Consumer demand in relation to food is increasingly shifting towards products that are safe, nutritious, and of good eating quality. Beef consumers are demanding for experience quality that matches their quality expectations formed prior to consumption, particularly with respect to beef tenderness. The development of a beef quality guarantee system, backed up by objective knowledge obtained through muscle profiling research, can allow the beef industry to meet these consumer demands. Green food is perceived by Chinese consumers as environmentally friendly and safe to consume. Through a hierarchical values-attitudes model, the paper examines the degree to which attitudes towards green food is determined by consumers’ values and their general attitudes towards environment and nature and technological progress. The link between collectivism, attitudes towards environment and nature, and attitudes towards green food is the strongest link of the hierarchical model. New food processing technologies are developed on a continuous basis. While food scientists may applaud the progress of science, consumers have been known to take a more conservative approach and do not always readily see the benefits of new processing methods. As learned from earlier examples (such as GM and irradiation), the advantages that a new processing technology has to offer do not necessarily guarantee the success of a product in the market place. This paper analyses the changing competence requirements which members of the food chain face in their pursuit of competitive advantage. Two groups of trends serve as point of departure: more dynamic and heterogeneous consumer demands, which can be analysed in terms of consumer demands for sensory, health, process and convenience qualities, and changing roles for retailers in the food chain. Cereal foods' production and use show substantial heterogeneity across Europe. For a category central in most EU diets, cereal foods' quality perception is, nevertheless, surprisingly understudied. With this in mind, 357 Danish, Lithuanian and Portuguese citizens were inquired about the importance of several cues and dimensions in their evaluation of the perceived quality of bread, cookies, breakfast cereals, pasta and vodka. Portuguese and Lithuanians consistently gave a significantly higher average importance to all the cues and quality dimensions considered, for all products, than their Danish counterparts.
