The consumer has the final word in food choice, which is determined by his perceived quality. Within a project coordinated by the Faculty of Veterinary Medicine we tried to relate objective quality with the consumer quality evaluation. To do so, we have measured the expected and experienced quality of a sample of Portuguese consumers towards three types of beef (PDO, national and imported) at the shop, and compared this subjective evaluation with the beef objective quality. Results at the consumer level show that respondents perceived PDO beef to be of higher quality than the two other types of beef for different attributes and for overall quality at the shop location. Consumers’ motivations and behaviour towards food safety, animal welfare and the environment in beef production and beef products were discussed in several focus groups, within a broader research program aiming at determining Portuguese consumers’ willingness to pay for safer, cleaner and animal friendlier beef. Regarding the supply context, food safety, animal welfare and environmental protection are, to some extent, jointly produced within beef production systems. Food quality from a consumer perspective includes sanitary aspects as well as nutrition, but also taste, aspect, integrity and the particularity of products. But quality at the consumer level can only be achieved if quality is respected throughout the whole chain. An analysis is undertaken using as a case study Portuguese producers of two types of PDO beef. Results, using multivariate data analysis, show that the main attributes for a quality beef at the producers` level are: feeding, finishing, specific quality, age at slaughter, breed and transport. Results also suggest that producers have distinct quality perceptions on PDO beef. |
