air blowing unit and a power transmission system. The functional efficiency of the machine at different roasting temperatures of 100, 130 and 150 oC ranged between 88 and 94%, while the roasting capacity and roasting time ranged between 40 and 54 fresh corns per hour in 22 and 30 min, respectively. The... |

ABSTRACT The aim of this study was to test the hypothesis that the quality and quantity of biofortified cassava root in a humid tropical environment can be modified with the application of a combination of low- and high-quality residues of leguminous tree species. The experiment was designed as a 6 × 2 factorial (a combination of 4 legume species versus 2 levels of nitrogen) with 4 replications in a randomized block design and the following treatments: Gliricidia + Acacia, Gliricidia + Leucaena, Gliricidia + Clitoria, Leucaena + Acacia, Leucaena + Clitoria, and a control without legumes. We analyzed the shoot weight, number of roots/plant, root weight, root production, proximate composition, as well as the mineral, carotenoid, and pro-vitamin A contents.... |

ABSTRACT Maize (Zea mays) is considered one of the most important crops for world food security. Globally, Brazil is the second largest maize producer and the fourth largest maize consumer. The climate variables is one of the main determining factors for crop yield. Given the possibility of future climate changes, our objective was to evaluate the impact of climate change on maize crop growth and development, assessed strategies to cope with the future crop andto quantify the impacts on various producing regions of Brazil. The DSSAT/CERES-Maize model was calibrated with field data and then used to simulate current and six future climate scenarios, according to the AgMIP protocols. We selected three regional climate circulation models (GCMs) and two... |

Captive breeding of bullfrog (Lithobates catesbeianus) is of great economic potential, mainly for its thighs and leather. The nutritional quality of frog meat includes properly balanced amino acids with a protein profile of high biological value, low fat and low cholesterol, and high digestibility due to its short chain molecule structure. It is recommended by doctors and nutritionists, especially for protein restricted children or malnourished children. Aiming to aggregate value to the segment and offer a product with nutritional properties that meet the need of children aged six months and above, a meat product based on the composition of frog meat was developed experimentally. To ensure raw material quality after bleaching and deboning, the microbiota... |

Abstract The 5º Simpósio de Segurança Alimentar (5th Food Safety and Security Symposium) was held in May, 2015, in Bento Gonçalves, RS, Brazil with the objective of discussing the interrelation between food and health, in various perspectives. This paper reviews the state of the art regarding all the issues discussed during the Symposium, connecting them with the lectures presented at the conference. As final remarks, it was perceived that the interrelation between food and health is growing stronger and cannot be discussed without involving the different areas involved. |

Abstract This study presents a system to electro-neutralize agrochemicals in food and water samples based on the properties of a controlled electron trap, the related apparatus is protected under patent application (WO/2018/090110; INPI: BR 10 2016 0268486) / (PCT / BR 2017/050115). The efficacy of the system was verified as to the type, quantity, surface tension charge, temperature, pH and static energy loading of the electrolyte for both solid and liquid samples. It also took into consideration the retention and accumulation measurement of electric charges, verification of electrical potential differences and also accumulation by applying pulsed high voltage in according to the Daniell Cell method. The proposed technology is able to provide the... |

Abstract The total available land for food, fuel, or forests is finite, while land demand is increasing and expected to increase further in the coming decades; resulting in deterioration of food security. Therefore, the corporate world adopted a solution of acquiring international agricultural land. Consequently, the global demand for land has progressively risen, but the question requiring decision support is - which lands to acquire for food production to ensure future food security? Food Science and Technology has vital pivotal roles to play in improving this situation, as food science is inherently multidisciplinary and motivated by the use of new technologies. In this paper, we endeavour to address this multidisciplinary food science question, by... |

Social networks are a significant way through which rural communities that manage resources under common property regimes obtain food resources. Previous research on food security and social network analysis has mostly focused on egocentric network data or proxy variables for social networks to explain how social relations contribute to the different dimensions of food security. Whole-network approaches have the potential to contribute to former studies by revealing how individual social ties aggregate into complex structures that create opportunities or constraints to the sharing and distribution of food resources. We used a whole-network approach to investigate the role of network structure in contributing to the four dimensions of food security: food... |
