DEMAND FOR NUTRIENTS: THE HOUSEHOLD PRODUCTION APPROACH AgEcon
Chung, Rebecca H.; Lee, Jonq-Ying; Moss, Charles B.; Brown, Mark G..
The household production approach is used to characterize the household's preference toward nutrients in food consumption. Elasticities of substitution and Hicksian price elasticities are estimated, price- and expenditure-nutrient elasticities are calculated. Results show that protein is the most expensive nutrient, and that nutrients played an important role in determining households' food consumption.

A Study of the Demand for Medical Services in Taiwan AgEcon
Chung, Rebecca H.; Lee, Jonq-Ying; Brown, Mark G..
This paper presents a version of the household production theory to explain the demand for health. In this study we have explored the factors that influence the demand for medical services and medical expenditures in Taiwan. A negative binomial model was used to study the demand for medical services. We found that the demand for medical services and medical expenditures are related to household composition, household income, family size, occupation of the household head, and living environments. In addition, we found higher usage of medical services on average for those households with medical insurances other than the national health insurance.

INCORPORATING NUTRIENTS IN FOOD DEMAND ANALYSIS AgEcon
Lee, Jonq-Ying; Brown, Mark G.; Chung, Rebecca H.; Chiang, Frank F..
Two levels version of the Rotterdam demand systems were developed using utility theory with additional nutrient variables. Income, price, and nutrient demand elasticities were estimated. Results show that some nutrients are important factors in determining the demand for food items.

An Engel Curve Analysis of Household Expenditure in Taiwan: 1996-98 AgEcon
Chung, Rebecca H.; Lee, Jonq-Ying; Brown, Mark G..
Seven systems of Engel curves for expenditures on ten commodity groups were estimated using Taiwanese household expenditure data for the period from 1996 through 1998. Results show that the estimated expenditure elasticities are insensitive to the choice of functional forms.

Incorporating Nutrients in Food Demand Analysis AgEcon
Chung, Rebecca H.; Lee, Jonq-Ying; Brown, Mark G..
This study explored the roles of nutrients in the demand for food through utility theory. The findings support the argument that nutrients play important roles in the demand for food. The 1987-88 Nationwide Food Consumption Survey data were used. The impacts of six nutrients (carbohydrates, fats, vitamins, minerals, digestible fibers, and proteins) on the demand for five food groups (dairy, meats, vegetables and fruits, grain products, and other foods) were studied using the Rotterdam demand system.

Demand for Nutrients: The Household Production Approach AgEcon
Chung, Rebecca H.; Lee, Jonq-Ying; Brown, Mark G..
This study uses the household production theory to study the demand for nutrients, i.e., households purchase a combination of food items from the market and produce the needed nutrients from these food items. By following the traditional household production approach, shadow prices for nutrients in food consumption are calculated. The cost function that generates the shadow prices appears plausible in terms of its elasticities of substitution and factor demand. After obtaining the calculated shadow prices of nutrients, the nutrient demand functions are estimated. Results show that the own-price elasticity of demand for nutrient is inelastic, whereas the expenditure elasticities indicate that nutrients are normal goods. Crossprice elasticities show that...

The Impacts of Retail Promotions on the Demand for Orange Juice: A Study of a Retail Chain AgEcon
Lee, Jonq-Ying; Brown, Mark G.; Knight, Erika P.; Chung, Rebecca H..
This study examined the impacts of retail promotions on the demand for five brands of orange juices for a retail chain (referred to as Retailer X) and its competitors using the Rotterdam model. Results show that the combination of feature ads and displays had the largest impacts on retail revenue among the four promotional tactics considered, while temporary price reductions had no additional advertising impacts other than price impacts on retail revenues. Results also show that when Retailer X promotes an OJ brand using any of the tactics studied, a larger portion of the increased demand for the promoted brand came from reduced demand for other brands of OJ in the same store and a smaller portion came from the decreased demand in competing stores in the...
