We analysed four batches of clam, Venus verrucosa L., during the cold season 1957-1958: one batch was collected in mid-January on the deposits exploited by the fishermen from Erquy, and the three others, of unknown origin, were bought on a Parisian market at the end of September, November and February. All these molluscs were alive at the time of analysis, but deprived from the normal exchanges with surrounding water for a few days. They had lived on their stocks without getting totally rid of the residual metabolized products and had probably lost some of their intervalval water. Although this state is fairly different from that of freshly caught shellfishes appreciated by clam lovers, it is the state under which most clams are eaten. |
