Sundhed og økologi - Sundhedsbegreber og opfattelser af sammenhængen mellem økologi og sunde madvaner blandt økologiske forbrugere (Deliverable 2.1 OrgHealth) Organic Eprints

I dette notat rapporteres resultater fra seks fokusgruppeinterviews om forbrug af økologiske fødevarer. Fokusgrupperne blev gennemført i september 2016, og i alt 39 personer, der alle køber økologi, deltog. Formålet med interviewene var blandt andet at skabe viden om økologiske forbrugeres opfattelser af sundhed, og om eventuelle sammenhænge mellem økologisk forbrug og sundhedsfremme. Denne viden skal bruges i andre dele af OrgHealth-forskningsprojektet, der gennemføres på IFRO i 2016-1017, og beskrives derfor i dette interne notat.

There is increasing demand for organic food products throughout the Western world. Health concerns have frequently been found to be the main motivation of consumers purchasing organic products, but the literature on consumer preferences and behavior is less clear about what ‘health’ means to consumers of these products, and because of this it remains unclear what exactly drives consumers to choose organic products. This article investigates health from the perspective of consumers, and analyzes negotiations of, and justifications behind, their consumption preferences. Heterogeneity in Consumers' Perceptions and Demand for Local (Organic) Food Products Organic Eprints

“Local” is becoming increasingly important in consumers’ food purchase decisions. Perceived benefits of local foods are rather similar to those of organic products, including aspects of taste, food safety, animal welfare and reduced environmental impacts. Yet, only limited knowledge is available regarding different consumers’ conceptualization of local food. Our study addresses this research gap by investigating organic versus non-organic consumers’ perceptions of local foods and these perceptions’ association with purchasing behaviour. Why do consumers of organic food have more nutritionally balanced diets? – a Danish study Organic Eprints

Policies encouraging consumers to follow nutritional dietary guidelines are widely used by governments as a strategy to improve public health. Organic consumers seem to adhere to nutritional guidelines more than others, but it remains obscure why, exactly, there is a correlation between eating healthily and organic consumption. Based on six focus groups, 1519 survey respondents, and purchase data from 2449 households (all data collected in Denmark), we found that not only dedicated but also occasional organic consumers eat more fruit and vegetables and less meat than consumers with no or little organic consumption. Samspil mellem økologisk forbrug og sundhed Organic Eprints

I denne bog har vi samlet resultaterne fra tre forskningsprojekter, som studerer økologiske fødevarer ud fra en forbrugersynsvinkel. Mange andre projekter undersøger ved hjælp af naturvidenskabelige metoder den økologiske produktion og dens direkte effekter på natur, miljø og dyrevelfærd. Vi har derimod i de tre projekter anvendt samfundsvidenskabelige metoder til at undersøge motiver og ønsker hos de økologiske forbrugere samt de heraf afledte effekter på for eksempel folkesundhed og lokale arbejdspladser. Projekterne (OrgHealth, LOCO og SOMDwIT) er en del af Organic RDD 2.2-programmet, som koordineres af ICROFS (Internationalt Center for Forskning i Økologisk Jordbrug og Fødevaresystemer).
