Effects of grilling on cholesterol oxide formation and fatty acids alterations in fish 116

Due to the adverse effects of the cholesterol oxidation products for the human health, the search of the occurrence and the quantification of these compounds in foods are considered of great importance. In this paper the effect of grilling in hake and sardine on cholesterol oxides formation and fatty acids alterations was investigated. The main fatty acids determined in both fishes were docosahexaenoic (DHA), oleic, eicosapentaenoic (EPA) and palmitoleic. The total lipids, fatty acids and cholesterol contents were decreased significantly (p < 0.02) after thermal treatment, with simultaneous increase of the cholesterol oxides contents. South Africa's small pelagics fishery is currently the largest in volume and second largest in value in the southern Benguela. It exploits short-lived, small pelagic fishes such as anchovy (for reduction into fish meal and oil) and sardine (for reduction as well as human consumption through canned products), and to a lesser extent redeye round herring and mesopelagics, largely for reduction. We explore the recent history (1940s to present) of the social-ecological system around this fishery. Since 1993 the yearly amounts of sardine landings for the Bay of Biscay fishing ports have experienced a constant increase (10,000 tonnes in 1993); on that account sardine is the first species landed in the fishing ports of the Bay of Biscay (15,000 tonnes in 2003). It is sold 0.54 € / kg (constant price over ten years) which means a 8,100 k€ turnover in 2003 and the 12th rank in value landed in the fishing ports of Bay of Biscay. The feasibility of using airborne lidar (Light Detection and Ranging) was studied to assess the early juvenile fractions of the main pelagic fish species of the coastal Atlantic waters of southern Europe (anchovy, sardine, mackerel, and horse mackerel). Field comparisons with more established echosounder methods were undertaken in the summers of 1998 and 1999 during the recruitment period of sardine and anchovy in the selected areas, in the presence of a variety of oceanographic and environmental conditions. This approach of the French sardine fishery shows mainly that pelagic trawlers are targeting less and less sardine, year after year. In an assessment approach, it would be necessary to define an estimation of fishing effort, but it will be very difficult. We are able to compt the number of fishing days, but not the time of fishing (or number of shoots for example for purse seiners) or time of searching schools. So, accessibility and catchability could be certainly more accurate than the fishing effort for assesment purposes.

Based on more than 20 yr of fish weight and length data, relative condition indices were computed for anchovy and sardine caught in the Gulf of Lions. Improvement of lipid and phospholipid recoveries from sardine (Sardina pilchardus) viscera using industrial proteases 5

Enzymatic hydrolysis of sardine viscera by three broad spectrum proteases was investigated using the pHstat method (24 h, pH 8, 50 degrees C). After hydrolysis, three fractions (sludge, aqueous phase and oily phase) were collected. For each fraction, lipids and phospholipids were quantified and molecular weights of aqueous phase peptides were determined. Under these conditions, the degree of hydrolysis (DH) varied from 1.9% (Flavourzyme), 3.1% (Protamex) and to 3.3% (Alcalase).
