Milk as one of the most important nutritional sources has also become one of the major food allergens. What are the reasons for differences of milk from organic and conventional origin? The ongoing research shows a high impact of management practices on milk quality and composition. Which quality characteristic marks consis-tently organic milk quality and how could quality be optimized? The planned transdis-ciplinary and participative project combines analytical and holistic methods to assess organic milk quality and to evaluate the impact on human health.

ABSTRACT: Milk produced in Brazil has been seen as having poor quality and is associated with a large number of small farms. However, there are few studies demonstrating lower quality of milk of small properties. Thus, this study aimed to evaluate the relationship between production scale on dairy farms and milk quality, how it behaviors throughout the year and set goals to improve quality according to each strata. A total of 21,917 analysis of 409 farmers conducted from January 2005 to December 2014 were used. To study the database, the properties were divided according to monthly average daily milk yield: 10 to 100; 100 to 200; 200 to 500; 500 to 1,000; and 1,000 to 5,000L of milk day-1....

This report was presented at the UK Organic Research 2002 Conference. Changes in milk quality were evaluated with spring-calving dairy cows and heifers fed organic diets and different levels of concentrates during early lactation. The diets were based on ad libitum forage and either 2 kg of concentrates/day (Diet 1) or concentrates fed according to milk yield up to a maximum of 7 kg/day (Diet 2). Average milk yields during the study for the cows and heifers were 23.1 and 20.1 kg/day (Diet 1) and 25.8 and 24.0 kg/day (Diet 2), respectively. The highest number of samples with a fat to protein ratio of 1.4 or > were found in samples collected from cows and heifers fed Diet 1 (20.9 and...

Regulation in the dairy industry targets the small scale producers and milk traders with the aim of ensuring that they meet requirements for milk quality control. The paper presents results from a study carried out in Kikuyu division, Central province of Kenya that assessed the challenges and the benefits accrued to on farm clean milk production and the level to which farmers were aware of regulations governing the dairy sector. The farmers were producers of milk only and possessed no milk bar licenses, public health licenses, business producer licenses nor single business licenses. They had little knowledge of laws regulating dairying with 40% identifying Kenya Dairy Board (KDB)as law...

Over the last 8 years, the transformation process with structural changes and the worsening of production technology in the Bulgarian dairy sector has led to a dramatic reduction of milk quality in Bulgaria. The improvement of the raw milk quality and the harmonisation of Bulgarian standards with EU milk quality standards is therefore on of the major conditions for the prospective integration of Bulgarian into the EU as well as for increasing the competitiveness of the Bulgarian dairy sector. This discussion paper presents the results of an in-depth...

An experiment was conducted during 6 weeks to evaluate effects of a reduced dietary level of protein-rich concentrates in a moderate dairy production system on cows’ performance, protein efficiency and milk quality including fatty acid profiles. Twenty-three lactating cows (Swiss Fleckvieh) were assigned either to a group receiving on average 2·4 kg/d individually fed concentrates (Prot+, n = 12) or to a group receiving no individually fed concentrates (Prot−, n = 11). All cows had adlibitum access to a total mixed ration (TMR) mainly based on grass and maize silage, hay and little potatoes and soybean cake. In weeks 4–6 of the experiment, part of the hay was excluded from the TMR, and...

In order to identify important factors influencing animal health and general disease resistance, detailed qualitative and quantitative farm data were collected from 99 organic dairy farms in the Netherlands. Mastitis incidence and milk quality were focal points of the data collection. In this paper the results of a group of farms which rear dairy calves in suckling systems (n=11) are presented. It was found that compared to other farms in the study (n=88), suckling systems in calf rearing had no clear adverse effects on mastitis incidence and milk quality. In 2006 average clinical mastitis incidence on suckling farms was...

A continuous grazing experiment with three measurement periods, 3 weeks each, was conducted with 16 Norwegian Red dairy cows in mid lactation to compare milk quality when grazing red clover-grass (R) or botanical diverse pasture (D). The cows were offered either R or D from the start of grazing season in mid May until beginning of September 2008. Milk yield was measured and milk samples were collected in the last week in each period (end of June, beginning of August and end of August). Pasture type had no effect on milk yield and milk content of fat or protein. Cows grazing R had higher proportion of the fatty acids C18:0 (22.41 vs. 9.96, P<0.05) and C18:1t11 (0.58 vs. 0.44 g/100g FAME,...

The objective of this work was to characterize milk production from the Central Mineira and Oeste Mesoregions regions in Minas Gerais State, Brazil, according to quality parameters such as somatic cell count, total bacteria count, and composition for specific production ranges. Average results for milk fat, protein, total and nonfat solids were compliant with Brazilian legal requirements (IN-62/2011) in all the production ranges selected. Average somatic cell counts (SCC) complied with the legal requirements of 600,000 cells/mL, except for the range with a daily production above 1,000 liters. However, average maximum values of 400,000 cells/mL are recommended for good milk quality. Total...

ABSTRACT: This paper aimed to analyze the evolution of the quality of raw milk produced by producers in the Zona da Mata region, in the state of Minas Gerais, between 2012 and 2018. For this purpose, we used the linear mixed-effects model to analyze the monthly evolution of the results of milk composition indicators (fat, protein, and defatted dry extract - DDE), somatic cell count - SCC, and total bacterial count - TBC, from the official monthly registry of 94 milk producers, suppliers of a region’s dairy. Results indicate a continuous reduction in the milk composition indicators between 2014 and 2018. For the SCC and TBC indicators, we identified only one-off reductions. The supply of a larger volume of milk was associated with increased TBC. Seasonality...

A main reason for the rapid increase in organic food consumption is the perception that organic foods have a superior nutritional composition and/or convey health benefits. However, there is currently limited scientific knowledge about the effect of production systems on food composition. The study reported here compared fatty acid profiles and levels of fat soluble antioxidants in milk from organic and conventional production systems in 5 geographic regions in Europe (Wales, England, Denmark, Sweden and Italy). Levels of nutritionally desirable mono- and poly-unsaturated fatty acids (vaccenic acid, CLA, α-linolenic acid) and/or a range of fat soluble antioxidants were found to be significantly higher in organic milk.

This study investigated the effect of, and interactions between, US Brown Swiss (BS) genetics and season on milk yield, basic composition and fatty acid profiles, from cows on low-input farms in Switzerland. Milk samples (n = 1,976) were collected from 1,220 crossbreed cows with differing proportions of BS, Braunvieh and Original Braunvieh genetics on 40 farms during winter-housing and summer-grazing. Cows with more BS genetics produced more milk in winter but not in summer, possibly because of underfeeding potentially high-yielding cows on low-input pasture-based diets. Cows with more Original Braunvieh genetics produced milk with more (i) nutritionally desirable eicosapentaenoic and docosapentaenoic acids, throughout the year, and (ii) vaccenic and...
