Effects of perceived attributes of soyfoods on the consumption pattern for six different soyfood products were evaluated. Perceived attributes included convenience, health benefits, and taste. Six soyfood products were tofu, vegetable burgers, soy milk, soy supplements, meat substitutes, and soy cheese. This study used conceptual model that highlights the role of perceived attributes in a demand model by combining Lancaster's characteristics model with Fishbein's multi-attribute model. Eight perceived attributes of agro-biotechnology were identified to be associated with consumers' attitude toward existing practices of GM food labeling. The perceived negative attributes, particularly health risk from GM food, played a dominant role in shaping the overall attitude toward GM labeling. Female and older respondents were more likely to be concerned about the existing GM labeling practices than male and younger respondents. Consumers with college education were less likely to be concerned about existing GM labeling practices than those without college degree. |

We propose a structural model of antecedent factors that affect the frequency of soy consumption. This model, suggests that soy-general knowledge influences perceptions about nutrition concern, health benefits of soy, soy related personal beliefs and personal attitudes toward soy. Health benefits of soy, in turn, impacts soy-related personal beliefs and personal attitudes toward soy. Additionally, soy-related personal beliefs influence personal attitudes toward soy. Finally, both nutrition concern and personal attitudes toward soy drive the frequency of soy consumption. Discrepancies in the attitude between US and UK consumers toward application of biotechnology in crop production and medicine were examined using data from mail and online surveys. Results showed that more than 31% (46%) of US (UK) respondents were opposed to biotech foods while only 16% (18%) opposed biotech medicine, respectively. Perceived risks and benefits of agro-biotechnology and medical biotechnology were significant in determining overall attitude toward application of biotechnology in agriculture and medicine i.e., perceived risks (benefits) caused consumers to oppose (support) application of biotechnology in food production and medicine. |

A nationwide on-line survey of 3,000 households was conducted. Households were randomly selected from the database of 400,000 households who make up Ipsos-NPD marketing research panel. The purpose of this study is to examine how a household meal planners perception of the importance of various dietary components in selecting food items is influenced by the persons or the households socio-demographic factors and health attitude. This study examines the role of consumers' perceived risks and benefits of agro-biotechnology in shaping purchase patterns for organic food among U.S. consumers. Perceived risks and benefits of biotechnology, general purchase behavior, knowledge of GM technology, and socio-demographic variables are examined in relation to their impact on organic food purchases. Our study examined the role of soy health benefits in consumers' soy consumption decision. Given the large number of respondents who reported no consumption of soy products per month, it was important to model the decision of whether or not to participate in soy market separately from the consumption intensity decision. Estimation results demonstrate that knowledge of health benefits affects both the likelihood of participation and consumption intensity. That is, consumers with higher soy health knowledge are more likely to enter soy food market and consume soy products more often when compared to those with less soy knowledge. Yet, perceived taste and convenience had considerably greater impact on soy behavior when compared to soy health knowledge. |

The study evaluated the influence of the Food and Drug Administration (FDA)'s regulatory action regarding the health benefits of soy-based foods on soy consumption. The results indicated that frequent users of soyfood products who were exposed to the FDA's decision would be more inclined to increase their consumption of soy-based foods as compared to those who were not exposed to such information.
