Die positive Korrelation zwischen einem hohen Kalziumgehalt in den Früchten und guter Qualität wird von der Literatur zusammengefasst. Die traditionellen Kalziumspritzungen sind nicht ideal (Synthetische Ursprung, Schalenberostung, Sonnebrand). Wir forschen nach Möglichkeiten für Obstbauern weniger abhängig zu sein von Kalziumchlorid und doch qualitatives Obst zu bekommen. Bei unserer Beurteilung der Kulturmaßnahmen in Bio Obstbau ist der Kalziumgehalt der Früchte eines der Kriterien. Positiv in diesem Rahmen haben sich gezeigt: ein lebendiger Boden, Begrünung, besonders Klee, Begrenzung des Wuchsniveaus, gute Qualität Rosettenblätter, Früchte an der Basis des Triebes und Früchte mit viele Samen. |

We found clear correlations between management measures, tree characteristics and fruit characteristics. This means that growers can regulate apple quality during the growing season. On the basis of the two apple experiments, we can distinguish respective sets of growth and differentiation parameters and evaluate them in the light of conventional fruit cultivation science. Our results have little new value for fruit growing in practice, however. In real life it is hard to distinguish between the two life processes, growth and differentiation. We cannot expect one measured parameter to represent only one aspect of vital quality. But for most parameters we can recognise emphases on one or more aspects of the vital quality concept. We made this prelimary classification both by thinking about the concept and by looking at the experimental results. Also the conventional parameters are interpreted as a result of these processes in a more holistic way than usual. The sequential leaves of the shoot show a 'biography' of the growing season. The shape of the leaves shows the conditions under which the leaves are formed. This method was developed to help answer the questions of fruit growers and researchers. Fruit cultivation researchers need to record vegetative development during the course of the growing season. The quality of the shoots with the leaves determines the 'production capacity' of the tree and the quality of the fruit and the buds for the next year. |

Unter biodynamischen Obstbauern wurde schon viel über Fruchtqualität diskutiert. Neben Qualitätsmerkmalen wie äussere Qualität und Geschmack, wird vermutet, dass auch die innere Qualität für die Kaufentscheidung des Konsumenten eine wichtige Rolle spielt. Zur Beantwortung der Frage, was biologisch-dynamische Qualität bei Äpfeln bedeutet, wurde von der internationalen Fachgruppe für biologisch-dynamischen Obstbau ein Forschungsprojekt gestartet. Dabei werden neben Beobachtungen an den Bäumen auch die Früchte mittels herkömmlicher Analysen beurteilt, als auch über Kristallisationsbilder und die Bildekräfteforschung (Verkostung). In het verleden is al aangetoond dat de biologische productiemethode maatschappelijke voordelen heeft op terreinen als milieu, biodiversiteit, bodemkwaliteit, dierenwelzijn en pesticidenresidu. Indirect dragen deze kwaliteiten bij aan de gezondheid van de mens. Nu beginnen ook steeds meer onderzoeksresultaten beschikbaar te komen waaruit blijkt dat de biologische productiemethode ook leidt tot voedsel dat meer gezonde stoffen bevat. Our objectives in soil management research combine a number of issues: soil fertility, production, fruit quality, growth regulation, prevention of night frost damage, leaf decomposition (scab) and practical feasibility. This will result in different regimes of weed control, fertilisation, foliar feeding and watering for each plot. The evaluation criteria remain particularly difficult to assess. Das Projekt bietet ein schönes Beispiel, bei dem sich die Betriebsmerkmale so deutlich in den Baum- und Fruchtmerkmalen widerspiegeln. Die Bildschaffende Methoden waren eine gute Hilfe um die Zusammenhang zwischen Baum, Frucht und Kulturmaßnahmen zum Ausdruck zu bringen. Die Arbeit an den Versuchsfragen hat gezeigt, dass Bäume eine gewisse Vitalität brauchen, um eine gute Fruchtqualität zu erzielen. Dieses ist möglich durch die Anwendung allgemein bekannter Schnitt- und Ausdünnungsmaßnahmen , die auf einen vitalen Baum mit beherrschter Wuchskraft abzielen.
