Sensory profile of breast meat from broilers reared in an organic niche production system and conventional standard broilers Organic Eprints

BACKGROUND: A sensory panel evaluated the sensory profile of breast meat from five broiler products: two conventional standard products (A and B) and three organic niche genotypes (I657, L40, K8) reared in an apple orchard. RESULTS: Twenty-two sensory attributes were evaluated, and 13 differed significantly between the products. The aromas ‘chicken’, ‘bouillon’ and ‘fat’ scored highest and the ‘iron/liver’ aroma lowest for the niche products. The meat was more ‘tender’, ‘short’ and ‘crumbly’, and less ‘hard’ and ‘stringy’ in the standard products than in one or more of the niche products. There is generally a growing interest for organically produced food in Europe and North America, although in some countries the interest is stagnating. Organic animal productions in some countries make up to 10% of total production. Det generelle indtryk af flokkens sundhedstilstand er god: holdet har en lav dødelighed, en høj læggeprocent, meget få gulvæg, en god vægtudvikling, bortset fra et enkelt fald, ingen tegn på fjerpilning eller problemer med fodhelse. Strøelsens beskaffenhed har en indflydelse på udviklingen af fodbylder, sygdomsudviklingen, mulighederne for god fjerpleje, aktivering mv. Hos driftsgren 182-1 har strøelsen været af en meget høj kvalitet hele produktionsperioden igennem, dvs. med et meget lavt gødningsindhold i øverste lag, store mængder sand, ingen skorpedannelse eller fugt. The potential contribution of organic farming to the public goods, ‘Nature and Biodiversity’, ‘Environment’, ‘Energy and Climate’, ‘Human Health and Welfare’ and ‘Animal Health and Welfare’ in Denmark is guided and partly secured by the principles and specific requirements of the EU Organic Regulation. BACKGROUND: Breast meat from broilers produced in very different production systems may vary considerable in sensory profile, which may affect consumer interests. In this study the aim was to evaluate differences in the sensory profiles of breast meat from five broiler products: two conventional standard products (A and B) and three organic niche genotypes (I657, L40 and K8) reared in an apple orchard. RESULTS: Thirteen out of 22 sensory attributes differed significantly between the products. Selv om der de sidste fire år har været en kraftig stigning i den økologiske svineproduktion i Danmark, udgør den økologiske slagtesvineproduktion mindre end 0,5% af den totale slagtesvineproduktion, og erfaringsgrundlaget for gennemførelsen af den økologiske svineproduktion er derfor spinkelt. I mange tilfælde er svineproduktionen indrettet således, at søerne holdes på friland, mens slagtesvinene året rundt opstaldes i stalde med tilhørende udearealer, og det er for sådanne systemer, at videngrundlaget er bedst.

Produktion af slagtekyllinger i frugtplantage åbner en spændende mulighed for større spiseoplevelse for den kvalitetsbevidste forbruger. Sensorikbedømmelser af brystkødet fra to typer slagtekyllinger, JA757 og New Hampshire viste en markant forskellig sensorisk profil. Hvor JA757 fik bedre score i visse lugt og smagsegenskaber, opnåede New Hampshire bedre score i teksturegenskaber som f.eks. mørhed og saftighed. For begge afstamninger var smagen og lugten af frisk kylling lavere ved højere slagtealder.

Carbon footprints of crops from organic and conventional arable crop rotations – using a life cycle assessment approach Organic Eprints

Many current organic arable agriculture systems are challenged by a dependency on imported livestock manure from conventional agriculture. At the same time organic agriculture aims at being climate friendly. A life cycle assessment is used in this paper to compare the carbon footprints of different organic arable crop rotations with different sources of N supply. Forbruget af økologisk svinekød i Danmark er steget markant de senere år, men på trods af dette er markedsandelen stadigvæk meget ringe. Kun 1% af det svinekød, der købes i Danmark, er økologisk produceret. Dette er væsentligt lavere end f.eks. økologisk mælk og økologiske æg, som har markedsandele på hhv. 35% og 27% (Gfk, 2009). In India, the number of farmers converting to organic farming has increased in the recent past despite the lack of government support in providing knowledge and extension to the farmers. The aim of this article is to investigate the perceived relevance, benefits and barriers to a conversion to organic agriculture in three different Indian contexts - in Tamil Nadu, Madhya Pradesh and Uttarakhand states. In each state, 40 farmers from both organic and conventional systems were interviewed. In typical organic egg production systems nearly all the feed is imported and fed inside the henhouse. Moreover, most of the hens stay inside the house or predominantly use the area just in front of the hen house. In consequence many systems are exposed to an unacceptable accumulation of nutrients in the most utilized areas in the hen yard.
