Einfluss von gentechnisch veränderten Pflanzen (GV Pflanzen) in der Schweizer Landwirtschaft Organic Eprints
Ob und wie weit gentechnisch veränderte Pflanzen (GV Pflanzen) zur Nachhaltigkeit landwirtschaftlicher Produktionssysteme in der Schweiz beitragen, wird zur Zeit in der Öffentlichkeit und unter Wissenschaftern intensiv diskutiert. Ziel dieses Projektes ist es, den Beitrag von GV Pflanzen zur Erreichung der Ziele der Schweizer Landwirtschafts- und Umweltpolitik abzuschätzen. Das Projekt wird die Auswirkungen von GV Pflanzen in konventionellen, integrierten und biologischen/extensiven Anbausystemen untersuchen. Mit dem Ziel, die Marktsituation für den Konsumenten hinsichtlich der Produktqualität zu beschreiben, wurden Proben von Speisemöhren des Anbaujahres 1996 aus der biologisch-dynamischen (n=57) und konventionellen (n=18) Praxis gesammelt. An den Möhren wurden Einzelrübengewicht, Trockenmasse, Mineralstoffe (P, K, Na, Ca, Mg, S, Fe, Zn, Mn, Cu, B, Pb, Cd) und Zuckergehalte (D-Glucose, D-Fructose, Saccharose) bestimmt. Wesentliches Differenzierungsmerkmal zwischen den Proben der beiden Anbausysteme war der Trockensubstanzgehalt, der bei den biologisch-dynamischen Möhren im Mittel um relativ 20% höher lag. Effect of ascorbic acid and glutathione on the production of nitriles by myrosinase Organic Eprints

Biofumigation is based on the use of glucosinolate-containing plants for the control of soil-borne pest and diseases. Upon tissue damage, glucosinolates are hydrolyzed by endogenous enzymes (myrosinase) and a range of biologically active compounds are formed. Isothiocyanates (ITCs) are the quantitatively dominating products formed at neutral pH. Most of these compounds are volatile and only sparingly soluble in aqueous systems, and depending on the R-group structure and the presence of nucleophiles, further transformation of ITCs occurs. A micellar electrokinetic capillary chromatography (MECC) method has been developed for monitoring the myrosinase catalysed hydrolysis of 2-hydroxy substituted glucosinolates and the simultaneous formation of the corresponding degradation products (oxazolidine-2-thiones (OZTs) and nitriles). Glucosibarin ((2R)-2-hydroxy-2-phenylethylglucosinolate) was chosen as the model glucosinolate owing to the difficulties in determining hydrolysis rates of this type of substrates in traditional UV-assays. Ecology of the ochratoxin A producing Penicillium verrucosum: Occurrence in field soil and grain with special attention to farming system and on-farm drying practices Organic Eprints

Mycotoxin contamination of organically grown cereals has been a growing concern during recent years, one of the most important being ochratoxin A (OTA). In countries with a temperate, humid climate, OTA is produced by Penicillium verrucosum and it is crucial to focus on the fungus to obviate problems. This paper presents results to elucidate different aspects of the ecology of P. verrucosum. In a survey of differently farmed soils, P. verrucosum was found in 11 out of 65 soils (35% of the organically and 7% of the conventionally cultivated), these being the first reports of its natural occurrence in soil. Environmental conditions, e.g. pH and the presence of Fe2+ are well known factors that influence the product profile of the myrosinase catalysed hydrolysis of glucosinolates. Der ökologische Landbau arbeitet mit Methoden, die sich gegenüber der konventionellen Lebensmittelproduktion durch höhere Umweltfreundlichkeit auszeichnen. Dies sollte auch für die Methoden gelten, mit welchen Bio-Produkte bei der Lagerung vor Schädlingen geschützt werden. It is well known in biological science that all factors applied to living organisms (light, water, warmth, fertilizers etc.) show an optimum, when their input is increased. Healthy organisms and sus-tainable systems are, on the long run, only achieved when care is taken not to destroy this equilibrium of factors producing an optimum. Penicillium verrucosum occurrence and Ochratoxin A contents in organically cultivated grain with special reference to ancient wheat types and drying practice Organic Eprints

This study addresses the relationship between the ochratoxigenic strains of Penicillium verrucosum and ochratoxin A (OTA) contents in organically cultivated grain. It included 37 combined, non-dried grain samples from farmers with no drying facilities as well as 19 non-dried and 22 dried samples from six farms with on-farm drying facilities (Case studies 1-6). The study focused on the ancient wheat type spelt but also included samples of wheat, rye, barley, oats, triticale, emmer, and einkorn. All 78 samples were analysed for moisture content (MC) and occurrence of P. verrucosum. Påvirker høstetid for gras innholdet av gunstige fettsyrer i økologisk melk? Organic Eprints

Effekten av høstetid for økologisk eng i Nord-Norge på sammensetning av fettsyrer i melk ble undersøkt i et fôringsforsøk med melkekyr. Tidlig høsting av økologisk eng økte ytelsen og protein% i melk. Normal høstetid ga høyere fett% og en antatt helsemessig gunstigere sammensetning av melkefettet. Dette skyldtes bedre forhold mellom mettet og umettet fett samt mer CLA og transvaccensyre (C18:1t11). Innholdet av alfa-linolensyre (C18:3c9,12,15), og forholdet mellom omega-6 og omega-3 fettsyrer var gunstigst i melk fra tidlig høsta gras.

Sensory evaluation of juice from different organic blackcurrant cultivars Organic Eprints

To ensure a high, stable production of blackcurrant juice in Denmark, it is necessary with high-yielding blackcurrant cultivars, which are resistant against pest and diseases, and that have a high sensory quality and high health value. In this experiment, blackcurrant juice processed from berries of 12 organic cultivars was screened. A trained sensory panel using descriptive sensory profiling evaluated the sensory quality of the juice samples. In addition, the aroma profile and the content of vitamin C were determined in the juice samples.
