Campylobacter species distribution in outdoor pigs: Oral presentation O44 Organic Eprints

A colony blot hybridization method with a digoxigenin-(DIG)labelled nucleotide probe was developed to enable Campylobacter jejuni species-specific identification of colonies present in minority. C. jejuni is the dominant cause of human cases of Campylobacteriosis. In contrast, C. coli is normally dominant in conventional pigs but it can be speculated that outdoor pigs host more C. jejuni due to a closer contact to the environment and wild-life where C. jejuni is pre-dominant. Since C. jejuni is considered more virulent to humans a potential shift towards C. jejuni in pigs may infer an importance to food safety. Effects of feeding prebiotics to pigs for 1 or 2 weeks before slaughter Organic Eprints

Prebiotics are non-digestible oligosaccharides acting by stimulating the growth of bacteria being beneficial for the gastrointestinal health of the host and may serve as a means to control pathogens. This study aimed to assess if inclusion of chicory or lupins (prebiotics) in the diet of pre-slaughter pigs for just 1 or 2 weeks could change the composition of their intestinal microbiota and help to lower the level of the important foodborne pathogen Campylobacter spp. The study showed that even a short-term alternative feeding strategy with prebiotics in the diet of pre-slaughter pigs elicited changes in the composition of intestinal microbiota with stimulation of the growth of bifidobacteria in caceum and a reduction of the Campylobacter spp. excretion...

Spread of salmonella in organic pigs Organic Eprints

Pigs inoculated with Salmonella Typhimurium were grouped with non-infected tracerpigs to determine the transmission of salmonella between organic outdoor animals. The results indicated that the organic pigs were perceptive to infections but that the susceptibility varied considerably between pigs. Bacteriological examinations of soil and water samples from the pasture environment showed the ability of salmonella to survive in the non-host environment, and under some favoruable conditions pose an infection risk for new pigs introduced onto the contaminated pastures.

Faecal contamination of lettuce heads after manure application Organic Eprints

In recent years, an increasing number of disease outbreaks have been associated with consumption of contaminated vegetables. Thus, it has been speculated to what extent such contamination is associated with application of animal manure as fertilizer, which is particularly practiced in organic vegetable production where conventional fertilizers are prohibited. A field survey was therefore performed aiming to assess the survival and transfer of E. coli from animal manure to lettuces, with E. coli serving as an indicator of bacterial enteric pathogens. There is only limited data available on the prevalence of zoonotic bacteria like Salmonella and Campylobacter specifically in organic pigs, but the increased exposure to these pathogens in the outdoor environment may influence the food safety of organic pork. However, the late weaning, low stocking density and roughage may help to increase the resistance to bacterial infections in organically reared pigs. Outdoor organic pigs were inoculated with Salmonella and mixed with Salmonella-free pigs to study the transmission between pigs. Reducing the risk of food borne pathogens (Campylobacter) in pre-slaughter piges vis short-time feeding with prebiotics Organic Eprints

Pigs constitute a natural reservoir of Campylobacter spp., which implies a food safety concern. A potential means to control pathogens is inclusion of non-digestible oligosaccharides (prebiotics) in the diet. Prebiotics act by stimulating the growth of fermenting bacteria beneficial for the gastrointestinal health of the host. This study aimed to assess a possible Campylobacter spp. reducing effect of feeding pigs with lupin and chicory just prior to slaughter. The short-term inclusion of lupin in pigs’ diet prior to slaughter reduced the excretion level of naturally occurring Campylobacter. This indicates a lower risk of carcass contamination at slaughter and then a lower infection risk associated with consumption of pork.

Forsøg har vist at Salmonella bakterier kan overføres fra smittede økogrise til salmonella-frie grise holdt på udendørs arealer. Desuden kan salmonella bakterier overleve i foldmiljøet og under visse betingelser smitte salmonella-frie grise, som senere indsættes i folden.

The restrictions on the use of antibiotic and anthelmintic treatments in organic pig farming necessitate alternative non-medical control strategies. Therefore, the antibiotic and parasite-reducing effect of a fructan-rich (prebiotic) diet of dried chicory was investigated in free-ranging piglets. Approximately half of 67 piglets from 9 litters were experimentally infected with Ascaris suum and Trichuris suis in the suckling period (1 to 7 weeks of age) and 58 of the piglets were challenged daily with E. coli O138:F8 for 9 days after weaning to induce weaning diarrhoea. Can the restricted use of antibiotics in organic pig farming be documented to provide a safer, high quality meat product with less antibiotic resistant bacteria? The project SafeOrganic aims to document that the restricted use of antimicrobials in organic pig production leads to lower levels of antibiotic resistant bacteria compared with the level in conventional pigs. However, the project will also address the risk of losing this quality parameter, due to a widespread practice of slaughtering organic pigs together with conventional pigs,implying a risk of cross-contamination.

Escherichia coli Contamination of Lettuce Grown in Soils Amended with Animal Slurry Organic Eprints

A pilot study was conducted to assess the transfer of Escherichia coli from animal slurry fertilizer to lettuce, with E. coli serving as an indicator of fecal contamination and as an indicator for potential bacterial enteric pathogens. Animal slurry was applied as fertilizer to three Danish agricultural fields prior to the planting of lettuce seedlings. At harvest, leaves (25 g) of 10 lettuce heads were pooled into one sample unit (n ~ 147). Soil samples (100 g) were collected from one field before slurry application and four times during the growth period (n ~ 75).
