Influence of the reactor shape on the kinetics of ethanol production in laboratory-scale batch fermentation tests carried out in unstirred vessels BABT

The influence of the shape of laboratory-scale unstirred reactors on the kinetics of ethanol production in batch ethanol fermentation was studied. Two reactors were used: a 1-L glass measuring cylinder and a 2-L Erlenmeyer flask. The volume of inoculated medium in each reactor was 1,000 mL. The above influence was affected by the ratio between the initial yeast cells concentration (X0: ~ 7 g/L, ~ 14 g/L, and ~ 21 g/L, dry matter) and the initial glucose concentration (S0: ~ 100 g/L, ~ 150 g/L and ~ 200 g/L). When X0/S0 increased from 0.038 to 0.219 the influence of the reactor shape decreased, and was not observed when X0/S0 = 0.22 to 0.24. Measurement of the gassing power of bakers' yeast: correlation between the dough volume and the incubation time BABT

An empirical equation is proposed to correlate the dough volume and the incubation time during cylinder tests using thin flour dough carried out to evaluate the gassing power of compressed yeast. The above equation permitted to correlate the gassing power of the yeast and the proof time, as well as to calculate the specific rate of the dough volume variation at any time. It provided more information regarding the fermentation power of the yeast than the sole value of its gas-producing power. A physical interpretation of the proposed equation is presented.

Calculation of fermentation parameters from the results of a fed-batch test taking account of the volume of biomass in the fermenting medium BABT

The volume of biomass in the fermenting medium may significantly affect the values of fermentation parameters calculated from the measured concentrations of the substrates and/or products. The corrections proposed in this paper should be evaluated and, depending on their magnitude, considered in order to obtain more representative results. A numerical example is presented.

Influence of the accumulation of phosphate and magnesium ions in the yeast cells on the ethanol productivity in batch ethanol fermentation BABT

The accumulation of phosphate and magnesium in the yeast cells is not necessary to assure the ethanol productivity of batch ethanol fermentations. To avoid the decrease of the ethanol productivity it was sufficient to use a fermentation medium containing calculated concentrations of phosphorus and magnesium sources in order to maintain practically constant the phosphorus and magnesium initial contents of the biomass during the fermentation.

Batch ethanol fermentation: the correlation between the fermentation efficiency and the biomass initial concentration depends on what is considered as produced ethanol BJM

Although numerous studies have examined many of the factors that affect the efficiency of batch ethanol fermentation, little attention has been paid to the influence of the biomass concentration on this efficiency. This paper shows that the influence of the biomass initial concentration on the fermentation efficiency depends on what is considered "produced ethanol". If only the ethanol present in the medium aqueous phase at fermentation completion is considered, the fermentation efficiency linearly decreases when the biomass initial concentration increases. If, however, the intracellular ethanol is also considered as produced ethanol, the fermentation efficiency is not affected by the biomass concentration.
