Two stress gradients were applied in this study, a short acute desiccation stress and a long-term density stress. These stress gradients were used to assess the usefulness of various techniques for quality assessment: namely, a standard salinity stress test, condition index, recessing speed of the scallop, adenylic energetic charge (AEC). and percentage carbohydrate content of the striated muscle.
