Milk as one of the most important nutritional sources has also become one of the major food allergens. What are the reasons for differences of milk from organic and conventional origin? The ongoing research shows a high impact of management practices on milk quality and composition. Which quality characteristic marks consis-tently organic milk quality and how could quality be optimized? The planned transdis-ciplinary and participative project combines analytical and holistic methods to assess organic milk quality and to evaluate the impact on human health.

Effect of forage legumes on milk quality – a review 21

The review confirms that feeding legume silage leads to higher DMI and milk production than grass. White clover is superior to red clover and red clover to lucerne in milk yield relative to intake. Milk fat content is lower on red clover than on grass diets and red clover yield milk with lower protein content than white clover and lucerne. Red clover yields milk with higher proportion of the fatty acids C18:2n-6 and C18:3n-3 than grass and higher content og equol than grass and white clover.

This report was presented at the UK Organic Research 2002 Conference. Changes in milk quality were evaluated with spring-calving dairy cows and heifers fed organic diets and different levels of concentrates during early lactation. The diets were based on ad libitum forage and either 2 kg of concentrates/day (Diet 1) or concentrates fed according to milk yield up to a maximum of 7 kg/day (Diet 2). Mastitis incidence and milk quality in organic dairy farms which use suckling systems in calf rearing 21

In order to identify important factors influencing animal health and general disease resistance, detailed qualitative and quantitative farm data were collected from 99 organic dairy farms in the Netherlands. Mastitis incidence and milk quality were focal points of the data collection. In this paper the results of a group of farms which rear dairy calves in suckling systems (n=11) are presented. A continuous grazing experiment with three measurement periods, 3 weeks each, was conducted with 16 Norwegian Red dairy cows in mid lactation to compare milk quality when grazing red clover-grass (R) or botanical diverse pasture (D). The cows were offered either R or D from the start of grazing season in mid May until beginning of September 2008. Milk yield was measured and milk samples were collected in the last week in each period (end of June, beginning of August and end of August). Average results for milk fat, protein, total and nonfat solids were compliant with Brazilian legal requirements (IN-62/2011) in all the production ranges selected. Chilled raw milk quality: a case study in Zona da Mata region, Minas Gerais State, Brazil 65

ABSTRACT: This paper aimed to analyze the evolution of the quality of raw milk produced by producers in the Zona da Mata region, in the state of Minas Gerais, between 2012 and 2018. For this purpose, we used the linear mixed-effects model to analyze the monthly evolution of the results of milk composition indicators (fat, protein, and defatted dry extract - DDE), somatic cell count - SCC, and total bacterial count - TBC, from the official monthly registry of 94 milk producers, suppliers of a region’s dairy. Effect of barley preservation method on milk production and milk quality in organic farming 21

The effect of dried vs. ensiled barley (cv. Arve) on feed intake, milk yield and quality in organic production was tested in two experiments in Northern Norway. In the first experiment, two groups were given either 40% or 10% concentrated feed (barley) per cow and year, calculated on energy basis. Grass silage was fed ad. lib. Both drying and ensiling preserved barley properly and resulted in approximately the same feed intake and milk production. Cows in the group with 10% barley had lower milk protein concentration than cows in the group with 40% barley. A main reason for the rapid increase in organic food consumption is the perception that organic foods have a superior nutritional composition and/or convey health benefits. However, there is currently limited scientific knowledge about the effect of production systems on food composition. The study reported here compared fatty acid profiles and levels of fat soluble antioxidants in milk from organic and conventional production systems in 5 geographic regions in Europe (Wales, England, Denmark, Sweden and Italy). Levels of nutritionally desirable mono- and poly-unsaturated fatty acids (vaccenic acid, CLA, α-linolenic acid) and/or a range of fat soluble antioxidants were found to be significantly higher in organic milk.

This study investigated the effect of, and interactions between, US Brown Swiss (BS) genetics and season on milk yield, basic composition and fatty acid profiles, from cows on low-input farms in Switzerland. Milk samples (n = 1,976) were collected from 1,220 crossbreed cows with differing proportions of BS, Braunvieh and Original Braunvieh genetics on 40 farms during winter-housing and summer-grazing. Cows with more BS genetics produced more milk in winter but not in summer, possibly because of underfeeding potentially high-yielding cows on low-input pasture-based diets.
