Is there a promising market ‘in between’ organic and conventional food? Analysis of consumer preferences Organic Eprints

A variety of products incorporating single aspects of organic production systems such as lower inputs of pesticides, food additives or concentrated animal feed is found on the food market (referred to as low-input products hereafter). In our study, we analysed how consumers react to low-input products in a purchase simulation with certified organic, conventional and low-input products. In the purchase simulations, each participant was asked to make three consecutive purchase decisions, one each for milk, yogurt and apples. In organic farming there is an ongoing discussion on piglet castration without anaesthesia and possible alternatives to this practice due to animal welfare concerns. Consumer acceptance of alternatives to piglet castration without anaesthesia plays an important role in this discussion. This contribution examines organic consumers’ attitudes towards piglet castration without anaesthesia and the alternatives castration with anaesthesia and analgesia, immunocastration and fattening of entire males. Additionally, consumers’ willingness-to-pay for the alternatives is determined. Alternativen zur betäubungslosen Ferkelkastration im ökologischen Landbau - Analyse der Auswirkungen alternativer Verfahren auf die Akzeptanz bei Verbrauchern und Produzenten Organic Eprints

Ziel des Projektes war es, Einstellungen von Verbrauchern, Produzenten, Verarbeitern, Händlern und Tierschutzverbänden zur betäubungslosen Ferkelkastration und möglichen Alternativen zu untersuchen und Empfehlungen für die Öko-Landwirtschaft abzuleiten. Einstellungen und Zahlungsbereitschaft von insgesamt 89 Verbrauchern von Öko-Produkten wurden in Fokusgruppen mit anschließender Vickrey-Auktion ermittelt. Die betäubungslose Ferkelkastration war den Verbrauchern kaum bekannt. Sie wurde überwiegend negativ bewertet und passte nicht ins Bild der Öko-Tierhaltung. An increasing number of conventional products incorporating single aspects of organic production systems such as lower inputs of pesticides, food additives or concentrated animal feed (referred to as low-input products hereafter) are found on the food market. By means of choice experiments, we explore consumers’ buying behaviour regarding organic, conventional and low-input food in Germany. Our analyses show that lowinput products mostly substitute conventional products. Segmenting the market for goat kid meat Organic Eprints

Organic dairy goat farming is gaining importance in Germany and organic goat milk products become increasingly popular among consumers. At the same time, marketing of the goat kids, which are a by-product of dairy goat farming, is difficult. Consumer awareness and acceptance of kid meat is relatively low as it is not a traditional meat product consumed in Germany. Additionally, a lack in marketing structures besides direct marketing and high production costs contribute to a difficult market situation for organic dairy goat farms. Animal welfare versus food quality: Factors influencing organic consumers' preferences for alternatives to piglet castration without anaesthesia Organic Eprints

Surgical piglet castration without pain relief has been banned in organic farming in the EU since the beginning of 2012. Alternative methods therefore need to be implemented that improve animal welfare and solve the underlying problem of boar taint. This paper explores German organic consumers' preferences for piglet castration without pain relief and three alternative methods. In an innovative approach using a multi-criteria decision making procedure, qualitative data from focus group discussions were compared with quantitative results from Vickrey auctions. Die Öko-Milchziegenhaltung gewinnt in Deutschland zunehmend an Bedeutung und Öko-Ziegenmilchprodukte erfreuen sich wachsender Beliebtheit bei Verbrauchern. Die Vermarktung der Ziegenlämmer ist jedoch schwierig, da Ziegenlammfleisch bei deutschen Verbrauchern weitgehend unbekannt ist. Zudem bestehen neben der Direktvermarktung kaum Absatzstrukturen für Ziegenlammfleisch und die ökologische Aufzucht der Tiere ist vergleichsweise teuer. Diese Situation kann zu ökonomischen Problemen der Milchziegen haltenden Betriebe führen. Ziel des Projekts war daher die Entwicklung eines Konzeptes zur Vermarktung von Öko-Ziegenlammfleisch aus melkenden Betrieben. Regionale Wertschöpfungsketten Öko-Geflügelfleisch und Öko-Schweinefleisch in Bayern Organic Eprints

In Bayern bleibt das Angebot an regional ökologisch erzeugtem Geflügel- und Schweinefleisch deutlich hinter der Verbrauchernachfrage zurück. Vor dem Hintergrund will ein vor kurzem angelaufenes Kooperationsprojekt der Bayerischen Landesanstalt für Landwirtschaft (LfL) und der Landesvereinigung für den Ökologischen Landbau in Bayern e.V. (LVÖ) Konzepte für den Aufbau von regionalen Wertschöpfungsketten für Öko-Geflügel- und –Schweinefleisch entwickeln und deren Umsetzung modellhaft erproben. Alternativen zur betäubungslosen Ferkelkastration - Stand der Forschung zur Verbraucherakzeptanz der Alternativen Organic Eprints

In Europa werden fast alle männlichen Ferkel routinemäßig kastriert, um die Entstehung von Ebergeruch zu verhindern. In der Regel erfolgt dieser Eingriff ohne Betäubung. Aktuell findet eine Diskussion über die Tierschutzrelevanz der betäubungslosen Ferkelkastration statt und ein Verbot dieser Praxis wird angestrebt. Daher müssen Alternativen zur betäubungslosen Kastration gefunden werden. Ein wichtiger Faktor bei der Bewertung der Umsetzbarkeit der diskutierten Alternativen zur betäubungslosen Ferkelkastration ist die Bereitschaft der Verbraucher das so produzierte Fleisch auch zu kaufen. Der Beitrag gibt einen Überblick über den aktuellen Stand der Forschung zur Verbraucherakzeptanz der Alternativen zur betäubungslosen Ferkelkastration.

While organic goat milk products are becoming increasingly popular in Germany, marketing of kid meat is difficult as it is an unfamiliar product for consumers and there are hardly any marketing structures besides direct marketing. In order to introduce organic kid meat to consumers, we conducted sales promotions offering product samples. An accompanying consumer survey provided data on potential customer groups for organic kid meat. Participants’ sensory evaluations of the sampled meat were very positive as well as their perceptions of other product attributes. Stated likeliness to buy kid meat was high.
