Found in different foods, starch is the most important source of carbohydrates in the diet. Some factors present in starchy foods influence the rate at which the starch is hydrolyzed and absorbed in vivo. Due the importance of cassava products in Brazilian diet, the objective of this study was to analyze total starch, resistant starch, and digestible starch contents in commercial cassava products. Thirty three commercial cassava products from different brands, classifications, and origin were analyzed. Se desarrolló un sabor de mamey similar al natural a partir de aromáticos químicos, para esto fueron aislados los compuestos volátiles de la fruta y analizados mediante GC y GC-MS. En total fueron identificados 24 compuestos volátiles en la fruta, destacándose como componentes mayoritarios el benzaldehído, hexanal y ácido hexadecanoico. Se desarrollaron 16 formulaciones, que fueron evaluadas sensorialmente, mediante prueba hedónica de calificación de la calidad, por 12 jueces experimentados. Los resultados de la evaluación sensorial en la aplicación de la mejor variante en leche y en helado fueron calificadas de muy bueno. |

Lack of access to nutritious food is an underlying and major cause of child mortality in Africa. Improving the nutritional quality of food crops, through biofortification, would be a useful complementary strategy to other agricultural and public health interventions. Quality Protein Maize (QPM) varieties have been developed through biofortification. Consumption of these varieties leads to greater protein utilisation in adults and children. In Kenya three QPM varieties have been released.
