ABSTRACT Knowledge regarding the static pressure drop in granular layers is of fundamental importance in the development of efficient drying and aeration projects of agricultural products. Thus, the objective of this study was to evaluate the effects of impurity contents on the static pressure drop in different bed depth of castor bean grains, as well as modify the mathematical models per the obtained experimental data and select the model that best represents this phenomenon. First, impurities in castor bean grains of the Guarani variety were eliminated and 6% of the moisture content (dry basis) was retained. ABSTRACT The knowledge of physical properties of grains is important for the optimization of postharvest operations. Thus, this study aimed to evaluate the effect of moisture content over physical properties of different cultivars of soybean. Soybean of cultivars NS7901RR, TMG1180RR, P98Y70 and TMG132RR were used, with initial moisture content of 0.32, 0.27, 0.25 and 0.21 dry basis (d.b.), respectively. In order to dry the samples, an oven of forced air circulation was used. The aim of this work was to study the infrared drying process of carrot slices and to determine coefficients related to the heat and mass transfer of the process. Fresh carrots were used, dried until constant weight in a dryer with infrared heating source. Different models were utilized to fit the experimental data of constant and falling drying rate periods. It was verified that the coefficients of heat and mass transfer, during the constant drying rate, significantly increased with temperature on rise. One portion of the grains was used to obtain desorption isotherms, while the other was subjected to drying until the moisture content of 5.26% (d.b.), so that it was subjected to the adsorption. For the induction of damage, a Stein Breakage Tester was used. ABSTRACT Knowledge of the water sorption phenomenon in Brazil nut seeds will allow proper handling of this product, especially with regard to adequate conditions for safe storage. Thus, the present study aimed to determine the sorption isotherms (desorption and adsorption) of Brazil nuts, fitting different mathematical models to the experimental data, as well as to examine the hysteresis effect. O presente trabalho foi realizado com o objetivo de se avaliar o efeito da variação do teor de água nas propriedades físicas dos grãos de trigo e ajustar diferentes modelos matemáticos aos valores experimentais, em função do teor de água do produto; além disso, analisaram-se duas metodologias de determinação da massa específica aparente e da massa específica real. Com base nos resultados obtidos, concluiu-se que a redução do teor de água influencia as propriedades físicas dos grãos de trigo, provocando a diminuição da porosidade, o aumento da massa específica aparente e da massa específica real.
