This present paper aims to present a historical evolution of the tourism industry, focusing on the reflexes of the industrial management paradigms as well as those of some technological innovations on it, show its features emphasizing its differences in relation to other industry forms and reflect on its trends in Brazil, considering the participation of the rural segment. Few researches in Brazil have undertaken the issue of quantification and qualification of public expenditure in S&T and Innovation devoted to agriculture and livestock. This paper presents an innovative evaluation and provides inedited information for public and private decision makers. Expenditure undertook by 48 Brazilian research organizations was evaluated. This set of organizations comprised the universe of federal and state institutes and agencies, as well as some other non-profit organizations, which gave support to research in agriculture and livestock. Detailed investigations about consumer food practices provide interesting information concerning the different manners consumers think about their own behaviors. Considering that consumers have objectives and different anxieties in terms of food that may result in distinct food models, this paper proposes a low-fat consumer typology. Food consumers are, in general, concerned with acquiring healthy food which does not pose risks to their health. These preferences are directly related to the way the economic agents organize themselves inside the food sector.
