Ob und wie weit gentechnisch veränderte Pflanzen (GV Pflanzen) zur Nachhaltigkeit landwirtschaftlicher Produktionssysteme in der Schweiz beitragen, wird zur Zeit in der Öffentlichkeit und unter Wissenschaftern intensiv diskutiert. Ziel dieses Projektes ist es, den Beitrag von GV Pflanzen zur Erreichung der Ziele der Schweizer Landwirtschafts- und Umweltpolitik abzuschätzen. Das Projekt wird die Auswirkungen von GV Pflanzen in konventionellen, integrierten und biologischen/extensiven Anbausystemen untersuchen. Mit dem Ziel, die Marktsituation für den Konsumenten hinsichtlich der Produktqualität zu beschreiben, wurden Proben von Speisemöhren des Anbaujahres 1996 aus der biologisch-dynamischen (n=57) und konventionellen (n=18) Praxis gesammelt. An den Möhren wurden Einzelrübengewicht, Trockenmasse, Mineralstoffe (P, K, Na, Ca, Mg, S, Fe, Zn, Mn, Cu, B, Pb, Cd) und Zuckergehalte (D-Glucose, D-Fructose, Saccharose) bestimmt. Wesentliches Differenzierungsmerkmal zwischen den Proben der beiden Anbausysteme war der Trockensubstanzgehalt, der bei den biologisch-dynamischen Möhren im Mittel um relativ 20% höher lag. Biofumigation is based on the use of glucosinolate-containing plants for the control of soil-borne pest and diseases. Upon tissue damage, glucosinolates are hydrolyzed by endogenous enzymes (myrosinase) and a range of biologically active compounds are formed. Isothiocyanates (ITCs) are the quantitatively dominating products formed at neutral pH. Most of these compounds are volatile and only sparingly soluble in aqueous systems, and depending on the R-group structure and the presence of nucleophiles, further transformation of ITCs occurs. A micellar electrokinetic capillary chromatography (MECC) method has been developed for monitoring the myrosinase catalysed hydrolysis of 2-hydroxy substituted glucosinolates and the simultaneous formation of the corresponding degradation products (oxazolidine-2-thiones (OZTs) and nitriles). Glucosibarin ((2R)-2-hydroxy-2-phenylethylglucosinolate) was chosen as the model glucosinolate owing to the difficulties in determining hydrolysis rates of this type of substrates in traditional UV-assays. Environmental conditions, e.g. pH and the presence of Fe2+ are well known factors that influence the product profile of the myrosinase catalysed hydrolysis of glucosinolates. Depending on the plant genera, the species and tissue of origin myrosinase isoenzymes (thioglucohydrolase EC 3.2.1.147) have different characteristics in terms of MW, subunit composition and pI. Der ökologische Landbau arbeitet mit Methoden, die sich gegenüber der konventionellen Lebensmittelproduktion durch höhere Umweltfreundlichkeit auszeichnen. Dies sollte auch für die Methoden gelten, mit welchen Bio-Produkte bei der Lagerung vor Schädlingen geschützt werden. Das Projekt erarbeitet und erprobt biologische Methoden zur Schädlingsbekämpfung für den Vorratsschutz, um diese für potentielle Nutzer bereit zu stellen. To ensure a high, stable production of blackcurrant juice in Denmark, it is necessary with high-yielding blackcurrant cultivars, which are resistant against pest and diseases, and that have a high sensory quality and high health value. In this experiment, blackcurrant juice processed from berries of 12 organic cultivars was screened. A trained sensory panel using descriptive sensory profiling evaluated the sensory quality of the juice samples. In addition, the aroma profile and the content of vitamin C were determined in the juice samples.
