Food quality has become an increasing concern in the public health arena over recent years. Food manufactures and processors hygiene performance plays a crucial part in producing safer food products. While there are inspections assessing plants' hygiene performance, there is little direct communication of performance measures to consumers. This paper uses survey data to determine consumer preferences among a set of four alternative food labels which report such plant level performance scores. How much information, as well as the format they most prefer, is compared using a range of econometric models. In response to increasing customer attention to food attributes, agribusinesses are employing novel product differentiation strategies. As an example, we investigate the use of food safety claims on new packaged food products from the food manufacturers’ perspective. First, using two product innovation databases, we investigate claim use on labels in seven English-speaking countries over the period from 1980 to 2008. Then, based on manufacturer recommended selling prices and using U.S. data (from 2002 to 2008), we apply parametric and nonparametric hedonic methods to identify supply-side (agribusiness) valuations of chemical and microbiological claims in two food categories. Food safety regulations are evolving to more performance-based regimes in which firrms have greater flexibility and responsibility for adopting effective controls. Within this context, this paper compares performance and process standards modeling the variability of industry-level compliance and therefore the resultant level of food safety. Monte Carlo simulations are conducted manipulating five factors: the variances of input use of efficient and inefficient firms, the proportion of inefficient firms in the industry, the mean of the error term for inefficient firms, and the policymakers' level of risk aversion. The relevance of the ISO 9000 series of quality management systems (QMS) for U.S. agribusiness is analyzed. Certified firms from several industries were surveyed to determine their before (ex ante) and after (ex post) perspectives of the QMS. Results for the agribusiness subsample are compared to those for firms from other industries to determine if they behave differently. Anticipated marketing advantages (increasing market share and providing access to new markets) of the QMS were critical factors that encouraged the pursuit of the certificate. The average cost to attain certification was $101.400 and to maintain certification was an additional $26,500 per year. |

This study examines the willingness to pay for a locally-produced, natural beef product in the Intermountain West. In addition to presenting market shares at various prices, this study examines the relevance of several production characteristics, to determine how important they are to consumers, especially the target group willing to pay premium prices. Concern about hormones is consistently higher than other animal- and environmentally-friendly attributes, while concern about local production is the lowest among the respondents. As would be expected, the average concern about each of these characteristics increased among the group most willing to pay a premium for natural beef. |

Material from two interdisciplinary research projects, conducted by the Center for Food Safety at Texas A&M University (one completed, one ongoing), is presented. These international projects respectively assess the comparative costs of adopting various pathogen reduction strategies in beef slaughter plants in Australia and the food safety risks (and recommended strategies to alleviate any risks) in cantaloupe and cabbage production and packing in Texas and Mexico. The economic component of each project is introduced, along with findings (for the completed project) and methodologies to be adopted (for the ongoing project). The vital role of stakeholders in conducting this research is stressed to provide lessons for similar partnerships in the future. |

In recent years, the numbers of functional foods being developed and subjected to scientific evaluation have increased substantially. The main characteristic of functional foods that distinguishes them from conventional foods is the potential health benefit, which can be considered to be a credence attribute of product quality. Because this characteristic cannot be easily assessed even after consumption, an asymmetric information environment for health benefits has emerged where producers have more information than consumers.
