Dårlig kornhåndtering kan føre til dannelse af mykotoksiner under tørring og lagring. De vigtigste toksiner på dansk korn er ochratoksin A (OTA), der dannes af Penicillium verrucosum, og trichothecener og zearalenon, der dannes af Fusarium arter. Fusarium toksiner dannes mest i marken mens OTA dannes på lager. I indlægget vil jeg koncentrere mig om OTA.

Mycotoxins are toxic metabolites formed by specific fungi that grow on living plants and their residues under favourable conditions. They are undesirable ingredients of food and feed. Risks are also posed by the spores and toxin-contaminated raised dusts. Contamination by mycotoxins is a severe problem in food security. More than 300 species of fungi with the ability to form mycotoxins have been identified. More than 400 metabolites are assigned to the group of mycotoxins. Fortunately, only about 20 mycotoxins produced by five genera of fungi (Fusarium, Penicillium, Claviceps, Alternaria and Aspergillus) are found regularly or periodically in food and feed at levels which might have an impact on human and animal health (Gareis, 1999a). Et alsidigt sædskifte og/eller tilførsel af organisk stof til jorden giver en god jordkvalitet (her defineret som en gunstig jordstruktur). Ensidige driftsformer kan i sig selv give anledning til en dårlig jordkvalitet. Jordpakning via trafik på jorden kan eliminere de gode effekter af et godt sædskifte og tilførsel af organisk stof. Trafik på jorden og i endnu højere grad intensiv jordbearbejdning øger risikoen for, at jordens lermineraler dispergeres til vandfasen. Dette kan give tilslemning og skorpedannelse på jorden og indebærer endvidere en risiko for nedvaskning af de vigtige lermineraler fra dyrkningslaget. New experiments have shown that grain moisture is more important than temperature for the formation of the mycotoxin Ochratoxin A (OTA). OTA is one of the most important mycotoxins on Danish grain. Organic matter and soil tilth in arable farming: Management makes a difference within 5-6 years Organic Eprints

Management-induced depletion in soil organic carbon (SOC) may create critical tilth conditions for arable farming. We investigated the short-term effect of crop rotation and addition of animal manure on SOC fractions, the dispersibility of soil clay, the length of fungal hyphae, wet aggregate stability, tensile strength of dry aggregates, and the pore size distribution, gas diffusivity and permeability of undisturbed bulk soil. SOC fractions were measured in whole-soil samples and in 1-2 mm air-dried aggregates. There is an urgent need to analyse the term soil quality in more detail. Most frequently, it is used to describe soil attributes. The term should be used for this purpose only when related to the sustainability concerns (i) soil productivity, (ii) impact on the environment, and (iii) effect on human health. The soil quality concept has been adopted mainly as a technical framework for grading soil and evaluating management effects. We advocate more focus on soil quality as a cognitive concept associated with sustainability. Grading of soils by indicators is difficult across soil types, climates and cropping systems. En tung og knoldet jord er vanskelig at bearbejde. Det kan medføre et dårligt såbed og dårlig fremspiring. Og da en sådan jord også har få porer begrænses transporten af vand og ilt til planternes rødder. Herved forringes leveforholdene smådyr og mikroorganismer og der bliver en dårligere forsyning med næringsstoffer til planterne. For at få et godt såbed skal jorden have en god struktur – den skal gerne danne krummer (aggregater). De bygges op af jordens grunddele eller 'primærpartikler' ler og sand. Til at binde primærpartiklerne sammen kræves bindemidler. I danske jorde er biologiske bindemidler de vigtigste. Der findes to slags. Comparing the Effect of Continuous Drying and Drum Drying on Fungal Contamination of Bread Grain Organic Eprints

This Research Note concludes that both drum drying and ordinary continuous drying efficiently dry the grain but that drum drying is much more efficient in reducing the number of surface dwelling fungal propagules on the grain, both yeasts and filamentous fungi. This includes the toxigenic species, Fusarium culmorum, as well as other fusaria. It also includes the dark filamentous fungi, Alternaria infectoria and Cladosporium spp. Both drying techniques seemed to stimulate growth of Eurotium spp., probably due to heat activation of ascospore germination.

Penicillium verrucosum occurrence and Ochratoxin A contents in organically cultivated grain with special reference to ancient wheat types and drying practice Organic Eprints

This study addresses the relationship between the ochratoxigenic strains of Penicillium verrucosum and ochratoxin A (OTA) contents in organically cultivated grain. It included 37 combined, non-dried grain samples from farmers with no drying facilities as well as 19 non-dried and 22 dried samples from six farms with on-farm drying facilities (Case studies 1-6). The study focused on the ancient wheat type spelt but also included samples of wheat, rye, barley, oats, triticale, emmer, and einkorn. All 78 samples were analysed for moisture content (MC) and occurrence of P. verrucosum. Er der krummer i din jord – eller er det bare knolde Organic Eprints

Jordens krummer er vigtige for vækst. Både vækst af afgrøden og de svampe og bakterier, der laver bindemidler til nye krummer. Vi har undersøgt, hvordan praktisk økologisk og konventionel drift påvirker dette samspil. Et varieret sædskifte med meget græs og husdyrgødning gav gode stabile krummer med højt indhold af biologiske bindemidler. Et ensidigt kornsædskifte med kunstgødning gav i stedet stabile knolde, hvor bindemidlet var ler. Sådan nogle knolde kan give et dårligt såbed, fordi våd jord bliver blød som mudder og tør jord hård som beton.

Mycotoxin producing fungi are natural contaminants of cereals and their toxins are harmful to humans and animals. Ochratoxin A (OTA) is among the most important. Heat treatment by drum drying does not eliminate already formed mycotoxins but the technique can reduce the number of viable fungi on the grain. The aim of this study was to establish a drying regime that kills fungal propagules on rye without reducing its quality for baking. Når jordbundens mikroorganismer og smådyr har det godt, er jorden som regel også god at dyrke planter i. Og jordbundens levende organismer trives, hvis de får rigeligt med næring og fred og ro. Det første kan økologiske jorde levere, men på grund af mekanisk ukrudtsbehandling ofte ikke det sidste. En mindre del af de konventionelt dyrkede marker giver jordbundsorganismer lige så gode betingelser, så økologisk dyrkning er ikke en absolut betingelse for et godt jordliv.

En bekvem jord: hvad betyder det og hvordan opnås det Organic Eprints

Ensidige sædskifter uden brug af husdyrgødning har vist sig at udpine jorden så meget, at der (bl.a.) bliver problemer med jordens evne til at smuldre under bearbejdning. Økologiske sædskifter vil oftest være så alsidige, at man dér vil opretholde en passende pulje af nydannet, ’aktivt’ organisk stof. Tildeling af husdyrgødning trækker i samme retning. Mekanisk påvirkning af jorden kan eliminere eller i hvert fald reducere de gode effekter af sædskiftet. Der er derfor al mulig grund til at begrænse skadelig pakning af overjorden mest muligt (brug brede lavtryksdæk) samt – om muligt – at undgå brugen af fræser og rotorharver.
