Retail Competition in the Milk Market in a U.S. Midwestern City AgEcon
Hovhannisyan, Vardges; Gould, Brian W..
The main goal of this manuscript is to explore the retailer conduct in the milk market in a U.S. Midwestern city, based upon a structural estimation of consumer milk demand and retailer optimality conditions. To model milk demand we rely upon the Almost Ideal Demand System, while allowing the retailer optimality conditions to cover a range of competitive scenarios from perfect competition to horizontal cartel. We employ a conjectural variation approach in the spirit of Newly Empirical Industrial Organization to study the competitive environment on the retail landscape. We find that the retail market in question is far from being competitive, with the two major retailers being engaged in an oligopolistic competition. Furthermore, the private label milk...

The Demand for Organic Food in the U.S.: An Empirical Assessment AgEcon
Li, Jinghan; Zepeda, Lydia; Gould, Brian W..
This analysis examines the determinants of organic food purchase behavior of a random sample of U.S. food shoppers. We analyze food expenditures conditional upon whether a household purchases organic foods. The results from our econometric modeling effort identify shopping venue, awareness of the organic label, positive beliefs toward organic foods, a positive attitude toward cooking, and a lack of religious affiliation as being important determinants of organic food purchases. Income was not found to significantly affect the decision to buy organic foods. Our results suggest that the limiting factors of the organic food market are search cost, dietary patterns, and awareness of the organic food label. Given the recent “Wal-Mart” effect on the organic food...

CONSUMER PROMOTION AND PURCHASE TIMING: THE CASE OF CHEESE AgEcon
Gould, Brian W..
The dynamics of cheese purchases is analyzed by estimating a series of econometric models of duration based on a 170 week household panel. Besides purchase quantity and price data, information with respect to coupon use and household demographic characteristics are used in a variety of models which build upon each other in terms of assumed distribution of interpurchase time, effect of previous purchases, role of demographic characteristics and effect of unobserved interpurchase time heterogeneity. Likelihood ratio tests clearly reject the null hypothesis that coupon use has no impact on cheese purchase timing.

A Descriptive Analysis of Recent Trends in the International Market for Dry Milk Products AgEcon
Gould, Brian W.; Villarreal, Hector J..
This Discussion Paper provides a comprehensive description of longer-term trends for exports and world prices of dry milk products. The importance of U.S. exports of dry milk products is suggested by figures in the paper showing that in 2000, 17% of U.S. nonfat dry milk, 35% of dry whey, 47% of lactose, and 11% of whey protein concentrates were exported. The Gould-Villarreal study documents the decline in world trade in nonfat dry milk and expansion of world trade in whole milk powder. The paper suggests that collective product mix decisions of the U.S. dairy industry are partially out-of-sync with world demand. Other implications for U.S. dairy exporters of changes in world demand for dry milk products are discussed.

THE STRUCTURE OF FOOD DEMAND IN MEXICO: AN APPLICATION OF THE AMEMIYA-TOBIN APPROACH TO THE ESTIMATION OF A CENSORED SYSTEM AgEcon
Dong, Diansheng; Gould, Brian W.; Kaiser, Harry M..
The use of household surveys for demand system estimation necessitates a recognition of purchase censoring that often arises within an analysis of a disaggregated set of commodities. We extend the Amemiya-Tobin demand system approach to an analysis of Mexican household food demand via the use of a LA/AIDS specification.

An Empirical Assessment of Endogeneity Issues In Demand Analysis for Differentiated Products AgEcon
Dhar, Tirtha Pratim; Chavas, Jean-Paul; Gould, Brian W..
This article explores the issue of price and expenditure endogeneity in empirical demand analysis. The analysis focuses on the US carbonated soft drink market. We test the null hypothesis that price and expenditures are exogenous in the demand for carbonated soft drinks. Using an Almost Ideal Demand System (AIDS) specification, we strongly reject exogeneity for both prices and expenditures. We find that accounting for price/expenditures endogeneity significantly impacts demand elasticity estimates. We also evaluate the implications of endogeneity issues for testing weak separability.

An Econometric Analysis of Brand Level Strategic Pricing Between Coca Cola and Pepsi Inc. AgEcon
Dhar, Tirtha Pratim; Chavas, Jean-Paul; Cotterill, Ronald W.; Gould, Brian W..
Market structure and strategic pricing for leading brands sold by Coca Cola and Pepsi Inc. are investigated in the context of a flexible demand specification and structural price equations. This approach is more general than prior studies that rely upon linear approximations and interactions of an inherently nonlinear problem. We test for Bertrand equilibrium, Stackelberg equilibrium, collusion, and a general conjectural variation (CV) specification. This nonlinear Full Information Maximum Likelihood (FIML) estimation approach provides useful information on the nature of imperfect competition and the extent of market power.

THE DECISION OF WHEN TO BUY A FREQUENTLY PURCHASED GOOD: A MULTI-PERIOD PROBIT MODEL AgEcon
Gould, Brian W.; Dong, Diansheng.
Increased availability of scanner-based panel data has enabled researchers to better understand nondurable commodity purchase dynamics. In this study, we focus on one component of the purchase process--when to buy. The relationship between the discrete purchase decision and a set of household and purchase characteristics is quantified using a simulated maximum-likelihood procedure. Given the longitudinal nature of our data, unobserved heterogeneity is addressed by adopting an auto-correlated error structure. Our empirical application is household purchases of cheese. We find evidence of significant persistent unobservable household heterogeneity, which is not eliminated by the inclusion of lagged exogenous variables.

THE EFFECT OF GENERIC DAIRY ADVERTISING ON THE HOUSEHOLD DEMAND FOR MILK AND CHEESE AgEcon
Schmit, Todd M.; Chung, Chanjin; Dong, Diansheng; Kaiser, Harry M.; Gould, Brian W..
Consistent two-step censored estimation is applied to household demand equations for disaggregated milk and cheese products. The long-run advertising elasticity for total milk was positive, largely due to low fat milk; however the elasticity for cheese was not significant, and only shredded cheese had a positive, significant response.

THE IMPACTS OF THE MARKET PRICING OF CANADIAN ENERGY RESOURCES ON THE ALBERTA OIL INDUSTRY AgEcon
Gould, Brian W..
Canada has recently enacted legislation that decontrols the price of domestically produced crude oil and natural gas. This study presents an analysis of the impacts of such decontrol via the use of an econometric model of the petroleum industry of the province of Alberta. The model developed in this study improves upon previous models in terms of the endogenizing of key variables associated with the exploration process. The model is estimated for 1958-79, and a simulation of the 1985-95 period is conducted.

FACTORS AFFECTING U.S. DEMAND FOR REDUCED-FAT MILK AgEcon
Gould, Brian W..
U.S. fluid milk consumption has changed dramatically since the early 1970s. Whole milk accounted for over 81% of commercial fluid milk disappearance in 1970. By 1993, this percentage was less than 39%. A three-equation fluid milk demand system is estimated for fluid milks that vary by fat content. The household panel data set used includes over 4,300 households who recorded fluid milk purchased for at-home consumption over a 12-month period. Given that many of these households did not consume one or more of the three milk types, the econometric model explicitly incorporates the censored nature of these commodity demands. Own and cross-price and substitution elasticities are estimated along with effects of household demographic characteristics.

Structural Model of Retail Market Power: The U.S. Milk Industry AgEcon
Hovhannisyan, Vardges; Gould, Brian W..
The objective of our research is to investigate retailer market conduct in the sale of beverage milk using a structural model of consumer behavior and retailer optimality conditions that embrace a range of competitive scenarios. The study is based on an aggregate level analysis of retailer behavior with milk quantity used as a strategic variable. We contribute to the literature by employing a Generalized Quadratic Almost Ideal Demand System (GQAIDS) to model milk demand. Furthermore, we derive the retailer optimality conditions that incorporate the slopes of inverse GQAIDS demand curves for the products under study. Lastly, we apply this generalized structural model to study the retailer behavior in marketing national brand (NB) and private label (PL)...

NUTRITION INFORMATION AND HOUSEHOLD DIETARY FAT INTAKE AgEcon
Gould, Brian W.; Lin, Huei Chin.
An endogenous switching regression model is used to examine how meal planner health knowledge affects dietary fat intake. Ethnicity, income, meal planner age, being on a low-fat diet, and other health awareness behaviors had significant effects on health knowledge. After controlling for differences in household and meal planner characteristics, intake of total and saturated fat was found to depend on health knowledge status.
