Heterogeneity in Consumers' Perceptions and Demand for Local (Organic) Food Products Organic Eprints

“Local” is becoming increasingly important in consumers’ food purchase decisions. Perceived benefits of local foods are rather similar to those of organic products, including aspects of taste, food safety, animal welfare and reduced environmental impacts. Yet, only limited knowledge is available regarding different consumers’ conceptualization of local food. Our study addresses this research gap by investigating organic versus non-organic consumers’ perceptions of local foods and these perceptions’ association with purchasing behaviour. How vulnerable is organic consumption to information? Organic Eprints

In order to sustain consumers’ support and trust in organics in the future, it is essential to understand what motivates consumers to pay extra for organic products. Only then is it possible to design effective information campaigns and to supply products which successfully meet consumers’ expectations. The purpose of this study is to elicit the relative importance that consumers place on various organic attributes and to estimate the monetary significance of these. As an integrated part of the study, consumers’ susceptibility to new information and the effect of information on the willingness to pay (WTP) for different attributes are investigated. These objectives are realised through Choice Experiments (CE).

Organic consumption in three European countries Organic Eprints

The present paper describes the consumption of organic foods in Denmark, Italy, and the United Kingdom. The study is based on an extensive set of household purchase panel data for each country. The data indicate that the consumption level in Denmark is substantially higher than in both Italy and in the United Kingdom. Furthermore differences between various socio-demographic groups are investigated. Some of these differences can be identified in all three countries.

Different perception on how to group organic and conventional products Organic Eprints

This study investigates the relationship between how consumers prefer to group different varieties of organic and conventional products and their preferences for organic food. Using a web-based questionnaire, 849 Danish respondents were asked to group the content of a virtual basket of organic and non-organic fruit and vegetables into two smaller baskets. Almost half of the consumers placed the products according to whether they were organic or not. These consumers were found to have a significantly higher confidence in the benefits of organic products and stated a significantly higher organic consumption than consumers who placed fruit in one basket and vegetables in the other. Analysen af nye forbrugsdata fra GfK ConsumerScan indikerer, at husholdninger med et højt økologiforbrug spiser relativt meget frugt og grønt, men lidt kød. Selvom der ofte betales en merpris for økologiske varianter, viser undersøgelsen samtidig, at den økologiske forbruger ikke bruger flere penge på mad end andre. For alle forbrugergrupper står supermarkederne for det største salg af økologiske varer, men derudover adskiller den økologiske forbruger sig ved at købe flere varer over internettet og i specialbutikker. Are Organic Consumers Healthier than Others? Organic Eprints

Recent research results indicate that organic consumers have a healthier diet than other consumers. This suggests that there might be a positive relationship between organic consumption and a healthy lifestyle. One aim of an ongoing research project is to analyse whether consumers with a high organic consumption have a higher interest in nutrition and a healthy living than other consumers. In order to test whether such a causal relationship exists, purchase data from Danish households are combined with information on these households’ perception of organic food and their health concerns.

Preferences for food safety and animal welfare – a choice experiment study comparing organic and conventional consumers Organic Eprints

Food quality attributes such as food safety and animal welfare are increasingly influencing consumers’ choices of food products. These attributes are not readily traded in the markets. Hence, stated pref-erence methods have proven to be valuable tools for eliciting preferences for such non-traded attributes. A discrete choice experiment is employed, and the re-sults indicate that consumers in general are willing to pay a premium for campylobacter-free chicken and for improved animal welfare; and they are willing to pay an additional premium for a product containing both attributes. Health and cost implications of choosing an organic diet - empirical insights from Danish household panel data Organic Eprints

Health and cost considerations have repeatedly been found to constitute the main arguments for respectively buying and not buying organic food. The present paper contributes to this line of research by studying not only the dietary but also the budgetary consequences of choosing the organic varieties. Using purchase data for a large sample of Danish households, we found that households with higher organic consumption have healthier diets as measured in terms of more vegetables and fruits but less fat/confectionary and meat. Furthermore, for the vast majority of households it was found that buying organic foods did not increase food expenditures - possibly due to differences in diet composition. The complexity of values related to organic food systems is normally difficult to ascertain, understand and act upon for both producers and consumers, as well as for other agents. In this paper we have suggested MCA as a method that may help in coping with this complexity. Is organic food a quality attribute or a product category? Organic Eprints

The present study investigates the relationships between consumer categorization of organic versus non-organic food products, consumers' underlying perceptions of organic food, and their propensity to consume organic foods. A choice experiment is used to test these relations in a case study involving consumer preferences for attributes relating to milk. First and foremost, we find a strong link between how consumers categorize food and their organic profile. Second, we find that knowledge concerning a claim stating that milk from grazing cows is healthier, serves as a way to categorize consumers according to their organic profile.
