Projektet NO-CAST har undersøgt, om man kan begrænse behovet for kastrering af økologiske hangrise ved at benytte fodring og management som redskaber til at mindske indholdet af stofferne skatol og androstenon, der giver ornelugt. Forsøg gennemført i projektet tyder på, at androstenon er et større problem i økologisk produktion af hangrise end i konventionel produktion. Men det blev vist, at frasorteringen kan reduceres markant ved at fodre udelukkende med korn eller med 15 pct. cikorie de sidste fire dage inden slagtning og ved at reducere slagtevægten med 25 kg. Den gennemsnitlige afregningspris per kg stiger, fordi færre grise bliver sorteret fra, og fordi kødprocenten er højere, men stigningen opvejer dog ikke værditabet som følge af den lavere... |

To investigate the extent to which the level of androstenone and skatole decreases with a decrease in live weight and/or age at slaughter of entire male pigs produced under organic standards, 1174 entire male pigs were raised in parallel in 5 organic herds, distributed across 4 batches in summer and winter. The median androstenone level was high for organic entire male pigs (1.9 µg/g), but varied greatly both within and between herds. Median skatole level was 0.05 µg/g, also with a wide range both within and between herds. Decreasing live weight over the range of 110±15.6 kg sd was found to decrease androstenone as well as skatole concentration, however, with different patterns of association. Strain SK9K4T, a strictly anaerobic, non-motile, non-sporulating, Gram-positive, saccharolytic coccobacillus was isolated from pig feces. SK9K4T metabolized indol-3-acetic acid to 3-methylindole (skatole), which is the main contributor to boar taint and also produced 4-methylphenol (p-cresol) from p-hydroxyphenylacetic acid. Phylogenetic analyses based on 16S rRNA gene sequences revealed that the isolate represented a new lineage within the genus Olsenella of the family Atopobiaceae. Strain SK9K4T was most closely related to the type strains of the three recognized Olsenella species; Olsenella profusa DSM 13989T (93.6%), Olsenella uli DSM 7084T (93.5%) and Olsenella umbonata DSM 22620T (92.7%). Production of entire male pigs could be a future strategy for organic pig production. However, production of entire males leads to increased risk of carcasses with elevated boar taint levels. It is hypothesized that skatole levels in pig meat are affected by soiling with manure and that organic housing facilities can increase the risk of pigs being heavily soiled. Therefore the overall aim of this study was to investigate if increased pig and pen soiling increases skatole concentration in entire male pigs. Økologisk produktion er en nicheproduktion, for hvilken det i stærkt stigende grad er nødvendigt at forbedre økonomi, dyrevelfærd og produktivitet. Fra 2011blev udfordringerne øget på grund af et ønske om udfasning af kastration i perioden fra 2011 til 2014. Dette er grundet de senest års erfaringer med hangriseproduktion, ikke længere et konkret mål, indenfor en bestemt kort tidsramme. De økologiske svineproducenter ønsker i dag både af dyrevelfærdsmæssige og produktivitetsmæssige årsager at udfase kastration så hurtigt som muligt. Resultater viser, at økologiske hangrise har en væsentlig flere hangrise der frasorteres pga. hangriselugt, skatol og androstenon i forhold til traditionel svineproduktion [1].
